1 lb onion
1/4 cup reserved onion juice, see directions (water may be substituted)
1/4 teaspoon sugar
1/2 cup vegetable oil
2 eggs
3 cups all-purpose flour
1 teaspoon baking powder
1 1/2 tablespoons salt
1/2 cup poppy seed (optional)
1 egg
1 tablespoon water

Steps:

  • Preheat oven to 400°F.
  • Grate or finely mince the onions and drain, reserving 1/4 cup juice.
  • Combine the onions, juice, sugar, oil and 2 eggs in a large bowl.
  • In another bowl, combine the flour, baking powder, salt and poppy seeds. Stir to mix.
  • Add the flour mixture to the onion mixture, stirring just enough to blend thoroughly.
  • On a floured surface, roll dough out to a thickness of 1/4"-1/2".
  • Cut into 2"x2" squares, or use a cookie cutter to make diamond or round shapes.
  • Place on a greased baking sheet.
  • Beat the remaining egg together with the water.
  • Brush over tops.
  • Bake until lightly browned around the edges, 15-20 minutes.
  • Place baking sheet on wire rack and let cool.
  • These are best the day they are made, but keep well if stored in a tightly closed container.

4 slices bacon
1 cup white onion, sliced
2 eggs
1 cup sour cream
1/4 cup parsley, chopped
1/3 cup emmenthaler cheese, grated
1/4 teaspoon nutmeg
1/4 teaspoon pepper
3/4 teaspoon salt
1 (12 inch) prepared pizza crust, thawed

Steps:

  • Preheat oven to 400ºF.
  • Cook bacon over medium high heat until cooked through. Remove bacon strips and add sliced onions to hot pan. While onions cook over medium heat, cut bacon strips into small pieces.
  • Once sliced, add bacon back to pan and continue cooking until onions are soft and fragrant.
  • Allow onions and bacon to cool.
  • Beat eggs and combine with sour cream, parsley, cheese, nutmeg, pepper and salt.
  • Fill rolled dough with onions and bacon. Pour the egg cream mixture over the onions and bacon. Bake at 400ºF for 25-35 minutes or until a knife inserted in the middle comes out clean.

Zwiebelkuchen is an onion pie from Swabia, in south-central Germany. It is a special time of year, in the fall, when the mom & pop winemakers will open a BasinWirtschaft in their barn or garage. They serve the new wine, fresh zwiebelkuchen, and perhaps some wurst, for a minimal fee. A few tables are set up, and they are open when they have time to serve. To indicate they are serving, they will hang a straw broom over the doorway. The combination of the onions and the 'green' wine can have explosive consequences later on!

6 pounds onions, sliced
4 slices bacon
1 (16 ounce) container sour cream
4 egg
2 tablespoons all-purpose flour
½ teaspoon salt
½ teaspoon caraway seed
2 recipes pastry for a 9 inch single crust pie

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a jelly-roll pan or large pizza pan with prepared dough, making sure dough extends up sides of pan.
  • Saute onion in a skillet until translucent and pour cooked onion into a large mixing bowl. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, chop and add to onion; mix well.
  • Stir in sour cream. Beat eggs enough to break up yolks, then mix in to pie mixture. Add flour to thicken mixture (onions will create a lot of water), then add salt. Mix well and pour mixture into prepared pan. Sprinkle top with caraway seed.
  • Bake in preheated oven for about 1 hour, or until onions start to turn golden brown on top.

3 cups tap water, very hot
4 tablespoons butter
1 medium onion, cut in 1/2-inch dice (about 1 cup)
1 medium carrot, cut in 1/4-inch dice (about 1/2 cup)
1 cup celery, diced
1 small green pepper, cut in 1/4-inch dice (about 1-1 1/4 cups)
1 large garlic clove, minced
1/2 cup all-purpose flour
1 teaspoon sweet paprika
1/2 cup tomato puree
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place mushrooms in a bowl and pour the water over them.
  • Let stand 25 minutes.
  • Drain, reserving liquid.
  • Chop mushrooms very fine and set aside.
  • Heat butter in a 3-quart saucepan over medium heat.
  • Add onion, carrot, celery, pepper and garlic.
  • Cook, stirring frequently, until tender, about 10 minutes.
  • Add mushrooms and cook 3 minutes more.
  • Sprinkle in flour and paprika and stir to combine.
  • Cook for 2-3 minutes, stirring frequently, until there is a film of flour on the bottom of the pan.
  • Add reserved liquid, stirring constantly.
  • Bring to a boil and stir in tomato puree, salt and pepper.
  • Simmer gently, partially covered, for 20 minutes.
  • Strain if desired (optional).
  • This can be refrigerated, tightly covered, for several days, and frozen for up to 3 months.

This is a German coffee cake that was handed down from my Grandmother. These freeze very well and can be stacked two to a package with waxed paper between. The prep time is estimated.If you wrap them in saran wrap and then in foil they should stay good indefinately. I have kept them in the freezer for at least 5 months.

1 1/2 cups sweet cream
3 eggs
3 teaspoons baking powder
4 1/2 cups flour
1/4 teaspoon salt

7 eggs, 1 for each
3 1/2 cups cream, 1/2 cup for each
1 3/4 cups sugar, 1/4 cup for each

Steps:

  • Mix the ingredients for the crust,well;Divide into 7 balls.
  • Roll out each and put into pie tins.
  • Arrange fruit (apples peaches,rhubarb or any other fruit you prefer), in single layer, on the dough.
  • Sprinkle sugar on the fruit.
  • Mix together filling ingredients and pour on the fruit.
  • (I like more filling so I make enough for 8 kuchen).
  • Sprinkle with cinnamon.
  • Bake 375º till filling is set.
  • About 33 minutes (If you stick a table knife in filling and it comes out clean it s done.).

