For a healthier turkey meatloaf, after much trial and error I came up with this recipe. It's important to make this on a jelly-roll pan (rimmed baking sheet) so the liquids can be drained off. Also, don't put the topping on before the meatloaf has cooked for 30 minutes; ground turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

1 ½ pounds ground turkey
¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped
1 egg
2 cloves garlic, minced
1 ½ teaspoons salt
¼ teaspoon ground black pepper
½ cup ketchup
¼ cup brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a jelly-roll pan.
  • Mix ground turkey, crushed crackers, milk, onion, egg, garlic, salt, and black pepper in a bowl. Shape mixture into a loaf and place on the prepared pan.
  • Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.
  • Bake meatloaf in preheated oven for 30 minutes; remove from the oven and drain off liquids. Top meatloaf with ketchup topping.
  • Return loaf to the oven and continue baking until no longer pink in the center, about 30 minutes more; an instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

1 cup seasoned stuffing cubes
1/2 cup milk
1 large egg, beaten
1 celery rib, finely chopped
1 small onion, grated
1 small carrot, grated
1/4 cup dried cranberries
1/2 teaspoon salt
1/4 teaspoon pepper
3 to 4-1/2 teaspoons minced fresh sage
3 teaspoons minced fresh rosemary
1-1/2 pounds lean ground turkey
1/2 cup whole-berry cranberry sauce
1/2 cup ketchup
1/8 teaspoon hot pepper sauce

Steps:

  • Preheat oven to 375°. In a large bowl, combine stuffing cubes and milk. Let stand 10 minutes; break up stuffing cubes with a fork. Stir in egg, celery, onion, carrot, cranberries, salt and pepper. Combine sage and rosemary; add half to the mixture. Crumble turkey over mixture and mix well. Pat into an ungreased 9x5-in. loaf pan., Bake, uncovered, 25 minutes; drain if necessary. Combine cranberry sauce, ketchup, pepper sauce and remaining herbs; spread over meat loaf. Bake 20-25 minutes or until no pink remains and a thermometer reads 165°. , Freeze option: Shape meat loaf in plastic wrap-lined loaf pan; cover and freeze until firm. 2 tablespoons butter (or margarine)
1 cup onion, chopped
3 garlic cloves, minced
1 1/4 lbs ground turkey
1/2 cup breadcrumbs
1 egg (or 1/4 cup egg substitute)
3/4 cup catsup
2 teaspoons Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Melt butter in a skillet.
  • Cook onion and garlic in melted butter for 5 minutes, stirring occasionally.
  • Place mixture in a large bowl to cool for 5 minutes.
  • Combine turkey, bread crumbs, egg, 1/4 cup of the katchup, Worcestershire sauce, salt, and pepper with onion mixture.
  • Press meatloaf into an 8x4-inch loaf pan.
  • Spread remaining catsup on top.
  • Bake in a 350 degree oven for 50-55 minutes.
  • (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

1/2 cup barbecue sauce (any flavor)
1 medium onion
3 slices turkey bacon (optional)

Steps:

  • Preheat oven to 350°F (wash hands before touching the ingredients).
  • In a medium bowl combine ground turkey, breadcrumbs, egg, onion (chopped into small pieces) and barbecue sauce.
  • Mix well with hands.
  • Spray the inside of a loaf pan with non-stick spray.
