1-1/2 cups chopped onions
4 medium carrots, sliced
3 celery ribs, sliced
2 tablespoons canola oil
3 cups vegetable broth
4 medium potatoes, peeled and sliced
4 medium tomatoes, chopped
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup all-purpose flour
1/2 cup water
1 cup chopped cabbage
1 cup frozen peas
CARROT DUMPLINGS:
2-1/4 cups reduced-fat biscuit/baking mix
1 cup shredded carrots
1 tablespoon minced fresh parsley
1 cup cold water
10 tablespoons shredded reduced-fat cheddar cheese

Steps:

  • In a Dutch oven, cook the onions, carrots and celery in oil for 6-8 minutes or until crisp-tender. Stir in the broth, potatoes, tomatoes, garlic, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until vegetables are tender. , In a small bowl, combine flour and water until smooth; stir into vegetable mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cabbage and peas., For dumplings, in a small bowl, combine baking mix, carrots and parsley. Stir in water until moistened. Drop in 10 mounds onto simmering soup. Cover and simmer for 15 minutes or until a toothpick inserted in a dumpling comes out clean (do not lift cover while simmering). Garnish with cheese.

1 cup flour
1 teaspoon baking powder
½ teaspoon salt
4 tablespoons olive oil, divided
½ cup warm water
1 onion, diced
2 carrots, diced
2 cloves garlic, minced
1 teaspoon dried dill
½ teaspoon dried sage
½ teaspoon dried thyme
½ teaspoon pepper
2 cups potato, diced
6 cups vegetable broth
2 leaves bay leaf
fresh parsley, chopped, to serve

Steps:

  • In a small mixing bowl, combine flour, baking powder, and salt with a spatula. Form a well in the middle of the dry mixture and add 2 tablespoons olive oil and warm water. Mix until dough forms in to a sticky ball. Cover with a dish towel and set aside.
  • In large pot or Dutch oven, add the olive oil over medium heat. Once the oil begins to shimmer, add the onion and carrot and cook for about 4-5 minutes, or until the onions are semi-translucent.
  • Add in the garlic, dill, sage, thyme, and pepper, and cook for 2-3 more minutes until herbs are fragrant.
  • Stir in potatoes, vegetable broth, and bay leaves, and bring to a boil. 5. Reduce heat to medium-high and simmer about 8 minutes or until potatoes are about 75 percent cooked through.
  • Carefully drop in dollops of the dumpling dough, about 1 inch (2-cm) in diameter.
  • Let dumplings simmer for about 10 minutes, or until chewy and cooked through.
  • To serve, garnish with lots of fresh parsley.

3 quarts water
2 small onions, divided
1 bay leaf
4 medium potatoes, peeled and cubed

2 cups cut green beans
3/4 cup medium pearl barley
Minced fresh parsley

  • In a stockpot, place the beef bones, water, one onion and bay leaf. Bring to a boil. Skim off foam. Reduce heat to simmer. 1/4 cup extra-virgin olive oil
1 bulb fennel, tops trimmed and 1/4 cup fronds reserve
4 ribs celery with leafy tops from the heart, diced
2 parsnips, peeled and chopped
2 carrots, peeled and diced not more than 1/2-inch
2 all-purpose potatoes, peeled and diced
1 large onion, diced
4 cloves garlic, chopped, optional
Salt and freshly ground black pepper
2 large fresh bay leaves
About 2 tablespoons fresh thyme leaves, chopped
1 cup dry white wine
4 cups vegetable or chicken stock-in-a-box
3 tablespoons butter
2 tablespoons flour
1/4 cup finely chopped fresh dill
1 cup frozen green peas
Biscuit mix prepared to package directions for 8 drop biscuits (recommended: JIFFY brand)
A handful fresh flat-leaf parsley, finely chopped

Steps:

  • Heat a large Dutch oven over medium high heat with olive oil, 4 turns of the pan. Quarter and core the fennel, then chop into a small dice and add to the pot. Chop the vegetables and keep adding to the pot as you work to keep your cutting board clear - add the diced celery, chopped parsnips, carrots, potatoes, onions, garlic, and season liberally with salt and pepper, add in bay leaves and thyme. Sweat the vegetables 8 to 10 minutes covered, stirring fairly frequently, then add wine and deglaze the pot Stir in the stock plus 2 cups water and bring to a boil. Heat the butter in a small skillet over medium heat to melt, then whisk in the flour 1 minute. Scrape the roux into the soup. Simmer the soup a few minutes to combine the flavors then cool and cover for a make-ahead meal.
  • Bring the soup to a boil over medium to medium-high heat, stirring occasionally. Stir together the biscuit mix with water and parsley according to package directions. When the soup comes to a boil add in the peas, dill and reserved fennel fronds. Using 2 spoons drop the biscuit mix into a pot shaping small egg-shaped dumplings as you go. Cover and simmer over medium-low heat for 10 minutes. Turn off the heat and serve the hearty, thick soup in shallow bowls.

1 egg white

  • In large bowl combine carrots, scallions, cabbage, garlic and ginger. Add bean sprouts. Stir and add egg white to bind. Spoon vegetable mixture in center of wonton wrapper. 800 milliliters Vegetable broth
300 grams Broad bean

100 milliliters Whipped cream

2 Tbsps lemon juice
4 egg whites
2 Tbsps freshly chopped Dill
100 grams Smoked salmon (Sliced)

Steps:

  • Peel and chop onion, garlic, potatoes and celery root. Sauté together in a pan with 1 tablespoon olive oil. Deglaze with broth and let simmer for about 20 minutes. Blanch beans in salted water for about 2 minutes. Drain and rinse. Purée about half the soup and pass through a fine sieve. Return soup to the pot and heat but do not boil. Mix together egg yolks and whipping cream and slowly stir into soup. Season with salt, horseradish and lemon juice.
  • Beat egg whites with 1 tablespoon lemon juice until stiff. Form 8 to 12 small dumplings with tablespoons and slide them into a pot of boiling salted water. Poach each side for 2 to 3 minutes, turning once carefully.
  • Sauté beans in remaining oil briefly and add dill. Cut salmon into strips.
  • Ladle soup into bowls or deep plates. Remove dumplings from water with a skimmer. Drain well and add to soup. Garnish with salmon and beans. Serve sprinkled with pink pepper.

10 cups homemade or low-sodium chicken stock, skimmed of fat
2 2-inch knobs of fresh ginger, peeled
4 tablespoons brown rice wine
8 dried shiitake or black Chinese mushrooms
8 dried tree-ear mushrooms
2 ounces ground pork
3 eggs, beaten with 1 teaspoon water
1/2 teaspoon cornstarch
1/4 teaspoon salt
3 tablespoons vegetable oil
1/4 teaspoon sugar
1 tablespoon finely chopped scallion
1 teaspoon fish sauce
2 2-ounce packages bean-thread noodles
1 pound bok choy, sliced crosswise 1/4 inch thick
1/2 cup thinly sliced bamboo shoots, preferably fresh
3 ounces Chinese ham, cut into 16 1/4-inch-thick slices

Steps:

  • In a large saucepan, combine stock, 1 knob of ginger cut into 3 slices, and rice wine. Bring to a boil, reduce heat to low, and simmer for 30 minutes. Remove from heat, strain and discard solids; set aside.
  • Place all the mushrooms in a bowl; cover with 2 cups very hot water. Soak until soft, about 20 minutes. Drain, discard the liquid, and remove and discard the stems; set aside.
  • Grate the other knob of ginger to obtain 1 teaspoon and combine it with the pork, 1 tablespoon of the egg mixture, cornstarch, salt, 1/4 teaspoon vegetable oil, sugar, scallion, and fish sauce and set aside.
  • Heat 1/2 teaspoon oil in a large soup ladle over a medium flame. Place about 1 tablespoon of the beaten egg in the ladle and swirl it, making a 3-inch circle, until the edges are set and the center is still wet. Use chopsticks to place about 1/4 teaspoon of pork filling in the center. Fold one side over, making a half circle. Use the blunt end of the chopsticks to gently press the edges together. Repeat until all the eggs and filling are used up. You should have 16 dumplings.
  • Pour broth into a large saucepan and add the mushrooms and all of the remaining ingredients. Place dumplings on the top. Bring broth to a boil, reduce heat to low, and simmer for 10 minutes. Serve immediately.
