- In a large bowl, whip cream until stiff peaks are just about to form. Beat in vanilla and sugar until peaks form. Make sure not to over-beat, cream will then become lumpy and butter-like.

WHIPPED CASHEW CREAM
This yummy cream stands in for dairy whipped cream. Adapted from Chef Tal who wrote The Conscious Cook. The raw cashews have no flavor of their own, thyr'e just a vessel for fat and creaminess.

Steps:
- Place the cashew cream in a blender and add agave nectar, vanilla, and 1/4 cup water. Blend until completely combined.
- With blender running, slowly drizzle the coconut oil in through the hole in the blender lid. Blend until emulsified.
- Pour into a bowl and chill in the refrigerator, covered, for 2 hours.
- Stir before serving.

- Boil the cashews in separate boiling water for about 5 minutes. This eliminates the need to soak overnight and gives the cashews a great creaminess. When finished, rinse and drain the cashews and discard that water.
- In a blender (preferably a small one so it all gets incorporated), add the boiled and drained cashews, filtered water, maple syrup, vanilla extract, sea salt and tapioca starch and blend until creamy and glossy. This might take several blends on your blender, it took me about 3 to 5 minutes straight of consistent blending and stopping to scrape down the sides to blend. Taste and add more maple syrup if you desire it to be sweeter.
- Because of the tapioca starch it thickens up pretty quickly, but it might be very hot. Allow to cool in your fridge for at least an hour, preferably three hours or even overnight!

- Soak the cashews overnight - the longer they soak, the creamer your cashew cream. The quality and freshness of the cashews affects their creaminess also; I buy mine raw and whole in bulk from a local high-end grocery store which always stocks them fresh. Whole Foods Markets also carry good quality cashews under their house brand 365.
- Keep 1/2 cup of the vanilla cashew cream aside, and add the blueberries to what remains in the blender. Blend smooth.To make the blueberry cashew cream smoothie bowls, just pour the blueberry cashew cream in bowls and top with fruit and nuts, and a swirl of the white cashew cream.
- To make the heart cashew cream bites, spoon the purple cashew cream into the heart shaped mold (see link in ingredients).
