NORDIC WALNUT BREAD



Nordic Walnut Bread image

Simpe and very delicious walnut bread. Serve it with a good slice of cheese and some homemade jam.

Number Of Ingredients 8

25 g fresh yeast ((1 oz))
4 dl water, lukewarm ((1 3/4 cups))
1 tbsp honey
2 tbsp malt flour ((25 g / 1 oz))
375 g all-purpose flour ((12 oz))
200 g whole grain wheat flour ((7 oz))
150 g walnuts, coarsely chopped ((5 1/3 oz))
7 g salt ((1/4 oz))

Steps:

  • In a large bowl; dissolve the fresh yeast in the lukewarm water. If you are using dry yeast, add this together with the flour.
  • Add the honey, the three types of flour and then stir/knead everything into a nice dough.
  • Add the chopped walnuts and the salt and knead everything into the dough. The kneading time is 5-10 minutes.
  • Leave the kneaded dough in the bowl, cover it with a dishtowel and set it aside some place warm. Let the dough rise for 60 minutes.
  • Divide the dough into six pieces and roll each pieces into long 'sausages'.
  • Take three sausages and connect them in one end. Braid them, and connect them at the other end. Continue the same way with the next three sausages.
  • Now you twist the two braided breads into one single bread. Fold the two ends under the bread.
  • Place the twisted bread on a parchment paper covered oven plate. Cover it with a clean dishtowel and let it rise for another 30 minutes some place warm.
  • Preheat the oven to 200 C (400 F).
  • Spray a little cold water into the oven to create some water vapor. Now bake the bread for about 35 minutes. The bread is done when it sounds hollow when knocking at the bottom of it.

2 tablespoons butter, softened
1/4 cup dark brown sugar, packed
1 1/4 teaspoons cardamom

3/4 cup crushed walnuts

Steps:

  • add ingredients (EXCEPT NUTS) to your bread machine in this order.
  • set loaf size, crust and bake on whole wheat or fruit/nut cycle.
  • after 5 minutes check to see that dough is in a smooth ball.
  • if too dry add water 1 tsp at a time, if too wet add flour 1 tsp at a time.
  • add nuts when machine beeps, or at the end of the cycle.
  • cool on a rack before slicing.

4 cups all-purpose flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pas.
  • In a large bowl, stir together the sugar, eggs, vegetable oil and vanilla until smooth using a wooden spoon. Combine the flour, baking soda, salt and cinnamon; stir into the sugar mixture alternately with the buttermilk just until mixed. Stir in the walnuts. Divide the batter evenly between the two pans.
  • Bake for 55 minutes in the preheated oven, until a toothpick inserted into the crown comes out clean. Allow the bread to cool for about 10 minutes before removing from the pans, and wrap in aluminum foil.

3/4 cup water (70° to 80°)
1/4 cup molasses
1 tablespoon butter
2 tablespoons baking cocoa

1-1/4 cups bread flour
1 cup rye flour

1 teaspoon cornmeal
1/2 cup golden raisins
1/2 cup chopped walnuts, toasted

Steps:

  • In bread machine pan, place the first nine ingredients in order suggested by manufacturer. Select dough setting. Check dough after 5 minutes of mixing; add 1-2 tablespoons water or flour if needed., Grease a baking sheet; sprinkle with cornmeal. When cycle is completed, turn dough onto a lightly floured surface. Knead in raisins and walnuts. Shape into a round loaf; transfer to prepared pan. The affinity of walnuts and whole wheat plays out well in this fairly simple loaf. I ramped up the walnut component by mixing in toasted pieces, including ground nuts along with the flour and even adding some walnut oil to the dough. Making this bread is straightforward enough for the home cook to master, and using a mere pinch of yeast will give the dough a nice rise. This dough would also welcome raisins, olives or pieces of figs along with the walnuts. I have found that the best way to introduce ingredients like these is to knead them in after the first rise.

Number Of Ingredients 8

2 1/3 cups/225 grams chopped walnuts
2 teaspoons/7 grams active dry yeast (1 packet)
1 tablespoon/15 grams sea salt
3 tablespoons/45 milliliters maple syrup
4 tablespoons/60 milliliters walnut oil
2 cups/250 grams whole-wheat flour
3 cups/375 grams bread flour
Coarse cornmeal, for dusting baking sheet

Steps:

  • Toast walnuts in an oven or under the broiler. Set aside to cool.
  • Place yeast in a large mixing bowl. Mix salt into 2 cups (473 milliliters) lukewarm water. Stir into yeast. Stir in maple syrup and 2 tablespoons oil.
  • Measure 1 cup of the toasted walnuts, place in a food processor with 2 tablespoons of the whole-wheat flour and process until finely ground. Add to bowl along with remaining whole-wheat flour. Stir with a wooden spoon.
  • Add bread flour 1/2 cup at a time until dough forms and leaves the sides of the bowl. (At this point you're better off mixing with your hands.) Turn dough out onto a floured work surface. Continue adding bread flour, kneading as you go, until you have a dough that's a bit on the soft side, only slightly sticky and easy to handle.
  • Clean out your bowl, coat it with 1 tablespoon oil, and place dough back into the bowl, turning it so it's oiled all over. Cover with a cloth and set aside to rise until doubled, about 1 1/2 hours.
  • Punch the dough down, add remaining toasted walnuts and lightly knead them into the dough. Dust a spacious baking sheet with cornmeal. Divide the dough in half, shape into 2 balls and place on the baking sheet. Cover loosely and let rise for an hour.
  • Place the oven rack in the lowest position and heat oven to 450 degrees. Slash the tops of the breads with a razor or a lame (a baker's blade). Do not be tentative about this step; your slashes should be a good half-inch deep, done with a firm, even hand.
  • Place the baking sheet in the oven. Throw a handful of ice cubes on the floor of the oven to create steam. Bake 20 minutes. By this time the breads should be a nice honey-brown. Brush them with remaining 1 tablespoon oil, reduce heat to 350 degrees, add more ice cubes and bake about 25 minutes longer, until the breads are well browned and sound hollow when tapped. Allow to cool at least 1 hour before cutting.

10 ounces whole wheat flour, plus extra as needed (2 cups)
10 ounces unbleached all-purpose flour (2 cups) or 10 ounces white bread flour (2 cups)
1 teaspoon granulated sugar
2 teaspoons table salt
3/4 teaspoon fast rising yeast or 3/4 teaspoon bread machine yeast
2 cups ice water, plus more if needed
walnut oil or vegetable oil, for coating dough top and baking pot
1 1/2 cups fresh walnut halves (6 oz)
4 perfect walnut halves

Steps:

  • In a large bowl, thoroughly stir together the whole wheat and white flour, sugar, salt, and yeast. Vigorously stir in the water, scraping down the bowl and mixing until the dough is well blended and smooth. If the mixture is too dry to incorporate all the flour, stir in just enough water (a bit at a time) to blend the ingredients; don't over-moisten, as the dough should be very stiff. Brush or spray the top with oil. Tightly cover the bowl with plastic wrap. If desired, for best flavor or for convenience, you can refrigerate the dough for 3 to 10 hours. Then let rise at cool room temperature for 12 to 18 hours.
  • Spread the larger amount of walnut halves on a baking sheet and lightly toast, stirring several times, in a preheated 325°F oven for 10 to 15 minutes, or until fragrant and just lightly browned. Let cool. Chop finely (in a food processor, if desired).
  • Vigorously stir the cooled walnuts into the dough. If it is not stiff, stir in enough additional whole wheat flour to make it hard to stir. Using an oiled rubber spatula, lift and fold the dough in towards the center, working all the way around the bowl. Brush a 3- to 4-quart Dutch oven with oil, then dust with flour, tipping pot to cover completely; knock out any excess flour. Invert dough into prepared pot. Brush or spray the top with oil, then smooth out the surface with an oiled rubber spatula or fingertips. Cut 1/2-inch-deep slashes to form an x in the center of the top; well-oiled kitchen shears work best. Put the 4 perfect, untoasted walnut halves in the angles of the "x" for garnish: press down very firmly to embed them. Cover the pot with its lid.
  • For a 1 1/2- to 2 1/2-hour regular rise, let stand at warm room temperature; for a 1- to 2-hour accelerated rise, let stand in a turned-off microwave along with 1 cup of boiling-hot water; or for an extended rise, refrigerate for 4 to 24 hours, then set out at room temperature. Continue until the dough doubles from its deflated size.
  • 15 minutes before baking time, place a rack in the lower third of the oven; preheat to 400°F Lightly dust the dough top with whole wheat flour.
  • Bake on the lower rack, covered, for 45 minutes. Remove the lid and continue baking for 20 to 30 minutes, or until the top is well browned and a skewer inserted in the thickest part comes out with just a few particles clinging to the bottom (or until the center registers 207 to 210°F on an instant-read thermometer). Then bake for 5 minutes more to ensure the center is done. Cool in the pan on a wire rack for 10 minutes. Remove the loaf to the rack, running a knife around the edges to loosen it, if necessary.
  • The loaf tastes and slices best at room temperature. Cool completely before storing airtight in plastic or foil. The bread will keep at room temperature for up to 3 days, and may be frozen, airtight, for up to 2 months.

