Delicious, easy and filling lasagna which is actually good for you too. A perfect comfort food and easy to freeze and save for a time when you can't be bothered cooking. I found this recipe on the internet and modified it to make it tastier and as low fat as possible.

1 tablespoon olive oil
1 large onion, chopped
1 red capsicum, diced
2 medium zucchini, diced
1 small eggplant, diced
2 1/2 cups sliced mushrooms
1 (415 g) can Italian-style tomatoes, chopped
1 (140 g) carton tomato paste
1 cup water
1 teaspoon salt (or another seasoning or herb of choice I use basil and LOTS of garlic)
4 tablespoons flour
3 cups skim milk
1/2 cup grated low fat mozzarella
8 sheets lasagna noodles
1/2 cup grated cheese, extra

Steps:

  • Pre-heat oven to 180°C.
  • Tomato Sauce: Heat oil in a large saucepan.
  • Sauté vegetables until tender.
  • Stir through tomatoes, tomato paste, water and salt (or other seasonings) and simmer for 15 minutes, stirring occasionally.
  • White Sauce: Place flour in a saucepan or bowl.
  • Gradually add milk, stirring until smooth.
  • Place over medium heat and stir (or microwave on High 100% for 7 minutes, stirring after every minute) until mixture boils and thickens.
  • Stir salt and cheese through sauce.
  • To assemble, place a layer of lasagne sheets over the base of a lightly greased 20cm x 33cm ovenproof dish.
  • Spread with half of the tomato mixture, then half of the white sauce mixture.
  • Repeat lasagne, tomato and white sauce layers ending with white sauce.
  • Sprinkle with extra cheese.
  • Bake in moderate oven for 40 minutes.

3 cups chopped veggies of your choice
1/2 chopped onion
2 tablespoons minced garlic
1 tablespoon olive oil
1 cup low fat ricotta cheese
1 egg
2 cups fresh spinach
2 cups tomato sauce
12 uncooked oven-ready whole grain lasagna noodles
1 cup mozzarella cheese, shredded

Steps:

  • Chop the veggies. Saute the onion and garlic in the oil over medium high heat. Add veggies and saute until tender. Set aside.
  • Whisk egg into ricotta cheese and stir in fresh spinach.
  • Pour a little sauce in the bottom of a greased 9×13 pan. Top with 4 lasagna noodles,1/2 cup ricotta mixture, 1/2 of the veggies, and 3/4 cup sauce. Repeat; top entire pan with noodles, remaining sauce, and mozzarella cheese.
  • Cover and bake for 40 minutes at 375 degrees. Remove foil and bake for 10 minutes more or until cheese is bubbly.

I love lasagna with white sauce but all the cheese, cream and carbs don't make it a healthy choice. I set out to revamp this great classic to be health-conscious while still keeping that great sinful taste and I came up with this recipe. The prep takes awhile since the lasagna noodles need to be cooked before baking and there are lots of veggies to slice up but it's well worth the effort! The healthy end result balances protein and carbs, gets in a serving of healthy veggies AND is so low-cal you can even enjoy a glass of white wine with it. Bon Appetit!

2 cups yellow squash, julienned
2 (15 ounce) cans sliced mushrooms, drained
2 teaspoons minced garlic cloves

1 cup broccoli floret, cut into small pieces
1 teaspoon italian seasoning
4 tablespoons extra virgin olive oil
1 cup onion, diced
4 tablespoons flour
1 teaspoon salt
1 teaspoon pepper
3 cups skim milk
1/2 cup parmesan cheese, grated
3 tablespoons parmesan cheese, grated
9 whole wheat lasagna noodles (Such as Hodgson Mills)
3 cups part-skim mozzarella cheese, shredded
15 ounces fat-free ricotta cheese
1 (10 ounce) package frozen spinach, thawed and drained
2 teaspoons dried parsley or 2 tablespoons fresh parsley, chopped
2 teaspoons dried basil leaves or 2 tablespoons fresh basil, chopped

Steps:

  • ·Spray a 13"x 9" pan with cooking spray and preheat oven to 350 degrees. Set pan aside.
  • ·Fill a large saucepan with water and bring to a boil over high heat; Add lasagna noodles and cook according to package directions; Remove from heat. Meanwhile, continue preparing lasagna filling.
  • ·Combine ricotta cheese and spinach in a small bowl and mix well; Set aside.
  • ·Spray large skillet or wok with olive oil cooking spray and heat pan over medium-high heat. Cook zucchini, yellow squash, mushrooms, carrots, broccoli and garlic until tender. Add Italian seasoning and set aside to cool.
  • ·Heat 4T olive oil in saucepan over medium heat. Add onions and sauté until tender, about 5 minutes. Add flour, salt and pepper and continue to saute, stirring constantly, about 5 minutes while gradually increasing heat to medium-high.
  • ·Stir in milk and cook until thickened; Remove from heat and stir in 1/2c parmesan cheese.
  • ·Spoon just enough white sauce into lasagna pan to barely cover the bottom.
  • ·Line with 3 noodles and spoon 1/3 of the ricotta mixture (it'll be a thin layer) down the center of each noodle. Top with 1/3 of the vegetable mixture and sprinkle 1/3 of the mozzarella cheese (about 1c) over top before covering with 1/3 white sauce. Repeat 3 noodles; 1/3 each ricotta mixture, vegetable mixture and mozzarella cheese topped with 1/3 white sauce for second layer. Repeat layering for third layer but omit remaining mozzarella cheese and set aside. Cover with aluminum foil; Bake 30 minutes until hot and bubbly.
  • ·Remove aluminum foil and add remaining mozzarella cheese, 3T parmesan cheese, parsley and basil. Bake until top is browned, about 10 more minutes.
  • ·Remove from oven and let sit 10-15 minutes before cutting and serving.

8 cups zucchini (unpeeled & shredded)
3/4 lb mushroom, coarsely chopped
2 onions, chopped
2 garlic cloves, minced
1 tablespoon vegetable oil
1 (19 ounce) can diced tomatoes, undrained
1 cup water
1 (5 1/2 ounce) can tomato paste
3 teaspoons italian seasoning
pepper, to taste
1 teaspoon sugar, if needed
9 lasagna noodles
2 cups part-skim cottage cheese
2 cups part-skim mozzarella cheese, shredded
1 egg, lightly beaten (optional)
1/2 cup parmesan cheese, freshly grated

Steps:

  • Preheat oven to 350°F.
  • In a large nonstick pan, heat vegetable oil over medium heat.
  • Add zucchini, mushrooms, onions and garlic, and cook until tender.
  • Add tomatoes, water, tomato paste and Italian seasoning.
  • Bring to a boil, reduce heat to medium-low and simmer uncovered for 20 minutes until mixture has spaghetti sauce consistency, stirring occasionally.
  • Season with pepper to taste and add sugar if too acidic.
  • In large pot of boiling water, cook lasagna noodles as directed on package (usually 10 to 12 minutes) until tender but firm.
  • Drain and rinse under cold water the drain again.
  • Combine cottage cheese, mozzarella, egg and half of Parmesan.
  • Cover bottom of 13 x 9 inch baking dish with a bit of the tomato sauce.
  • Place 1 layer of cooked noodles in dish.
  • Cover with half of cheese mixture.
  • Repeat with remaining sauce, noodles and cheeses to make 3 layers of each ending with a final layer of tomato sauce.
  • Sprinkle with remaining Parmesan cheese.
  • Bake for 45 minutes or until hot and bubbly.
  • Remove from oven and allow to stand for 5 to 10 minutes before serving.

15 -20 oven-ready lasagna noodles
1 (650 ml) jar prepared pasta sauce
2 cups vegetable broth, heated
1 1/2 cups low-fat Greek yogurt
1 1/2-2 cups low-fat cheese, grated
2 -4 large handfulls fresh spinach (5-10 ounces)
1 tablespoon olive oil
salt and pepper

Steps:

  • Heat oven to 400°F.
  • In medium saucepan heat up vegetable broth.
  • Add Greek yogurt and half the cheese to the hot broth.
  • Add spinach gradually to the yogurt/broth mixture. Set aside.
  • Drizzle olive oil on the bottom of a 13X9 inch baking dish. Spread a small amount of pasta sauce on bottom of dish.
  • Add a layer of noodles.
  • Spread sauce on top of noodles.
  • Add a layer of 1/3 of the spinach/yogurt/cheese broth.
  • Sprinkle with 1/3 of remaining cheese.
  • Repeat previous 3 directions twice more.
  • Bake for 30 minutes covered, then 10-15 minutes uncovered.
  • Let stand at least 10-15 minutes before serving.

