EASY NO-COOK PASTRY CREAM
In this no-cook easy pastry cream, there's no hand-whisking or tempering involved. Use it to fill fruit tarts, cream puffs, or Boston Cream Pie.

Steps:
- Place all ingredients in a large bowl. Use an electric mixer to beat until very stiff peaks form and the filling smooths out, about 2 minutes. Store covered in the refrigerator until well chilled. The pastry cream can be refrigerated up to 3 days.

In New Zealand, I would always love going to the bakery to buy a vanilla slice. Now that I have moved to England, we can't get them anymore. I found this recipe in a cookbook my Mummy had hidden away, and the memories came pouring back

Steps:
- Line a 23cm square slab pan with foil, bring foil up to overlap sides of pan.
- Place pastry sheets on lightly greased oven trays.
- Bake in a hot oven about 6 minutes, or until well browned.
- Cool.
- Gently flatten pastry with hand.
- Fit 1 pastry sheet in prepared pan.
- Combine sugar, cornflour and custard powder in pan.
- Gradually stir in milk. Stir until smooth.
- Add butter and stir over heat until mixture boils and thickens.
- Simmer, stirring, about 3 minutes or until very thick and smooth.
- Remove from heat and stir in yolks and essence.
- Pour hot custard over pastry in pan.
- Top with remaining sheet of pastry, flat side up.
- Press down slightly.
- Cool.
- Spread pastry with passionfruit icing.
- Cut when set.
- FOR THE ICING:.
- Sift icing sugar into small heat-proof bowl.
- Stir in butter, passionfruit juice and enough water to make a stiff paste.
- Stir icing over hot water until spreadable.
- Recipe can be made a day ahead.
- Store covered in refrigerator.
- Do not freeze or microwave.

VANILLA SLICE - QUICK AND EASY
You wont be able to eat 'just one' of these. So easy to make and so so easy to eat. This is something my Mum used to make when i was a kid and i just made it for my kids and husband for the first time the other day. They were such a hit that i thought i would post the recipe. Hope you enjoy.

Steps:
- 1. Line baking try with biscuits (1/2 the pack so you have equal number of biscuits for the top layer later).
- 2. put milk, sugar and butter in saucepan.
- 3. blend corn flour, custard powder with extra milk - add to saucepan and bring to the boil.
- 4. stir until smooth and thick.
- 5. remove from heat and beat in egg and vanilla.
- 6. spread custard over biscuits while hot.
- 7. place more biscuits on top of the custard to line up with the ones at the bottom of the tray.
- 8. refridgerate till set.
- 9. cut into squares and serve.

- Preheat the oven to 180c. Put pastry sheets onto two lightly greased baking trays & prick all over with a fork. Bake for 20 minutes, until they are puffed and golden brown. Remove from oven and set aside to cool.
- Whip cream with electric beater until soft peaks form, put aside in the fridge. Put vanilla pudding mix and milk in another bowl and stir using wire whisk until thickened.
- Quickly fold the whipped cream into the pudding mix then spread over the top side of one of the pastry sheets. Put the other sheet on top, flat side up.
