Time 1h

Number Of Ingredients 13

1 lb Pork Tenderloin
1/4 cup Olive Oil
1/4 cup Orange Juice
2 tablespoons Lime Juice
3 Garlic Cloves (minced)
1 teaspoon Dried Oregano
1/2 teaspoon Cumin
1 Cuban Bread Loaf (Italian bread will also work)
1 lb Swiss Cheese (sliced)
1 lb Smoked Ham (sliced)
1 cup Dill Pickles (sliced)
1/4 cup Mustard
2 tablespoons Butter

Steps:

  • Preheat the oven to 375ºF and line a rimmed baking sheet with foil.
  • Place the pork tenderloin on the prepared baking sheet. In a small bowl whisk the olive oil, orange juice, lime juice, garlic cloves, oregano, and cumin together and pour over the pork.
  • Cook for 30 to 40 minutes or until the meat reaches an internal temperature of 145ºF. Thinly slice the meat and set aside.
  • Slice the loaf of bread in half lengthwise and then cut into 4 equal parts.
  • Begin layering the ingredients by adding half of the cheese to the bottom layer of the sandwich bread. Top with the smoked ham, sliced pork, and pickles. Place the remaining cheese on top. Spread mustard on the top piece of bread and place on the sandwich.
  • Melt the butter in a skillet or griddle over medium heat. Add the sandwiches and set a heavy skillet, such as an iron skillet, on top of the sandwiches to press them down. Once toasted flip the sandwich and repeat.
  • Slice the sandwiches in half before servings.

THE ULTIMATE CUBAN SANDWICH

The Ultimate Cuban Sandwich image

Provided by Tyler Florence

Categories     main-dish

Time 1h24m

Yield 4 to 6 servings

Number Of Ingredients 19

1 pound boneless pork shoulder
Kosher salt and freshly ground black pepper
1 tablespoon ground cumin
1 tablespoon dried oregano
2 tablespoons extra-virgin olive oil
4 cloves garlic, peeled and gently smashed with the side of your knife
1/4 teaspoon dried red chili flakes
1 medium onion, sliced
1 cup fresh orange juice
1 lime, juiced
1 cup low-sodium chicken broth
2 bay leaves
1 long Cuban bread roll
3 tablespoons Dijon mustard
8 thin slices Swiss cheese
1 cup bread and butter pickles
8 thin slices deli ham
Olive oil
You can do this in a regular Dutch oven, but for convenience and time use a pressure cooker as follows:

Steps:

  • Begin by braising the pork shoulder. Tie the shoulder in 4 places with kitchen twine so it will hold its shape while being cooked or ask your butcher to do this for you. Season the pork with salt, pepper, cumin and oregano. Set the base of a pressure cooker over low-medium heat and add a 2 count of olive oil.
  • Add garlic and chili flakes and as the oil heats up it will become fragrant and infuse the oil. Add the pork. Add onions around the pork and brown slightly before adding orange juice, lime juice, stock and bay leaves.
  • Secure the lid of the pressure cooker and cook for 20 to 25 minutes depending on the size of your pressure cooker. The pork should be tender when done. When done allow to cool in juices before removing twine and slicing.
  • To prepare Cuban sandwiches, split bread in half then layer the sandwich with mustard, cheese, pickles, ham, pork then cheese again (the cheese glues everything together). Season with salt and pepper in between the ham and pork layers. (Optional: drizzle a little of the pork braising liquid over the meat as well).
  • To cook, heat a large cast iron skillet or grill pan over medium heat and lightly coat with olive oil. Place the sandwiches on the skillet and top with another heavy skillet and a couple of heavy weights (bricks, or cans of tomatoes work well). Press down firmly and cook for 5 to 7 minutes per side until the sandwich has compressed to about a third of its original size and the bread is super-crispy. Serve with beans, rice and plantain chips.

