Steps:

  • Prep ingredients: Thinly slice cabbage and onion.Mince garlic.
  • Layer napa cabbage, onions, and blue cheese in serving bowl and chill until serving.
  • Whisk together garlic, olive oil, apple cider vinegar, dijon mustard, honey, celery seed, sea salt, and pepper until emulsified.

Zest and juice of 1 lime
2 tablespoons rice-wine vinegar
2 teaspoons soy sauce
1/4 cup chile oil

1/2 red, yellow, or orange bell pepper, stem and seeds removed, very thinly sliced
3 scallions, white and pale-green parts only, cut into 2-inch lengths, julienned
2 ounces daikon, peeled, very thinly sliced into 1/2-by-2-inch pieces
1/4 cup (about 3 ounces) snow peas, trimmed and very thinly sliced
1/4 chives, snipped into 2-inch lengths

Steps:

  • In a small bowl, whisk together garlic, zest and juice of lime, vinegar, soy sauce, and chili oil. Season with salt; set aside.
  • In a medium bowl, toss together cabbage, pepper slices, scallions, daikon, snow peas, and chives. Pour dressing over the slaw, toss to combine, and serve.

Extra-virgin olive oil
6 slices thick cut bacon, cut into lardons
2 red onions, julienned
Kosher salt
3 carrots, peeled and grated
1 medium head savoy cabbage, thick ribs removed, shredded
1 1/2 cups apple cider vinegar
3 tablespoons mustard seeds
1 bundle fresh thyme, tied with string
4 bay leaves
1/4 cup to 1/2 cup apple cider
1 small bunch fresh chives, cut into 2-inch pieces

Steps:

  • Coat a large, wide pot with olive oil and add the bacon. Render the bacon over medium heat. Add the red onions, season with salt, and sweat for 4 to 5 minutes. Add the carrots and stir to combine. Add the cabbage, cider vinegar, mustard seeds, thyme, and bay leaves. Season with salt and taste. This will taste very vinegary but the salt will help offset the sharpness of the vinegar.
  • Reduce to a simmer, cover, and cook until the cabbage is very soft, 15 to 20 minutes. Remove the lid, add the apple cider, and simmer until most of the vinegar has absorbed but the cabbage is still moist but not soupy, an additional 10 minutes. Serve right away or let it hang out in the refrigerator. It will probably be better in a couple of days. Garnish with chives.

I have never liked Cole Slaw, but after tasting this, I've become a convert. No mayo in this recipe, and the nuts and seeds add a nice crunch you don't usually get. Got the recipe from someone I work with who brought it to a pot luck.

1 head napa cabbage
1 bunch minced green onion
1/3 cup butter
1 (3 ounce) package ramen noodles (uncooked, seasoning packet discarded)
2 tablespoons sesame seeds
1 cup slivered almonds
1/4 cup cider vinegar
3/4 cup vegetable oil
1/2 cup white sugar
2 tablespoons soy sauce

Steps:

  • Finely shred the head of cabbage (do not chop).
  • Combine the green onions and cabbage in a large bowl; cover and refrigerate until ready to serve.
  • Preheat oven to 350°F.
  • Break up the ramen noodles.
  • Melt the butter in a pan over medium heat; add the ramen noodles, almonds and sesame seeds and mix together until coated with the butter.
  • Spoon the crunchies mixture onto a baking sheet and bake at 350°F, turning often to avoid burning. Remove from oven when browned.
  • Make dressing: In a small saucepan, heat vinegar, oil, sugar and soy sauce.
  • Bring the mixture to a boil and let boil for 1 minute, stirring constantly. Remove pan from heat and let cool.
  • Immediately before serving, combine the dressing, crunchies and cabbage mixture and serve immediately.
  • Do not mix together ahead of time or the crunchies will get soggy.

3 tablespoons canola oil
1 firm head Napa cabbage (about 1 pound)

Steps:

  • Put the garlic in a large salad bowl and mix in all the remaining ingredients except the cabbage.
  • Trim the cabbage, removing and discarding damaged or wilted leaves, and cut the head crosswise into 1-inch slices. You should have about 8 cups. To shred cabbage by hand, hold the cabbage on the cutting board at an angle and give it a shave by making a thin slice down the flat (cut) side of the cabbage.