1 tbsp rapeseed oil
2 onions, sliced
2 large garlic cloves, chopped
2 large courgettes, diced (400g)
1 red and 1 yellow pepper, deseeded and roughly sliced
400g can chopped tomatoes
2 tbsp tomato purée
2 tsp vegetable bouillon
15g fresh basil, chopped plus a few leaves
1 large aubergine, sliced across length or width for maximum surface area
6 wholewheat lasagne sheets (105g)
125g vegetarian buffalo mozzarella, chopped

Steps:

  • Heat 1 tbsp rapeseed oil in a large non-stick pan and fry 2 sliced onions and 2 chopped large garlic cloves for 5 mins, stirring frequently until softened.
  • Tip in 2 diced large courgettes, 1 red and 1 yellow pepper, both roughly sliced, and 400g chopped tomatoes with 2 tbsp tomato purée, 2 tsp vegetable bouillon and 15g chopped basil.
  • Stir well, cover and cook for 5 mins. Don't be tempted to add more liquid as plenty of moisture will come from the vegetables once they start cooking.
  • Slice 1 large aubergine. Lay half the slices of aubergine in the base of the slow cooker and top with 3 sheets of lasagne.
  • Add a third of the ratatouille mixture, then the remaining aubergine slices, 3 more lasagne sheets, then the remaining ratatouille mixture.
  • Cover and cook on High for 2½ - 3 hours until the pasta and vegetables are tender. Turn off the machine.
  • Scatter 125g vegetarian buffalo mozzarella over the vegetables then cover and leave for 10 mins to settle and melt the cheese.
  • Scatter with extra basil and serve with a handful of rocket.

1 medium sweet red pepper, julienned
1 medium carrot, shredded

3 garlic cloves, minced
1 can (12 ounces) tomato paste
1 cup vegetable broth

1/2 teaspoon dried thyme
1/4 teaspoon pepper
6 lasagna noodles
1 large egg, lightly beaten

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add red pepper, carrot and onion; cook and stir until crisp-tender. Add tomatoes, mushrooms, yellow squash, zucchini and garlic; cook and stir until squashes are crisp-tender., Stir in tomato paste, broth, brown sugar and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, 30 minutes, stirring occasionally. Meanwhile, cook noodles according to package directions; drain., Preheat oven to 350°. In a small bowl, mix egg and ricotta cheese. Spread 1 cup vegetable mixture into a greased 8-in. square baking dish. 4 cups mixed assorted fresh vegetables (cauliflower florets, thinly sliced carrots, small strips green pepper, etc.)
1 ounce knorr's leek soup mix (1/4 package, dry)
18 ounces meatless spaghetti sauce or 18 ounces homemade meatless spaghetti sauce
12 ounces low-fat part-skim ricotta cheese

Steps:

  • Preheat oven to 400°F
  • Boil lasagna strips less than full cooking time on package. Mix vegetables with soup. In 9 x 13-inch glass baking dish, spread small amount of sauce. Put 3 strips of lasagna noodles on top. Spread 1/3 of the cheese on the lasagna and pour 1/2 of the vegetables on top. Pour more sauce on top of the vegetables. Repeat lasagna, Ricotta, vegetables and sauce. End with lasagna. Pour rest of sauce and cheese on top. Marble with rubber spatula.
  • Bake for 1 1/2 hours or until top browns. Can be made ahead, covered with foil and left in warm oven for several hours before serving.

2 garlic cloves, minced
1 tablespoon olive oil
1 (46 ounce) jar Ragu tomato sauce or 1 (46 ounce) jar other pasta sauce
1 lb lean ground turkey
16 ounces part-skim ricotta cheese
12 ounces fat free mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
2 Egg Beaters egg substitute
1 (1 lb) package lasagna noodle, cooked

Steps:

  • In a large saucepan, cook ground turkey, onion& garlic in a combination of the oil and nonstick cooking spray. Add sauce and simmer 15 minutes.
  • In a medium sized bowl, mix ricotta,1 cup mozzarella, all of Parmesan and the eggstirs.
  • In 9x13 baking dish, layer 2 cups sauce, half of noodles, half of remaining sauce, all of ricotta mixture, half of what is left of the mozzarella, remaining noodles & sauce.
  • Cover with foil sprayed with cooking spray and bake at 350 F for 45 minutes or until hot.
  • Uncover, top with remaining mozzarella.
  • Bake 15 minutes.
  • Sprinkle some Parmesan on top, let cool down for 15 minutes, and Enjoy your healthy, yet delectable, meal -- with plenty of leftovers to boot!
