OLD-FASHIONED APPLE DUMPLINGS



Old-Fashioned Apple Dumplings image

These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

1 recipe pastry for double-crust pie
6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
  • With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
  • In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
  • Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

You can't go wrong with a classic Betty Crocker recipe, and this one is no exception. This timeless dessert is the epitome of fall-homemade flaky pastry is wrapped around a hot and bubbly apple and a warm brown sugar glaze is poured on top for an extra sweet finish. While these dumplings are sublime on their own, we wouldn't be opposed to eating these crispy apple treats with a scoop of vanilla ice cream!

2 cups all-purpose flour or whole wheat flour
1 teaspoon salt
2/3 cup plus 2 tablespoons cold butter or margarine
4 to 5 tablespoons cold water
6 baking apples, about 3 inches in diameter (such as Braeburn, Granny Smith or Rome)
3 tablespoons raisins
3 tablespoons chopped nuts
2 1/2 cups packed brown sugar
1 1/3 cups water

Steps:

  • Heat the oven to 425°F. In a large bowl, mix the flour and salt. Cut in the butter, using a pastry blender or fork, until particles are the size of small peas. Sprinkle with the cold water, 1 tablespoon at a time, mixing well with fork until all flour is moistened. Gather the dough together, and press it into a 6x4-inch rectangle.
  • Lightly sprinkle flour over a cutting board or countertop. Cut off 1/3 of the dough with a knife; set aside. On the floured surface, place 2/3 of the dough. Flatten dough evenly, using hands or a rolling pin, into a 14-inch square; cut into 4 squares. Flatten the remaining 1/3 of the dough into a 14x7-inch rectangle; cut into 2 squares. You will have 6 squares of dough.
  • Remove the stem end from each apple. Place the apple on a cutting board. Using a paring knife, cut around the core by pushing the knife straight down to the bottom of the apple and pull up. Move the knife and make the next cut. Repeat until you have cut around the apple core. Push the core from the apple. (Or remove the cores with an apple corer.) Peel the apples with a paring knife.
  • Place 1 apple on the center of each square of dough. In a small bowl, mix the raisins and nuts. Fill the center of each apple with raisin mixture. Moisten the corners of each square with small amount of water; bring 2 opposite corners of dough up over apple and press corners together. Fold in sides of remaining corners; bring corners up over apple and press together. Place dumplings in a 13x9-inch (3-quart) glass baking dish.
  • In a 2-quart saucepan, heat the brown sugar and 1 1/3 cups water to boiling over high heat, stirring frequently. Carefully pour the sugar syrup around the dumplings.
  • Bake about 40 minutes, spooning syrup over apples 2 or 3 times, until crust is browned and apples are tender when pierced with a fork.
  • Serve warm or cooled with syrup from pan.

2 Granny Smith apples
Two 8-ounce cans refrigerated crescent roll dough
1 1/2 cups sugar
1 teaspoon vanilla extract
8 ounces citrus-flavored soda, such as Mountain Dew (two-thirds of a 12-ounce can)
Cinnamon, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch pan.
  • Peel and core the apples, then cut each into 8 slices. Roll each apple slice in a crescent roll piece, then transfer to the prepared pan.
  • Melt the butter in a saucepan, then add the sugar and barely stir. Add the vanilla and stir slightly, then pour the entire mixture over the apples. Pour the citrus soda around the edges of the pan. Sprinkle with cinnamon and bake until golden brown and crispy on top, about 40 minutes.
  • Serve, spooning some of the sweet sauces from the pan over the top.

1 lemon
1 cup sugar
1/2 cup (1 stick) butter
1/4 teaspoon vanilla extract
8 canned buttermilk biscuits
4 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 375 degrees F. Peel, core and slice the apples vertically into 8 slices each. Squeeze the lemon into a bowl of water and add the apple slices to keep from turning brown. In a medium saucepan, mix 1 cup water, 3/4 cup of the sugar, the butter and vanilla. Bring the sugar mixture to a boil over medium heat. Separate each biscuit into 2 layers. Wrap a biscuit layer around a slice of apple, stretching the biscuit slightly to overlap, and seal on the bottom. Place the wrapped slices, sealed-side down, in a 9- by 12- by 2-inch casserole dish. Pour the hot sugar mixture over the apple slices. Mix the remaining 1/4 cup sugar with the cinnamon and sprinkle the mixture over the tops of the wrapped apples. Bake until golden brown, 35 minutes.

This is one of America's oldest desserts. The flavor profile is almost identical to an apple pie, but instead of having a bunch of slices about, we have one beautifully roasted, tender, sweet apple inside--which while still covered in the same crust we use for a pie, is far superior because we basted and baked it with a sugar sauce. I highly recommend these get served with a scoop of vanilla ice cream.

