WATERMELON DOUGHNUTS
Bake these easy, no-yeast ring doughnuts for a fun kids' treat. They're easier than you think and perfect for a summer celebration

- Heat oven to 220C/200C fan/gas 7. Put all the dry ingredients together in a bowl and mix well with a whisk to distribute the cinnamon and baking powder. Add the wet ingredients and mix until just combined. Pour the batter into a piping bag and fill the doughnut pan until each hole is approximately three quarters full. Do this in batches if needed.
- Bake for 9-10 minutes until risen, golden brown and the tops are springy to the touch. Allow to cool for a couple of mins then turn out onto a wire rack to cool completely. If the doughnuts have lost their holes during baking use a small cutter or piping nozzle to recut them.
- Put your pink candy melts in a microwaveable bowl with 1 tbsp vegetable oil. Melt at 30 second intervals at a medium heat until silky and completely melted. Spoon the pink candy melt over the top of each doughnut wiping off any drips that fall down the edge. Leave on a wire rack until set (about 5-10 mins). Do not throw away the excess pink!
- Meanwhile melt the green candy melts in the same way. Hold your doughnuts on the edge and roll them through the green candy melts only covering the outside not the pink. Leave to set.
- Cut the chocolate chips in half to create watermelon seed shapes. Dip a cocktail stick into the pink candy melt and mark out the spots to place your seeds then stick on the chocolate chips.

- Using a biscuit cutter, make circles out of the watermelon slices. Using the fondant circle, make holes in the middle of each "donut." See the video on how I did it.
- Place the chilled coconut cream (I use cream because it tends to be more stiff that coconut milk but you can use coconut milk that has been chilled instead if you'd like) into a bowl, separating the solid cream from the liquid. Discard the liquid.
- On medium speed, use an electric mixer for a couple of minutes until fluffy. Add vanilla extract and whip up another couple of seconds.
- Spoon the coconut cream onto the tops of the donuts. If you have extra coconut cream leftover, store in an airtight container in your refrigerator for up to 1 week.

- Melt your green candy melts by microwaving them for 30 seconds then in 10 second increments until they're mostly melted and you can stir them smooth. Dip your doughnuts at a slight angle coating the tops and sides. Gently shake off the excess candy melts before turning the doughnuts right-side-up on a piece of parchment or wax paper. Pour your leftover candy melts onto a piece of cling wrap, wrap securely and put aside for another project.
- Melt your red candy melts using the same method as the green. Dip your doughnuts into the red candy melts so just the top is coated and the green is visible. Shake off the excess and return the doughnuts to your wax/parchment paper. Wrap up the remaining red candy melts and save for a future project.
- Melt your black candy melts and pour into a piping bag. Pipe "seeds" onto your doughnuts by piping a circle of chocolate and quickly pulling down while letting up the pressure on the piping bag.
