3 cups crushed chocolate wafers (about 65 wafers)
6 ounces cream cheese, softened
Sugar
1 pound chocolate mint candy coating disks, chopped
2 tablespoons shortening
Green and white sprinkles, optional

Steps:

  • In a large bowl, combine chocolate wafer crumbs and cream cheese. Shape into 1-in. balls. Coat bottom of a glass with cooking spray, then dip in sugar; flatten balls to 1/4-in. thickness. (Re-dip glass in sugar as needed.) Freeze 30 minutes or until firm., In a microwave, melt candy coating disks and shortening; stir until smooth. Dip cookies in coating mixture; allow excess to drip off. Place on waxed paper; if desired, decorate immediately with sprinkles. Store between layers of waxed paper in an airtight container in the refrigerator.

2 cups butter, softened
1 cup confectioners' sugar
1/2 cup sugar
4 teaspoons vanilla extract
4 cups all-purpose flour
1 teaspoon salt
4 cups semisweet chocolate chips
2 tablespoons shortening
2 teaspoons peppermint extract
1/2 cup crushed candy canes (about 5 regular size)

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in vanilla. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or until firm enough to roll., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 2-in. round cookie cutter. Place 2 in. apart on ungreased baking sheets., Bake 12-15 minutes or until edges begin to brown. Remove from pans to wire racks to cool completely., In top of a double boiler or a metal bowl over barely simmering water, melt chocolate chips and shortening; stir until smooth. Stir in extract. Dip each cookie halfway into chocolate mixture; shake off excess. Place on waxed paper; sprinkle with candies. Place on waxed paper-lined baking sheets; refrigerate until set.

2 1/4 cups heavy cream
1 cup fresh mint leaves
One 10-ounce bag bittersweet chocolate chips
One 10-ounce bag semisweet chocolate chips
1/2 teaspoon salt
1 cup crushed chocolate or mint-chocolate cookies
1 cup chopped pecans
1 cup chopped semisweet chocolate

Steps:

  • Heat the cream in a medium saucepot over low heat. Smack the mint between your hands to help release the oils; add the mint to the cream. Bring to a simmer, then remove from the heat, cover and let steep for 30 minutes.
  • Heat the cream back to a simmer. Place the bittersweet and semisweet chocolate chips in a large bowl and strain the hot mint cream over the chocolate. Let sit for 2 minutes to let the chocolate melt. Add the salt and whisk until the chocolate is completely melted and blended into the cream. Pour into a baking dish. Cover and refrigerate until chilled and set, 2 hours.
  • Using a small round scoop, melon baller or tablespoon measure, scoop out tablespoon-size balls of the chilled chocolate and place on a baking sheet. You'll need some rubber gloves for the next part. Roll each ball in your hands so that it is uniform and smooth, then place back on the baking sheet.
  • Place the crushed cookies, chopped nuts and chopped semisweet chocolate in 3 separate dishes. Roll each chocolate ball in one of the coatings, making sure it is completely covered. Place on a baking sheet, cover and refrigerate for at least 30 minutes. Remove from the refrigerator about 20 minutes before serving.

¾ cup butter
1 ½ cups packed brown sugar
2 tablespoons water
2 cups semisweet chocolate chips
2 eggs
2 ½ cups all-purpose flour
1 ¼ teaspoons baking soda
½ teaspoon salt

Steps:

  • In a large pan over low heat, cook butter, sugar and water until butter is melted. Add chocolate chips and stir until partially melted. Remove from heat and continue to stir until chocolate is completely melted. Pour into a large bowl and let stand 10 minutes to cool off slightly.
  • At high speed, beat in eggs, one at a time into chocolate mixture. Reduce speed to low and add dry ingredients, beating until blended. Chill dough about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Roll dough into balls and place on ungreased cookie sheet about 2 inches apart. Bake 8-10 minutes. While cookies are baking unwrap mints and divide each in half. When cookies are brought out of the oven, put 1/2 mint on top of each cookie. Let the mint sit for up to 5 minutes until melted, then spread the mint on top of the cookie. Eat and enjoy!

1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
1/2 cup butter, softened
1 egg
1 teaspoon green food color
3 teaspoons peppermint or mint extract
1 tub (12 oz) Betty Crocker™ Whipped Whipped Cream Frosting
1 bag (12 oz) dark chocolate chips (2 cups)
1/4 cup candy sprinkles

Steps:

  • Heat oven to 375°F. Line large cookie sheet with cooking parchment paper.
  • In large bowl, stir cookie mix, butter, egg, food color and 2 teaspoons of the peppermint extract until soft dough forms. Drop dough by tablespoonfuls onto cookie sheet.
  • Bake 8 to 11 minutes or until barely golden around edges. Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely.

2 large eggs, at room temperature

One 4.67-ounce package chocolate mint thins, such as Andes, chopped into 1/2-inch pieces

Steps:

  • Position one rack in the center of the oven and one rack in the bottom third of the oven and preheat to 300 degrees F. Line 2 large rimmed baking sheets with parchment paper.
  • Combine the chocolate and butter in a small bowl and place over a saucepan of barely simmering water. Stir occasionally until the chocolate has melted and the mixture is smooth. Cool for 10 minutes.
  • Whisk together the flour, cocoa, baking powder and salt in a medium bowl. Whisk the sugar, eggs, 2 tablespoons water and vanilla to blend in a separate large bowl. 1 1/2 cups packed brown sugar
3 eggs
1 teaspoon vanilla

1/2 cup whipping cream
1 tablespoon butter
1 tablespoon granulated sugar
1 cup semisweet chocolate pieces or 1 cup bittersweet chocolate piece

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium mixing bowl stir together flour, cocoa, baking powder, and salt. Set aside.

  • In a small heavy saucepan combine whipping cream, butter, and sugar. Bring just to boiling, stirring to dissolve sugar. Remove from heat. Place chocolate pieces in a medium mixing bowl. Pour hot cream mixture over chocolate; let stand for 5 minutes. Stir until smooth. Let cool to room temperature before using. Makes about 1-1/4 cups.
  • TIP: Place cookies in layers separated by waxed paper in an airtight container; cover. Store at room temperature for up to 3 days or freeze (do not dip if freezing) for up to 3 months. Thaw and dip in ganache as directed in Step 4.