¼ cup white sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
½ teaspoon baking powder

1 (29 ounce) can sliced peaches, drained
3 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch springform pan. Sift together the flour, baking powder and salt. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Beat in the flour mixture. Spread dough with hands over the bottom and 1 inch up the sides of prepared springform pan. Arrange peach slices in a spoke pattern over the dough. Sprinkle with sugar and cinnamon.
  • Bake in the preheated oven for 35 to 40 minutes, or until golden brown.

3 cups sifted all-purpose flour
½ teaspoon baking soda
1 ¼ teaspoons ground nutmeg

½ teaspoon ground allspice
½ cup slivered almonds
½ cup candied mixed fruit peel, finely chopped
1 egg white, beaten
1 tablespoon lemon juice
½ teaspoon lemon zest
1 ½ cups sifted confectioners' sugar

Steps:

  • In a large bowl, beat the egg, brown sugar and honey until smooth. Stir in the molasses. Combine the flour, baking soda, nutmeg, cinnamon, cloves and allspice; stir into the molasses mixture. Stir in the almonds and candied fruit peel. Cover or wrap dough, and chill overnight.
  • Preheat the oven to 400 degrees F (200 degrees C). Grease cookie sheets. On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into 2x3 inch rectangles. Place cookies 1 1/2 inches apart onto cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, until firm. While still warm, brush the cookies with the lemon glaze.
  • To make the glaze: In a small bowl, stir together the egg white, lemon juice and lemon zest. Mix in the confectioners' sugar until smooth. Brush over cookies.

1 cup low-fat milk
1 egg
2 tablespoons butter
3 ¼ cups bread flour
¼ cup white sugar
¾ teaspoon sea salt
1 (.25 ounce) envelope active dry yeast or bread machine yeast
1 (24 ounce) carton ricotta cheese
¾ cup white sugar
3 eggs
¼ teaspoon vanilla extract
¾ cup light brown sugar, packed
3 tablespoons butter
2 tablespoons non dairy amaretto flavored creamer

Steps:

  • Place the milk, 1 egg, 2 tablespoons of butter, flour, 1/4 cup white sugar, salt and yeast into the pan of your bread machine in the order recommended by the manufacturer. Select the Dough cycle and press Start. Let the dough rise 25 minutes.
  • While the dough is preparing, in a medium bowl, combine ricotta cheese, 3/4 cup of white sugar, 3 eggs, and vanilla extract. Beat on high speed 3 to 4 minutes.
  • Grease a 15x10 inch baking sheet and set aside. Remove dough from bread machine and place on lightly floured surface. Roll out dough into rectangular shape to fit baking sheet. Carefully slide dough onto baking sheet. Using a knife or scissors, start on the long sides and cut 1 inch wide strips in towards the center to make approximately 14 strips on each side. Cut in only far enough to leave a solid strip about 3 inches wide down the center; with the cut strips forming a "fringe" on each side. Spread the ricotta mixture along the center strip. Fold the side strips over the ricotta mixture, alternating strips from each side. Pinch or twist the strips into knots to seal. Let the kuchen rest.
  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, prepare the streusel topping by mixing together the brown sugar, 3 tablespoons of butter, and amaretto creamer. Crumble topping over the top of the kuchen.
  • Bake 25 to 35 minutes or until the top is golden brown. Cool 20 minutes before serving.

1 cup unbleached all-purpose flour
dash of salt
1/4 cup sugar
1/2 cup (1 stick) unsalted butter or parve margarine
1 large egg yolk
2 teaspoons dried breadcrumbs
1/3 cup apricot preserves
1 tablespoon brandy
2 pounds Italian plums
1/2 teaspoon cinnamon
Confectioners' sugar

Steps:

  • To make the crust using a food processor, fitted with a metal blade, pulse the flour, salt, and 1 tablespoon of the sugar together. Cut the butter or margarine into small pieces, add to the bowl, and process until crumbly. Add the egg yolk and process until a ball is formed, adding more flour if necessary.
  • To make the dough by hand, use your fingers or a pastry blender to work the butter or margarine into the flour, salt, and 1 tablespoon sugar until the mixture resembles coarse breadcrumbs. Add the egg yolk and work the dough into a ball.
  • Remove the dough from the bowl, dust with flour, and pat into a flattened circle. Cover with plastic wrap and refrigerate for at least a half hour. When you are ready to make the crust, dust your hands and the dough with flour. Place the dough in the center of a 9-inch pie plate and with your fingers gently pat in out to cover the bottom and go up the sides.
  • Preheat the oven to 400°F.
  • Prick the crust with the tines of a fork in several places and prebake the crust on the middle rack for 10 minutes. Remove the curst from the oven and let it cool slightly. Turn the oven down to 350°F.
  • Pit and cut the plums into fourths. Sprinkle the breadcrumbs on the dough, then spoon the apricot preserves on top and drizzle with the brandy. Place the plum quarters on the crust in a circle so that each overlaps the next and they eventually form a spiral into the center. Sprinkle with cinnamon and the remaining sugar. (At this point, if you wish, you can wrap and freeze the tart, to bake it later. Just remove the pie from the freezer one hour before baking.)
  • Place the tart in the oven and bake about 30 to 40 minutes or until the crust is golden brown and the plums are juicy. Remove from the oven. Just before serving, sprinkle with confectioners' sugar.