1 ½ cups packed light brown sugar
3 tablespoons butter
1 cup cold water
3 tablespoons white sugar
1 teaspoon ground cinnamon
4 small Honeycrisp apples
1 recipe prepared pie crust dough
4 teaspoons butter

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a baking dish.
  • Combine brown sugar, 3 tablespoons butter, and water in a small pot over medium-high heat. Bring to a boil, stirring occasionally, and boil until all sugar is dissolved. Turn off heat and swirl pot gently to combine. Reserve sauce until needed.
  • Stir sugar and cinnamon together in a small bowl. Core the unpeeled apples.
  • Divide pie dough into 4 portions. Roll out on a lightly floured surface into 4 circles about 1/8-inch thick and 7 inches in diameter, or large enough to fully wrap an apple.

  • Wrap each apple up in pie dough, sealing the dough together at the top. Be careful not to pull and stretch it too tightly around the apple as you wrap, or it might break apart when it bakes; brush lightly with water if dough won't stick together. Even out the top and trim off any excess; shape into decorative leaves if desired.
  • Place wrapped apples seam-side up into the buttered baking dish. Ladle some sauce over each to cover completely.
  • Bake in the preheated oven, basting with sauce occasionally, until pastry is browned and cooked through and apples are tender, 50 to 60 minutes. Remove from the oven and baste with more sauce. Serve warm.

1 egg

Steps:

  • Mix together the flour, salt, and baking powder.
  • Cut in butter until mixture resembles coarse crumbs.

Steps:

  • Preheat oven to 375ºF.
  • In a medium pan, melt the butter. Add the brown sugar, cinnamon, ginger, and salt, and stir until the sugar has melted completely and formed a sauce. Add the apples and toss until the apples are fully coated in the sauce. Remove pan from heat.
  • On a floured surface, roll out the puff pastry until it has doubled in size. Cut 4-inch squares.
  • Whisk egg with 1 tablespoon of water to form an egg wash.

3 3/4 cups unbleached all-purpose flour, plus more for work surface
1 1/2 teaspoons kosher salt
5 teaspoons granulated sugar
3 sticks cold unsalted butter, cut into cubes
3/4 cup ice water
6 firm, tart apples (such as Rome) with stems (8 ounces each)
1/4 cup light- or dark-brown sugar
1 teaspoon ground cinnamon
4 tablespoons unsalted butter, room temperature
6 tablespoons raisins
Zest of 1 lemon, cut into very thin strips
1 large egg yolk
1 tablespoon heavy cream

Steps:

  • Make the pate brisee: Pulse flour, salt, and sugar in a food processor until combined. Add butter and pulse until mixture resembles coarse crumbs with some pea-size pieces remaining. Drizzle with ice water and pulse until mixture holds together when pinched. If dough is too crumbly, add more ice water, 1 tablespoon at a time; do not over-process.

  • On a lightly floured surface, roll each square of dough into an 8-by-14-inch rectangle. Then cut each square into two 9-inch triangles and some leaves. Use the back of a knife to make the vein markings on the leaves. Keep the pastry chilled and covered with plastic wrap, on parchment-lined baking sheets, until ready to use.
  • For the apples: Preheat oven to 350 degrees. Peel apples without removing stems. Working from bottom of each apple, use an apple corer to remove core to within about 3/4 inch from the top. To remove any remaining seeds, use a 1/4 teaspoon. Mix together sugar and cinnamon. Add butter, raisins, zest; stir until thoroughly incorporated. Divide mixture evenly between the cavities of apples. Place in a 13-by-9-inch baking dish along with 3 tablespoons water and bake, basting occasionally with pan juices, until just fork-tender, about 1 hour. Transfer baking dish to wire rack and let cool completely.
  • Place an apple onto the center of each pastry triangle. Whisk together egg yolk and cream. Brush edges of pastry with egg wash. Bring edges of pastry together and pinch or press to seal, leaving stems exposed. Garnish dumplings, as desired, with leaves moistened with egg wash to adhere. Return dumplings to parchment-lined baking sheet. Mix together egg yolk and cream. Lightly brush dumplings with egg wash and chill until firm, reserving egg wash.
  • Preheat oven to 400 degrees. Brush dumplings again with egg wash, and bake until nicely browned, 25 to 35 minutes. Let cool slightly before serving.

