2/3 cup sugar
2 tablespoons unsweetened cocoa
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup evaporated skim milk
1 teaspoon vegetable oil
1 teaspoon vanilla extract
1/4 cup semi-sweet chocolate chips
1 cup dark brown sugar
1/4 cup unsweetened cocoa
1 3/4 cups hot water
2 (7/8 ounce) envelopes instant cappuccino mix or 1/4 cup instant coffee, mix
9 tablespoons non-fat vanilla frozen yogurt

Steps:

  • preheat oven to 350.
  • combine first 5 ingredients in a 9-inch square baking pan; stir well. Stir in milk, oil, and canilla. Stire in chocolate chips. Combine brown sugar and 1/4 cup cocoa; sprinkle over batter. Combine hot water and coffee mix, stirring to dissolve.
  • Pour coffee mixture over batter (do not stir).
  • Bake 350 for 40 minutes or until cake springs back when lightly touched in center. Serve warm with 1 Tablespoon of frozen yogurt on each serving.
  • Yield 9 servings = 4 ww pts.

1/3 cup sugar
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup nonfat milk
1 large egg, lightly beaten
2 tablespoons canola oil
1 teaspoon vanilla extract
1/4 cup pecan halves, toasted
3/4 cup brown sugar
1 1/3 cups hot strong coffee

Steps:

  • Preheat oven to 375°F. Lightly coat an 8-by-8-inch baking dish with cooking spray. Stir together flour, sugar, cocoa, baking powder and salt in a large bowl. Mix milk, egg, oil and vanilla in a small bowl until well mixed. Make a well in center of the dry ingredients and gradually pour in the milk mixture, stirring until combined. Stir in pecans. Spoon into the prepared pan and spread evenly. Dissolve brown sugar in coffee; spoon over batter. Bake until a toothpick inserted in center comes out clean, about 25 minutes. 2 teaspoons cinnamon
1 (18 ounce) package yellow cake mix
1 2/3 cups applesauce
3/4 cup Egg Beaters egg substitute

Steps:

  • Heat oven to 350.
  • Blend sugar and cinnamon in a small bowl, set aside.
  • Spray 10 inch tube or bunt pan with non stick spray.
  • Dust pan with the sugar, cinnamon mixture.
  • Blend cake mix, applesauce and egg beaters, and pour into pan.
  • Bake.

Believe it or not, this light cake stays fresh in the fridge up to two weeks assuming it lasts that long! I personally like it any time of the year but it is particularly good in the summer or whenever you need something light and refreshing but without all of the extra calories. Enjoy!

18 1/4 ounces white cake mix
3 egg whites
2 1/2 cups diet 7-Up
1 (1 ounce) package sugar-free instant pistachio pudding
8 ounces fat-free cool whip (small)
1 cup diet 7-Up

Steps:

  • Mix all ingredients together.
  • Spray 13 x 9 pan.
  • Bake at 350°F for 30 - 35 minutes. Test cake top by lightly touching the center which should feel slightly firm and will slightly spring back to the touch.
  • (Cool cake completely before frosting.).
  • Mix together frosting ingredients and spread over cake.
  • Refrigerate until ready to eat and hold in the fridge for up to two weeks!
  • Enjoy!
