ASIAN TURKEY BURGERS

1/4 cup bulgur wheat
1/2 cup boiling water
1/4 cup rice wine vinegar
1 teaspoon sugar
Kosher salt and freshly ground black pepper
1/4 seedless cucumber, sliced 1/8-inch thick, 1 cup
1/4 small red onion, thinly sliced
1/4 cup plain low-fat yogurt
1 teaspoon chili garlic sauce
12 ounces lean ground turkey
2 tablespoons hoisin sauce
2 scallions, chopped
1 teaspoon grated ginger
1 clove garlic, grated
2 tablespoons chopped cilantro, plus 1/4 cup whole leaves
2 teaspoons vegetable oil
4 whole wheat hamburger rolls

Steps:

  • Put the bulgur in a medium bowl and add the boiling water. Cover with plastic wrap and let stand until the bulgur is tender, 45 minutes to 1 hour.
  • Meanwhile, in a medium bowl whisk the vinegar and sugar with a generous seasoning of salt and pepper until dissolved. Add the cucumber and onion, toss well and set aside to marinate for about 30 minutes.
  • In a separate small bowl combine the yogurt and chili garlic sauce. Season with salt and pepper and set aside.
  • Drain the bulgur and put into a large bowl. Add the turkey, hoisin, scallions, ginger, garlic and chopped cilantro and mix until just combined. Form into 4 equal sized patties.
  • Heat a large nonstick skillet over medium heat until very hot. Lightly brush both sides of each patty with oil and place in the skillet. Cook, turning once, until just cooked through, 3 to 4 minutes per side.
  • Drain the pickled vegetables and toss with the whole cilantro. Spread some spicy yogurt sauce on the top and bottom of each bun and top with a burger patty and some pickles.

1/3 cup Hawaiian stir-fry sauce
1 tablespoon packed brown sugar
1 package (1 pound) seasoned turkey patties
1 bag (16 ounces) fresh stir-fry vegetables

Steps:

  • Grate 1 teaspoon peel from orange. Peel orange; discard peel. Cut orange into thin wedges or slices.
  • Mix stir-fry sauce, brown sugar and orange peel.
  • Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook turkey in skillet about 3 minutes on each side or until light brown.
  • Move turkey to one side of skillet. Add stir-fry sauce mixture and vegetables to other side of skillet; stir well to coat vegetables with sauce.
  • Heat to boiling; reduce heat to medium. Cover and cook 10 to 12 minutes; stirring occasionally, until vegetables are crisp-tender. Stir in orange wedges. Serve turkey topped with vegetable mixture.

1 tablespoon sugar
1 tablespoon cornstarch
1/8 teaspoon ground ginger
1 cup chicken or turkey broth
3 tablespoons reduced-sodium soy sauce
2 teaspoons white vinegar
1 egg, lightly beaten
1/3 cup dry bread crumbs
1/4 teaspoon salt
1/4 teaspoon garlic powder
1-1/4 pounds lean ground turkey
1 large green pepper, cut into 1-inch pieces
1 cup sliced celery
2 medium tomatoes, cut into wedges
Hot cooked rice

Steps:

  • In a small bowl, combine the sugar, cornstarch and ginger. Whisk in the broth, soy sauce and vinegar until smooth; set aside. In another bowl, combine the egg, bread crumbs, salt and garlic powder. Crumble turkey over mixture and mix well. Shape into five patties. , In a nonstick skillet coated with cooking spray, cook patties over medium-high heat for 3-5 minutes on each side or until a thermometer reads 165° and juices run clear., Add green pepper and celery. 1/3 cup Progresso Plain Bread Crumbs
1 egg
3/4 teaspoon garlic salt
1 tablespoon cooking oil
2 cups chicken broth
2 tablespoons soy sauce
4 teaspoons cornstarch
2 teaspoons sugar
2 teaspoons vinegar
1 dash black pepper
2 celery ribs, cut diagonally
1 medium onion, cut into thin rings
1 medium green pepper, cut into 3/4-inch pieces
salt & pepper
2 medium tomatoes, cut into wedges

Steps:

  • Combine turkey, bread crumbs,egg and garlic salt. Form into patties.
  • Heat oil in a large skillet over medium-high heat. Saute patties about 3 minutes on each side or until browned.
  • While patties cook, combine broth, soy sauce, cornstarch, sugar, vinegar, and black pepper. When both sides are browned, pour sauce mixture over patties and bring to a boil, stirring occasionally. Reduce heat and add celery, onion and green pepper. Simmer, covered, 6 minutes. Season to taste with salt & pepper and add tomatoes. Simmer another 2 to 3 minutes, or until done. Enjoy.

1/2 cup water chestnut chopped
2 tablespoons soy sauce
1 tablespoon ginger root chopped fresh

1 tablespoon vegetable oil

2 teaspoons cornstarch

Steps:

  • In a medium bowl with a fork, beat egg white until foamy. Add turkey, water chestnuts, soy sauce, gingerroot, cornstarch and garlic. Mix until blended. Shape into six patties, about 2 1/2 inches in diameter.In a 12-inch non-stick skillet over medium-high heat, brown patties on both sides in oil.Meanwhile, in a small bowl, mix water and cornstarch until smooth. Pour between patties. Bring to a boil reduce heat to low, cover and simmer for 10 minutes. Transfer patties to a warm platter cover and keep warm. Over medium heat, boil sauce in skillet for 1 to 2 minutes. Pour over patties to serve.