1 tablespoon sugar
1 tablespoon active dry yeast
Olive oil, for brushing
3 cups all-purpose flour, plus more for dusting
1 cup rye flour
2 cups chopped dried Calimyrna figs (about 10 ounces)
2 tablespoons fennel seeds
2 tablespoons coarse salt
1 cup toasted and chopped walnuts (about 4 ounces)

Steps:

  • Stir warm water, sugar, and yeast in a small bowl until yeast is dissolved. Let mixture stand until foamy, about 5 minutes. Brush a large bowl with oil and set aside.
  • Place flours, 1 cup dried figs, fennel seeds, and salt in another bowl. Add yeast mixture; bring mixture together with your hands. Turn out dough onto a lightly floured work surface; knead until smooth and elastic, about 5 minutes.
  • Transfer dough to oiled bowl, and cover loosely with a piece of lightly oiled plastic wrap. Let dough rise in a warm place until almost doubled in bulk, about 1 hour.
  • Preheat oven to 375 degrees. Turn out dough onto a lightly floured work surface, and knead in walnuts and remaining 1 cup dried figs (be aggressive with the dough to work in nuts and figs). Shape dough into a ball; pull seams in toward bottom to stretch and smooth top.
  • Brush a baking sheet with oil; place dough in the middle. Loosely cover with a piece of lightly oiled plastic wrap. Let dough rise in a warm place until almost doubled in bulk, about 40 minutes.
  • Bake until bread is light golden brown, about 30 minutes. Loosely tent with foil, and continue to bake until an instant-read thermometer inserted in the bottom of loaf registers 180 degrees and comes out clean, about 30 minutes more. Immediately transfer loaf to a wire rack; let cool completely before slicing.

Steps:

  • Melt butter in heavy large skillet over medium heat. Add onion and sauté until tender, about 5 minutes. Let cool.
  • Combine milk and sugar in large bowl. Sprinkle yeast over; stir to blend. Let stand until foamy, about 10 minutes. Transfer to processor. Mix in onion mixture, salt and 1 cup flour. Blend in enough remaining flour, 1 cup at a time, to form smooth ball. Transfer dough to floured work surface and knead until smooth and elastic, about 3 minutes. Shape dough into ball.
  • Butter large bowl. Place dough in bowl; turn to coat. Cover bowl with clean kitchen towel. Let dough rise in warm draft-free area until doubled in volume, about 45 minutes.
  • Butter heavy large baking sheet. Punch down dough. Turn out onto floured work surface. Sprinkle walnuts over; knead to incorporate. Divide dough in half. Shape each half into 6-inch round loaf. Place dough rounds on prepared baking sheet, spacing 4 inches apart. Flatten slightly. Cover with dry towel. Let rise in warm draft-free area until almost doubled in volume, about 45 minutes. Preheat oven to 400°F. Bake until loaves are golden brown and sound hollow when tapped on bottom, about 25 minutes. Transfer to racks; cool. Serve at room temperature.

2 cups whole-wheat flour
4 cups all-purpose flour
3 packages rapid-rise yeast
1 1/2 cups coarsely broken walnut meats
1 teaspoon sugar
2 teaspoons salt if desired
2 1/2 cups hot water (120 to 130 degrees)

Steps:

  • Put whole-wheat flour and all-purpose flour into container of a food processor. Add yeast, 1 cup walnut meats, sugar and salt.
  • Start blending while gradually adding water. Blend until dough comes loose from sides of container.
  • Turn out dough onto lightly floured board. Add remaining 1/2 cup walnut meats and knead. Shape the dough into nonsticky ball.
  • Lightly flour insides of mixing bowl and add dough. Cover with clean cloth and place in warm (not hot) draft-free place to rise. Let stand until double in bulk, about 30 to 40 minutes. (It is not essential to let dough rise a second time, but it is preferable.) Turn dough onto lightly floured surface and punch down. Knead briefly and return to lightly floured bowl. Let stand until double in bulk, about 30 minutes.
  • Meanwhile, preheat oven to 400 degrees.
  • Turn out dough onto a lightly floured board and knead briefly. Divide dough in half and shape into two long loaves, each about 15 inches long. Place loaves side by side on baking sheet and cover with clean cloth. Let stand about 15 minutes or until it has risen slightly (but not doubled in bulk) about 15 minutes.
  • Remove cloth and, using razor blade, cut three uniform, diagonal, parallel gashes over top of each loaf. Place in oven on bottom rack and, if a crisper crust is desired, place two ice cubes on bottom of oven. This will create steam. Bake 45 minutes until browned and crisp all over.
