VODKA-THYME LEMONADE

- In a small saucepan, combine 2 cups water with the sugar and thyme; bring to a boil over high heat, stirring occasionally, until sugar has dissolved. Remove from heat; let cool to room temperature.
- Pour mixture through a fine sieve into a large glass measuring cup; discard thyme. You should have 2 cups syrup. Cover with plastic; chill.

VODKA THYME LEMONADE

- Steep the thyme (optional): Microwave 1/4 cup of water for 1 minute. Add 2 sprigs of thyme and let steep until room temperature, about 30 minutes. Remove and discard sprigs of thyme. Add 1/4 cup superfine sugar to water and stir to dissolve. Stir together sweetened thyme syrup with 1 cup vodka, and 1/2 cup fresh squeezed lemon juice. Spread brown sugar onto a small plate. Rub cut side of a lemon on the edge of your glass. Gently roll the glass on the brown sugar to stick the sugar to the rim. Add ice to the glass and pour the cocktail over the ice. Garnish with a fresh thyme sprig.

VODKA LEMONADE

Steps:
- In a saucepan, combine the sugar and 1/3 cup water and place over medium heat. Bring the mixture to a boil, then cook the sugar until dissolved but the syrup is still clear. Do not cook the sugar until it starts to turn color. Remove from heat and cool.
- In a pitcher, combine the syrup, 8 cups water, the lemon juice, vodka and ice and stir to combine. Pour into tall glasses and enjoy!
TUSCAN VODKA LEMONADE WITH ROSEMARY AND THYME SIMPLE SYRUP
Steps:
- To make the rosemary and thyme simple syrup, add the granulated sugar, 2 sprigs or the rosemary, 2 sprigs of the thyme and the water to a small saucepan. Turn on the heat and bring to a gentle boil, then stir to dissolve the sugar. Turn off the heat and let it cool. Discard the rosemary and thyme. Store in an airtight container in the fridge for up to 1 month.
- Add the vodka, lemon juice and 2/3 cup of the rosemary and thyme simple syrup (or more if you like a sweeter cocktail!) into a cocktail shaker with ice.
- Mix together the superfine sugar and cayenne pepper then spread onto a plate. Run a lemon wedge around the rim of each glass and dip into the sugar and cayenne mixture. Fill each glass with ice, then divide the vodka lemonade between the 2 glasses. Garnish each glass with a sprig of rosemary and a sprig of thyme. Enjoy!

THYME LEMONADE
Steps:
- Bring 1 bunch thyme and 1 1/2 cups each sugar and water to a simmer in a saucepan over medium heat, stirring until the sugar dissolves. Let cool, then strain the syrup into an ice-filled pitcher. Stir in 2 cups each fresh lemon juice and cold water. Serve over ice with thyme sprigs and lemon slices.
THYME OUT
Steps:
- Wipe the grill grates with oil to prevent sticking. Build a high-heat fire. Your high-heat zone should have embers 1 to 2 inches from the cooking surface, with occasional flames licking it.
- Place the lemons, cut side down, over high heat until they are charred and soft, about 3 minutes. While the lemons char, using tongs, hold 8 of the thyme sprigs over high heat just until they start to color and give off wisps of smoke.
- Add the remaining 8 thyme sprigs to a cocktail shaker, squeeze in the lemon juice, and add a couple ice cubes. Shake very well and strain into a pitcher. Add the ice water, vodka, and agave, and stir until the agave is dissolved.
- Serve the drinks in ice-filled glasses garnished with a charred thyme sprig.