GRILLED CUBAN SANDWICH (SANDWICH CUBANO)

Grilled Cuban Sandwich (Sandwich Cubano) image

Editor's note: Chef, nutritionist, and cooking teacher Lourdes Castro shared this recipe from her cookbook, Latin Grilling. It's part of a festive Cuban party menu she created for Epicurious and a great way to use up leftover grilled pork . As soon as someone finds out about my Cuban background, a Cuban sandwich question is never far away. It's no wonder, since Cuban sandwiches have recently popped up on menus all over the country. While many have gotten close to re-creating the real thing, I feel most miss the mark. So here is a step-by-step guide to creating an authentic sandwich Cubano. This is also a great way to use up the leftovers from your Cuban pig roast!

Yield Serves 8

Number Of Ingredients 7

1 loaf Cuban bread, sliced lengthwise
1/2 stick (1/4 cup) unsalted butter, softened
3 tablespoons yellow mustard, or to taste
1 1/2 pounds boiled ham, sliced
1 1/2 pounds roasted pork , sliced
1 pound Swiss cheese, sliced
1 cup dill pickle chips, or to taste

Steps:

  • Assemble the sandwich
  • Spread 2 tablespoons of the butter on one half of the bread loaf and a thin layer of mustard on the other. Place 1 to 2 layers of ham, pork, cheese, and, finally, pickles on the buttered bread and top with the mustard-spread bread.
  • Wrap the sandwich in foil
  • Smear the remaining butter all over the outside of the sandwich and wrap it completely in aluminum foil.
  • Press and grill the sandwich
  • Heat your grill to high (550°F) and close the lid. Wait at least 15 minutes before lowering the heat to medium-high (450°F) and continuing.
  • Before grilling the sandwich, press down on it with your hands to flatten it. Place the wrapped, flattened sandwich on the grill and top with a brick, grill press, or any other heavy, heat-resistant object. Close the lid and grill for 5 to 6 minutes per side.
  • Remove the wrapped sandwich from the grill and take off the foil. Return the sandwich to the grill and grill for about 2 to 3 minutes per side, or until both pieces of bread are crispy and golden brown.
  • Slice and serve
  • Remove the sandwich from the grill and cut at an angle into small sandwich wedges (triangles). Place on a large platter and serve while still hot.

2 tbsp Yellow Mustard
3 ounces Swiss Cheese (sliced)

ORIGINAL CUBAN SANDWICH

Original Cuban Sandwich image

Provided by Food Network

Categories     main-dish

Time 23m

Yield 1 serving

Number Of Ingredients 7

1 loaf Cuban bread
1-ounce regular mustard
4 dill pickles
5 slices boiled ham or Virginia ham
2 slices roast pork
1 slice imported Swiss cheese
1-ounce butter

Steps:

  • Cut Cuban bread to desired size, common size is 7 inches. Next, slice open the bread down the middle. On the topside of the bread spread 1-ounce of mustard, evenly across. Then place 4 pickles on top of the mustard. You then place 1 slice of Swiss cheese on top of the pickles. Slice ham to desired thickness, recommended size is 1 1/2 ounces per slice, the thinner the better. Now fold each slice of ham in half and place evenly on bottom of bread. On top of the ham, place slices of roast pork, 1 1/2 ounces per slice. You then join both halves of the sandwich. You are now ready to grill your Cuban sandwich.
  • Use a sandwich grill if you have one, a waffle iron if not. Spread butter on top of the bread evenly. Close the grill, smashing the sandwich. Leave sandwich in the grill until top of bread turns to a golden brown, and top is crisp. Approximate time is 4 to 6 minutes. After the sandwich is crispy and the cheese has melted, remove the sandwich carefully and slice it diagonally, from corner to corner. DO NOT USE A MICROWAVE OVEN!

OUTRAGEOUS CUBAN SANDWICH WITH MOJO SAUCE

Outrageous Cuban Sandwich with Mojo Sauce image

The layers of flavors in this sandwich were really good. I just loved this mojo sauce. And the pickles and onions added the perfect amount of crunch.

