EASY (AND TASTY) TUNA SALAD FOR ONE

Easy (And Tasty) Tuna Salad for One image

I made this up all by myself. My mom and I are big tuna eaters. I eat tuna everyday and I find this to be the EASIEST and TASTIEST way I can possibly make my tuna salad for my lunch everyday. It's very quick and takes me about 5 minutes, it's also low fat and good for you. My mom tells me all the time that she loves it. I enjoy it as well, I eat this tuna salad nearly every day for lunch at school. I eat it with crackers, on bread or plain with some fruit, the Mrs. Dash gives it a great flavor, I always keep Mrs. Dash on hand. I hope you like it. It's a recipe concocted by a 15 year old chef. lol.

Provided by GloriaAnn

Categories     Lunch/Snacks

Time 5m

Yield 1 serving(s)

Number Of Ingredients 6

1 (3 ounce) can albacore tuna, drained (I prefer Starkist Albacore Tuna, in the single serving cans)
1 tablespoon light mayonnaise (or fat free)
1 teaspoon honey mustard (use a little more if tuna salad is too dry, I use a teaspoonful)
1/2 teaspoon Mrs. Dash seasoning mix
1 baby carrots, chopped (optional)
sweet relish (optional)

Steps:

  • Drain your tuna well.
  • Scoop into a bowl with a fork and flake it well with your fork, breaking up the larger chunks of tuna.
  • Add remaining ingredients and enjoy.
  • Whenever I'm in a hurry I just use the mayonnaise, honey mustard and Mrs. Dash.
  • When I have time I add the carrot which gives it a nice crunch.
  • Eat it on 2 slices of whole wheat bread, with tortilla chips, or with crackers.
  • Sometimes I just eat it plain it tastes just fine that way.

ONE RECIPE, TWO MEALS: TUNA SALAD

One Recipe, Two Meals: Tuna Salad image

Here's a cool, classic variant on tuna salad for your kiddies. I kept the binder pretty neutral, but instead of mayo, I swirled in a bit of Greek yogurt to lighten it up. It's also loaded with a hint of mustard, and fresh celery and apple, which I feel like all kids like, right? Now for the deluxe version. It's laced with fresh lemon juice and curry powder-what? I also threw in some chopped almonds, fresh parsley, a bunch of red grapes and minced celery to boost the antioxidants.

Provided by Bev Weidner

Categories     main-dish

Time 20m

Yield 4 servings (2 kids, 2 adults)

Number Of Ingredients 12

1 teaspoon Dijon mustard (yellow American mustard is fine)
3 1/2 tablespoons plain Greek yogurt
1 tablespoon plus 1 teaspoon fresh lemon juice
2 teaspoons curry powder
1 to 2 tablespoons chopped red apple
Three 5-ounce cans albacore tuna in water, drained
2 celery stalks, minced
Coarse salt and freshly ground pepper
1/2 cup halved purple (seedless) grapes
1/3 cup chopped roasted and salted almonds (dry almonds are fine)
1/4 cup finely chopped fresh parsley
Serving suggestion: your favorite crackers or toast; 2 split and lightly toasted croissants or your favorite sandwich bread

Steps:

  • In a medium bowl, whisk together the mustard, 1 tablespoon yogurt and 1 teaspoon lemon juice. In a large bowl whisk together the curry powder, the remaining 2 1/2 tablespoons yogurt and the remaining tablespoon lemon juice.
  • To the medium bowl, add the apple, 1 can of the tuna, half of the celery and a small pinch of salt and pepper. Mix well with a wooden spoon. This is the kids' tuna salad! Refrigerate until ready to eat, or serve immediately on crackers or toast.
  • To the large bowl add the grapes, almonds, parsley, the remaining 2 cans tuna, the remaining celery and a pinch of salt and pepper. Mix well with a wooden spoon. This is the adult tuna salad. Refrigerate until ready to eat, or serve immediately on toasted croissant halves.

CREAMY AND CRUNCHY TUNA SALAD SUPREME

Creamy and Crunchy Tuna Salad Supreme image

This tuna salad is made special with the addition of cream cheese and chopped raw carrots. Red peppers make it pretty and one or two other vegetables, fruits or nuts keep it changing and interesting. I developed this recipe after I tasted cream cheese in a salmon salad sandwich at a funeral lunch in Canada many years ago. Add baby spinach or lettuce leaves, and serve on your favorite bread or as a wrap in a tortilla.
