MIXED VEGETABLE TOTS RECIPE BY TASTY

Steps:
- Preheat oven to 400°F (200°C).
- On a cutting board, grate the zucchini, sweet potato, carrot, and broccoli with a coarse cheese grater.
- Transfer the grated vegetables to a medium bowl and season with ½ teaspoon of salt. Mix until well incorporated.
- Let the vegetables sit for 20 minutes until the salt has drawn out some of the moisture.
- Transfer the grated veggies into a kitchen towel and twist to strain as much liquid as you can.
- Place the grated veggies back into a bowl and mix with the Parmesan, panko, pepper, remaining salt, onion powder, garlic powder, olive oil, and egg. Mix until well combined.
- Form the mixture into 20-25 even-sized tots and transfer to a parchment paper-lined baking sheet.
- Bake for 20-30 minutes or until tots are golden brown, flipping each halfway through.
- Serve with your choice of dipping sauce.

Steps:
- Preheat oven to 400ºF.
- Grate zucchini add salt and let sit for 20 minutes to draw out the moisture. Use a dish towel to wring out water if necessary.
- Add everything to a bowl and mix well to combine.
- Take 1 Tbsp of the mixture and roll into a tot shape. Transferring to a baking sheet lined with foil or parchment. Repeat!
- Bake for 20 minutes, until crispy and golden brown.

- Preheat the oven to 200 degrees F (95 degrees C).
- Heat a 6- to 7-inch waffle iron to medium-high heat. Spray liberally with cooking spray. When ready, open and arrange the Veggie Tots, touching each other, to fill the iron. Close and press firmly. Cook 5 minutes.
- Remove and place on a wire rack over a sheet tray. Hold warm in the oven. Repeat to make a second waffle.
- Crack eggs into a nonstick skillet over medium heat. Cook until outer edges become opaque, about 1 minute. Cover, reduce heat to low, and cook until whites are completely set, about 4 minutes.
- Cut each waffle in half. Serve each half topped with 2 slices of bacon and 1 fried egg. Garnish with scallions and hot sauce, if desired.

- Thoroughly clean the sweet potato and zucchini. Grate the sweet potato and zucchini with their skins on a fine grater. Place in a colander over a bowl and season with salt. Allow to stand for 10 minutes.
- Use your hands to squeeze the remaining liquid from the grated vegetables — you should collect almost a full cup of liquid. Don’t skip this step, otherwise your Veggie Tots might not hold together while baking.
- Add ¼ cup coconut flour and ½ teaspoon each garlic and onion powder to the strained grated vegetables and mix well. Use your hands to scoop out 1 rounded tablespoon of the vegetable mixture and shape into “tots,” about 1 and a half inches long. If the Veggie Tots are not holding together, add 1-2 more tablespoons of coconut flour.