Provided by Barbara Miller

Categories     Sandwiches

Time 30m

Number Of Ingredients 15

1 loaf, Cuban, Italian or French bread
1 lb cooked ham, sliced
1 lb roasted or pulled pork
3/4 lb Swiss cheese, sliced
2 dill pickles (I prefer diced small) or sliced
yellow mustard or mayonnasie
red onion slices
MOJO SAUCE INGREDIENTS:
1/3 c good olive oil
6 clove garlic, minced
1/3 c sour or regular orange juice
1/3 c lemon juice
1 tsp kosher salt
1/3 tsp cracked black pepper
1/2 tsp cumin

Steps:

  • 1. Prepare Mojo sauce and set aside until you are ready to make the sandwiches. Then preheat a griddle or frying pan on medium heat.
  • 2. Cut the loaf of bread into quarters and slice each quarter in half lengthwise for the sandwiches.
  • 3. Spread the mustard or mayonnaise on the bread. Then make each sandwich by layering the pickles, roasted pork, red onions, ham, and cheese. Spoon the Mojo sauce over the inside of the sandwich.
  • 4. Lightly coat the cooking surface of the griddle with butter. Place one sandwich onto the hot surface.
  • 5. Put a clean, heavy skillet on top of the sandwich to flatten it. Press the bread down to about 1/3 of it's original size.
  • 6. Leave the skillet on top of the sandwich and grill for one or two minutes. Left the heavy skillet, turn the sandwich over and repeat this step for the other side of the sandwich.
  • 7. The cheese should be melted and the bread golden brown. Slice the sandwich in half diagonally and serve!
  • 8. FOR THE MOJO SAUCE: (Prepare ahead of time because this is going to go inside the sandwich before grilling.) Heat oil in pan. Add garlic and cook over moderate heat stirring until golden. Add juices, salt, pepper, cumin and cook for a couple more minutes until fragrant.
  • 9. This step is not actually on the list of "authentic" ingredients but I like to add some chopped cilantro to my sandwich because it gives it yet another burst of flavor to push it over the top! That's just my thing ... and it's a "good thing!." Using marinated red onions would not be a bad thing either! I confess ... I do!

WHAT TO SERVE WITH A CUBAN SANDWICH

From cookingchew.com
  • Baked sweet potato. Baked sweet potatoes are a perfect side for Cuban sandwiches. The rich sweet flavor of these golden beauties pairs perfectly. I recommend topping the sweet potato with just butter and salt.
  • No-mayo coleslaw. This Carolina coleslaw doesn’t use mayonnaise. It is flavored with apple cider vinegar, which compliments a Cuban perfectly. It is also slightly sweet and packed with veggies.
  • Baked plantains. Baked plantains are a fantastic side dish for your next Cuban dinner. I recommend baking the plantains whole and unsliced. They will make a beautiful presentation.
  • Cucumber tomato salad. This is a simple and refreshing cold side dish. The fresh tomato and cucumber will compliment your Cuban sandwich perfectly. You can also make this side dish in advance because we recommend chilling it in the fridge before serving.
  • Homemade potato chips. Potato chips are a popular side for Cubans. I say that homemade potato chips are an even better side dish. Homemade potato chips are so easy to make in the air fryer.
  • Sweet potato fries. Fries and Cuban sandwiches go together perfectly. If you want to stay traditional but also shake things up a bit, pair sweet potato fries with your sandwich.
  • Potato salad. Creamy red potato salad serves up well with a hot sandwich. The texture complements the Cuban perfectly. That beautiful texture comes into play because we leave the skin on the red potatoes.
  • Caesar salad. A nice crisp Caesar salad is the perfect side to serve with Cuban sandwiches. It only requires a few ingredients. Toss together some crisp romaine, croutons, parmesan cheese, and of course Caesar salad dressing.
  • Fruit salad. Fruit salad is an often-overlooked side dish and I don’t really know why. If you got a sub shop, you will almost always see fruit salad as an offered side and with good reason.
  • Homemade pickles. Did you know that you can make homemade pickles in just 24 hours? Shocking! I know. These pickles don’t require any special ingredients.
