WALNUT KIPFERL - GERMAN WALNUT COOKIES

These walnut kipferls are so fragrant and tender! They melt in your mouth with every bite and taste like heaven!

35 g icing sugar
120 g butter (softened)
5 g vanilla extract
140 g all-purpose flour
100 g walnuts (ground)
1 g salt
Icing sugar for dusting

Steps:

  • Combine all the ingredients in the bowl of your mixer and mix just until a dough forms.
  • Transfer the dough on your working surface and roll it into thin cylinders.
  • Lightly flour your working surface if needed.
  • Once the cylinders are formed, but small pieces (around 2cm length) and arrange them on a baking tray lined with baking paper.
  • Keep going until you run out of dough.
  • Freeze the cookies for 15 minutes then bake at 170C for 12-14 minutes or until golden brown.
  • Once cooled down, roll the walnut kipferls through icing sugar to completely coat them.
  • Keep in an airtight container.

VANILLE KIPFERL II

The vanille kipferl originated in Austria, and they are also very popular in Switzerland and Germany. The kipferl become even yummier after 2 to 3 days...but only for those who can resist long enough. If desired, the two ends of the kipferl can be dipped in warm chocolate and then left to cool.

2 ⅛ cups all-purpose flour
1 pinch salt
7 tablespoons unsalted butter
½ cup confectioners' sugar
1 egg
3 teaspoons vanilla sugar
1 ¼ cups ground almonds
6 tablespoons confectioners' sugar
1 ½ teaspoons vanilla sugar

Steps:

  • In a large mixing bowl, combine flour and salt. Cut in the butter until the size of small peas and mix in with your hands.
  • Mix 1/2 cup confectioners' sugar, the egg, 3 teaspoons of vanilla sugar, and ground almonds into the flour mixture. Place the dough in the refrigerator for 30 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Divide the dough into several parts. Roll each section of dough into logs approximately 1/2 inch thick. Cut the logs into 1-inch pieces, and bend the pieces into a crescent shape (just like a croissant). Place the kipferl on the baking sheet and chill them for 15 minutes.
  • Bake in the preheated oven until the edges are golden brown, 10 to 15 minutes. Let cool slightly.
  • Combine 6 tablespoons confectioners' sugar and 1 1/2 teaspoons vanilla sugar and toss to mix.
  • While still warm, carefully remove kipferl from the baking sheet and dip them in sugar to coat.

This is a traditional recipe for Yugoslavian cookies called Kifle. There are different fillings for these cookies but my favourite is the walnut! Time to make does not include chilling time........Posted for ZWT 4.

Number Of Ingredients 11

7 g sachet active dry yeast
2 cups sifted flour
1/2 cup margarine
2 egg yolks
1/2 cup sour cream
confectioners' sugar
melted margarine, for greasing
1 cup finely chopped walnuts
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 egg whites, stiffly beaten

Steps:

  • Put sifted flour into large mixing bowl. Mix in yeast. Cut in margarine with pastry blender until mixture is crumbly.
  • Add egg yolks and sour cream; mix well. Form into a ball. On lightly floured board, knead until smooth, 5 to 10 minutes. Divide dough into 3 equal parts. Wrap in wax paper. Chill in refrigerator at least 1 hour.
  • Combine walnuts, sugar and vanilla extract. Fold in stiffly beaten egg whites. Set aside.
  • On a board sprinkled with confectioners sugar, roll each part of dough into an 8-inch circle; cut each into 8 pie-shape wedges.
  • Fill wide end of each wedge with 1 tablespoon walnut filling. Roll up from wide end to point. Place on greased baking sheet, curving ends to form crescent shape.
  • Bake at 375 degrees F about 25 minutes or until golden brown. Dust with confectioners sugar.

1 ¼ cups all-purpose flour
½ cup white sugar
½ cup packed brown sugar
¼ teaspoon baking soda
1 egg
1 teaspoon vanilla extract
½ cup butter, softened
¾ cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a medium bowl, stir together the flour, white sugar, brown sugar, and baking soda. Add the egg, vanilla, and butter; mix until dough forms. Stir in the chopped walnuts. Roll dough into 1 inch balls and place 2 inches apart onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, until the edges are golden brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

  • Preheat the oven to 375°F. Line two 1/2 sheet pans with parchment paper or a silicone baking mat.
  • Cream the confectioner's sugar and butter until light and aerated. Add the yolk and vanilla and mix to combine. Add the flour, salt and ground nuts and mix just until incorporated.
  • On a lightly floured surface and with your hands floured, form the dough into a log shape about 2" wide. Cut the long into 4 sections. Roll one section to a 1/2" thick rope. Cut the rope into 2" segments. Repeat with the other three pieces of dough.
  • Roll both ends of each 2" piece of dough to form tapered points. Bend both ends to form the crescent shape. Place the cookies on the prepared pan, 1/2" apart. (see note) Bake until the tips turn golden brown, about 12-15 minutes. While the cookies are baking, whisk the vanilla sugar and confectioner's sugar in a small bowl or pie plate.

  • In the bowl of a stand mixer fitted with the paddle attachment combine flour, salt, cubed butter, powdered sugar, ground nuts, and vanilla seeds. Mix at medium speed until a crumbly dough forms, about 1-2 minutes. If the dough is too crumbly add 1-2 Tbsp water.
  • Use your hands to press the dough together and wrap it in plastic wrap. Chill the dough for one hour in the fridge.
  • Roll the chilled dough into a log approximately 1/2 inch thick. Cut the log into 1 1/2-inch pieces, form the pieces into small cylinders and taper the ends into dull points. Bend each one into a crescent shape. Place the Vanillekipferl on the baking sheet about 1 inch apart.