1 tablespoon heavy cream

2 tablespoons Armagnac, or brandy
2 tablespoons dried cherries, roughly chopped
2 tablespoons all-purpose flour

2 tablespoons light-brown sugar
1 tablespoon unsalted butter
1/8 teaspoon ground nutmeg
1/8 teaspoon ground mace
1/8 teaspoon ground cinnamon
4 McIntosh apples
1 lemon, cut into quarters lengthwise
4 cinnamon sticks
1/4 cup packed light-brown sugar
2 cups clear apple juice
2 tablespoons honey
1/2 cup Armagnac, or brandy
1/4 cup pure maple syrup
1 1/2 teaspoons freshly grated ginger
2 tablespoons unsalted butter
2 tablespoons freshly squeezed lemon juice

Steps:

  • Place flour, salt, and sugar in the bowl of a food processor; pulse 2 or 3 times to mix. Add butter; process until mixture resembles coarse meal, about 10 seconds. With machine running, add 4 to 6 tablespoons ice water in a steady stream through feed tube; process just until mixture begins to hold together, no more than 30 seconds. Flatten dough into a disc, and wrap in plastic. Chill dough at least 1 hour.
  • Combine all syrup ingredients in a medium saucepan. Cook over medium-high heat until liquid has reduced by half and has slightly thickened, about 20 minutes. Remove from heat; set syrup aside.
  • Combine Armagnac and cherries in a small bowl; let sit 20 minutes. Drain cherries, reserving Armagnac; add Armagnac to reserved syrup. In another small bowl, combine cherries, flour, ground almonds, brown sugar, butter, nutmeg, mace, and cinnamon; mix filling well with a wooden spoon.
  • Peel apples; remove stems and top 3/4 of core, leaving 1/4 inch intact at bottom. Rub each apple with a lemon quarter to prevent discoloration. Divide filling among four apples, filling cavities. Insert a cinnamon stick into each cavity. Wrap exposed end of cinnamon stick with a piece of heavy-duty aluminum foil. Set filled apples aside.
  • Heat oven to 450 degrees. Turn out dough onto a lightly floured work surface. Roll dough to an 1/8-inch thickness, and trim to a 14-inch square. Cut 4 squares, 7 inches each, from dough. Brush entire surface of one square lightly with beaten egg white; place a filled apple in the center. Bring 2 adjacent corners of dough together at the tops, and press together to create a triangular flap. Repeat, making four flaps. Lightly brush one side of each flap with egg white, and press firmly against the apple. Repeat with remaining dough and apples. Transfer to a plate, and chill 15 minutes.
  • Mix together the egg yolk and heavy cream. Brush dumplings lightly with the egg wash, and transfer dumplings to a roasting pan, spacing dumplings at least 1 inch apart.
  • Bake 15 minutes. Reduce oven temperature to 375 degrees. Remove roasting pan from oven, and pour the reserved syrup over dumplings. Return pan to the oven, and bake 10 minutes more, basting twice. Continue baking dumplings until deep-golden brown, about 10 minutes more. Transfer pan to a wire rack to cool slightly. Serve dumplings with the warm syrup.

2 tablespoons granulated sugar
1 1/4 teaspoons kosher salt
1 cup/227 grams (2 sticks) cold, unsalted butter, cut into pieces
6 to 8 tablespoons ice water
1 large egg, lightly beaten
Turbinado sugar, for sprinkling
1/3 cup/73 grams light or dark brown sugar
3/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
6 small baking apples (like McIntosh, about 5½ ounces each), peeled
3 tablespoons unsalted butter, cut into small pieces, plus more for greasing the baking dish
1/4 cup/35 grams currants or raisins (optional)

Steps:

  • In the bowl of a food processor, pulse a few times to combine the flour, sugar, and salt. Add the butter and pulse until the mixture resembles coarse meal. Add 6 tablespoons water and pulse just until the mixture is moistened and holds together. Add up to 2 more tablespoons water if necessary but be careful not to make the dough too wet. Tip the dough out onto a piece of plastic wrap. Use the edges of the plastic wrap to lift and press the dough into a cohesive piece. Wrap with plastic and shape into a flat rectangle. Chill for at least 1 hour and up to 3 days.
  • In a small bowl, stir together the brown sugar, cinnamon, and salt. Using a melon baller, remove a tiny bit of the root end of each apple. Use the melon baller to core each apple from the stem, leaving about ¾-inch intact at the bottom. Rub the outside of the apples with some of the brown sugar mixture. Toss the remaining brown sugar mixture with the butter and currants and stuff it evenly into the apples. Butter a large baking dish.
  • On a lightly floured surface divide the dough into 6 equal rectangles. Working with one piece at a time, roll into an 8-inch square between 1/8- and ¼-inch thick. (Keep the other pieces in the fridge while you work.) Place one apple in the center, open side up. Brush the edges with the beaten egg and bring them up and over one apple, pressing the dough gently to adhere it. (If there are any thin spots or holes in the dough, seal them well to prevent the dough from slipping off during baking.) Transfer the wrapped apple to the prepared dish and transfer it to the fridge. Repeat with the remaining dough, egg wash, and apples. Heat the oven to 400 degrees. Chill the apples while the oven is heating.
  • Just before baking, brush the apples all over with the egg wash and sprinkle all sides generously with sugar. Bake until the crust is deep golden brown, about 30 to 40 minutes. Insert a small knife in an inconspicuous spot to test the apple for softness and return to the oven for a few minutes more if not done yet. If crust is becoming too dark, tent lightly with foil until apples are cooked through.
