VEGAN CANDIED YAMS
Tender sweet potato chunks are baked up in sweet and sticky brown sugar sauce to make these decadent vegan candied yams. The perfect side for a holiday feast!

- Preheat the oven to 400°F.
- Spread the sweet potatoes evenly into a 2-quart casserole dish or 9-inch deep dish pie plate.
- Place the brown sugar, orange juice, whiskey, butter, cinnamon, ginger, nutmeg and salt into a small pot and place it over medium heat.
- Heat the mixture, stirring frequently, until the butter melts and it comes to a simmer.
- Lower the heat and allow the mixture to simmer for about 10 minutes, until all of the alcohol has cooked off (if using whiskey), and the mixture is very glossy.
- Remove the pot from heat and stir in the vanilla extract.
- Pour the brown sugar mixture over the sweet potatoes. Stir gently a few times.
- Place the dish into the oven. Stir the sweet potatoes every 10 minutes or so while baking.
- Check the sweet potatoes after about 30 minutes. If the sauce is still very runny, stir 3 tablespoons of cold water and 2 teaspoons of cornstarch together in a small cup, then stir the mixture into the sweet potatoes. Return them to the oven to finish baking.
- Bake the sweet potatoes for a total of 40 to 45 minutes, until they're very tender and the sauce is thick and syrupy.
- Remove the dish from the oven and let it sit for a few minutes before serving.

- Preheat oven to 400 degrees F (200 degrees C).
- Place sweet potatoes in a medium baking dish. Distribute butter pieces evenly over the sweet potatoes. Sprinkle with brown sugar. Layer with miniature marshmallows.
- Bake in the preheated oven 25 minutes, or until sweet potatoes are tender and marshmallows have melted.

STOVE TOP CANDIED YAMS
Steps:
- Wash and peel the sweet potatoes and carefully cut them into slices (discard the ends and outer skin).
- Using a skillet on medium heat, proceed to melt the butter and stir in the spices and coconut sugar
- Carefully add in the potatoes with pink salt and vanilla extract to the sugar mixture
- Pour in the water to create a watery syrup then fold and stir with the sweet potatoes (don't worry this will thicken up)
- Reduce the heat to low, cover with lid and allow to cook on low heat for 45 minutes to 1 hour. Continue to baste the yams with the syrup occasionally. Add a splash more water to loosen up the syrup if it's becomes too thick for your liking. The yams should be tender and soft to the touch - can prick with a fork. The butter and coconut sugar should have congealed into a syrup texture.
- Serve piping hot and enjoy!

- Peel and slice the yams into thin disks, using a mandolin if you have one. The thinner you make them, the crispier and chewier they come out. Layer the disks of yam in the baking pan.
- In a medium saucepan, melt a stick or ½ cup of vegan butter on low heat. Slowly whisk in all the spices minus the vanilla extra, stirring constantly. Turn off the heat and whisk in the vanilla extract.

- Preheat at 350°F (180°C). Wash the sweet potatoes and begin to peel, then chop and slice sweet potatoes ½ inch thick. Place sweet potatoes in a large mixing bowl.
