BAKED TURNIPS
This is an adaptation of a traditional gratin dauphinois.

Steps:
- Preheat oven to 375 degrees.
- Peel the turnips and slice thinly. Using about 1/2 tablespoon of butter, butter well the bottom and sides of an oval gratin dish.
- Mix the Parmesan cheese with the salt, pepper, nutmeg and cayenne. Bring the milk or cream to a boil in a separate saucepan and keep hot.
- Layer turnip slices in the dish, dusting each layer with the spicy cheese mixture. When all the turnips are used up, pour the hot milk into the dish. Strew bread crumbs over the top and dot with the remaining butter.
- Bake, uncovered, for 45 to 50 minutes, until turnips are soft and have absorbed much of the liquid.

TURNIP BAKE
This recipe has been in our family for years. We like turnips with turkey, so my mother used to serve this side dish with our turkey dinner at Christmas. Then I served this dish, and now my daughter, who has taken over preparing Christmas dinner, is carrying on the tradition.

- Preheat oven to 375°. Place turnips in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer 10-12 minutes or until tender. Drain. , In a small bowl, combine turnips, 2 tablespoons butter and eggs. Combine flour, brown sugar, baking powder, salt, pepper and nutmeg; add to turnip mixture and mix well. Transfer to a greased 8-in. square baking dish. , Melt remaining butter; toss with bread crumbs. Sprinkle over top. Bake, uncovered, 25-30 minutes or until a knife inserted in the center comes out clean. Serve immediately.

- Preheat the oven to 450 degrees F. Toss together the turnips, butter, thyme sprigs, shallots, olive oil and some salt and pepper in a 13-by-9-inch baking dish. Roast until the turnips begin to soften, about 30 minutes. Adjust the seasoning and serve.
ROASTED BABY TURNIPS WITH MISO BUTTER AND FRIED EGGS
Our chopped challenge this week was turnips. We wanted a hearty rustic weeknight dinner that the whole family would love. We made a family-style cast-iron skillet dinner with potatoes, onions, and baby turnips and topped it with sunny-side-up eggs and nutty, addictive miso butter. Chopped Basket Ingredient: turnips

- Preheat the oven to 425 degrees F with a rack set on the middle shelf. Heat a large cast-iron pan over medium-high heat.
- Gently toss the baby turnips, potatoes and onion wedges with 2 tablespoons of the oil and a light sprinkle of salt and pepper. Carefully add to the hot pan and put in the oven to roast until the vegetables are golden brown and the potatoes are cooked through, 20 to 25 minutes.
- While the vegetables are roasting, prepare the miso butter. Stir together the butter, miso, garlic, ginger and half of the scallion greens.
- Thickly slice the reserved turnip greens and stems (about 1/2-inch pieces).
- Remove the vegetables from the oven and turn off the heat. Gently stir in the reserved turnip greens and scallion whites until just wilted, 1 to 2 minutes. Add the miso butter to the pan and gently toss to coat the vegetables. Return to the oven to keep warm while you cook the eggs.
- Heat the remaining oil in a large nonstick pan over medium heat. Crack 4 to 6 eggs into the pan; if they stick together, that's OK. Sprinkle lightly with salt and pepper. Cook until the whites start to set, 2 to 3 minutes, and then cover with a lid and continue cooking until the whites are set but the yolks are still runny, 1 to 2 minutes.
- To serve, top the roasted vegetables with the fried eggs and garnish with the remaining sliced scallions.
TURNIPS BAKED WITH CHEESE
Baking the turnips beforehand facilitates peeling. A very old root veggetable side dish, based ona medieval recipe. Enjoyed even by avowed turnip-haters.

- Preheat oven to 325°F
- Wash turnips and place them in a roasting pan coated with olive oil. Roast about 45 minutes until tender. Peel and slice thinly.
- Butter a small casserole dish abd fill with alternating layers of turnips and cheese. Sprinkle 1 tsp of brown sugar over each layer of turnips before adding a layer of cheese, lasagna-style.
- Mix together melted butter, bread crumbs, Parmesan, salt and pepper and nutmeg and sprinkle over the top of the casserole. Return to oven and bake for 10-15 minutes more, uncovered.

- Peel and quarter turnips. In a large saucepan of boiling salted water cook turnips until tender, 15 to 20 minutes, and drain in a colander. Chop shallots.
- In a heavy saucepan bring milk and cream just to a simmer and keep hot over low heat. In a 4-quart heavy kettle cook shallots in butter over moderately low heat, stirring, until softened. Add thyme, salt, peppercorns, cloves, and bay leaves and cook, stirring, 1 minute. Add flour and cook roux, stirring, 3 minutes. Whisk in hot milk mixture all at once and bring to a boil over moderately high heat, whisking constantly to prevent lumps. Reduce heat to moderately low and simmer sauce, whisking occasionally, 15 minutes. Pour sauce through a sieve into a large heavy saucepan and discard solids. Into sauce stir white pepper, nutmeg, and salt to taste. Turnips and sauce may be made up to this point 1 day ahead and kept separately in bowls, covered and chilled.
- Return sauce to a simmer and add turnips. Cook mixture, covered, over moderately low heat, stirring occasionally, until turnips are heated through.
- Garnish turnips with parsley.
SWEET AND BUTTERY TURNIPS
This recipe has turned into a regular at our house, and is requested by family members as a traditional addition to our holiday meals. You can't go wrong with this one!

- Place turnips into saucepan and fill with enough water to cover them. Bring to a boil, and cook until tender, about 20 minutes. Drain. Add butter to the hot turnips and mash with a potato masher or whisk. Once the butter has melted in, stir in the sour cream, half-and-half, brown sugar, nutmeg, salt and pepper. Mash to your desired consistency. I always undermash for a chunkier outcome. Cover and keep in a warm oven until ready to serve.

- Bring a pot of salted water to a boil. Add turnips; cook until tender but still firm. Drain.
- In a large bowl, add turnips, butter, salt, cream, eggs, brown sugar and 1 cup corn flakes. Blend until well mixed.
- Pour into a 2 quart casserole dish, sprinkle with remaining 2 tablespoons crushed corn flakes. Bake for 45 to 50 minutes.

- Place the turnip in a saucepan with enough water to cover the cubes; place the saucepan over medium heat; bring to a boil; cover and reduce heat to medium-low. Simmer 5 minutes; drain water and return turnip to saucepan.
- Return the saucepan to medium heat. Pour enough fresh water over the turnips to cover; add the sugar. Bring to a boil; cover, reduce heat to medium-low and simmer until turnip pieces are fork tender; drain.
- Melt the butter in a separate saucepan over medium-high heat. Stir the flour into the butter to make a roux. Whisk in the milk until the mixture thickens. Add the turnips and stir gently to coat. Season with salt and pepper.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
- Place the carrot and turnip cubes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
- Return the carrots and turnips to the pot, and mash well with the butter, salt, flour and 1/4 cup of sugar. Whisk together the eggs and milk in a bowl, then stir into the mashed carrot mixture until blended. Scrape into the prepared casserole dish. Stir together 2 tablespoons of sugar with the cinnamon in a small bowl, and sprinkle over the top of the carrot mash.
- Bake in the preheated oven until the carrot mash has slightly firmed and the top has begun to turn golden brown, about 45 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch casserole dish.
- Place turnip into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and transfer to a bowl.
- Mash turnip, 2 tablespoons butter, salt, and pepper together until smooth.
- Toss apples with 2 tablespoons brown sugar and cinnamon in a bowl.
- Spread half the turnip mixture into the prepared casserole dish; top with half the apples. Repeat with remaining turnip mixture and apple mixture.
