- Refrigerate mixing bowl and beaters in the fridge for a minimum of 15 minutes. Ensure cream is very cold as well. This will all help cream whip better.
- Place water in heatproof cup and sprinkle gelatin on top to bloom. Wait 5 minutes.
- Place cup in a small sauce pan filled with simmering water. Once gelatin becomes liquid, take it out of the water. Let cool on the counter.
- Immediately start beating the cream and sugar in a stand mixer fitted with the chilled bowl. Whip on medium speed and then increase to medium-high.
- Check on the gelatin. It should no longer be hot but still runny.
- Once the beaters leave tracks in the cream, pour the gelatin into the bowl slowly and steadily. Aim for the area in between the whisk and the bowl. If desired, add extract and food color before the cream becomes stiff.
- Stop beating once the cream turns stiff. Do not over whip.
- Use cream to assemble cooled dessert immediately.

This is a whipped cream frosting recipe with gelatin that you can use in any of your creations.

- Put the bowl and beaters in the fridge to cool them. Check that your cream and water are also fridge cool. If the ingredients and elements are cold, the cream will thicken up faster and it will gain more volume.
- Make sure to sift the confectioners sugar to avoid any lumps.
- Bloom the gelatin. To achieve this, put the unflavored gelatin in a microwave-safe bowl and add the cold water. Let it sit for 5 minutes or until it is very thick. In order to use it for this recipe, you need it to be liquid but not hot.
- Microwave the gelatin for 5 seconds increments until it dissolves completely. You can also dissolve it over a double boiler if you do not have a microwave.
- Take the bowl and beaters from the fridge. Pour the cream in the container and beat it on high speed until it starts to thicken.
- Add the sifted confectioners sugar slowly, combining it together with the cream. Also add the flavoring. Stop beating until shy of the soft peak stage.
- Start beating again on low speed and add the liquified gelatin in a thin stream. If it has thickened again, put it back in the microwave until you can pour it in.
- Finally, beat until you reach the desired consistency, whether it is soft or stiff peaks.
WHIPPED CREAM GELATIN MOSAIC

- In a small bowl, dissolve cherry gelatin in 1 cup boiling water; stir in 1/2 cup cold water. Pour into an 8-in. square dish coated with cooking spray. - Add 1 cup boiling water to each flavor of fruit gelatin mix in separate bowls; stir 2 min. until completely dissolved. Pour each flavor of gelatin into separate 8x4-inch loaf pan sprayed with cooking spray. Refrigerate 2 hours or until firm.
- Meanwhile, stir unflavored gelatine into 1-1/2 cups milk; let stand 5 min. or until gelatine is softened. Bring 2 cups of the remaining milk just to boil in large saucepan on medium heat. Add sugar and unflavored gelatin mixture; cook and stir 3 to 5 min. or until sugar is dissolved. Remove from heat; cool 5 min. Add sour cream, vanilla and remaining milk; whisk until blended. Refrigerate 30 min. or until cooled but not firm.
- Cut flavored gelatin into 1/2-inch cubes; place in 12-cup mold sprayed with cooking spray. Pour milk mixture over gelatin cubes. Refrigerate 2 hours or until gelatin is firm. Unmold before serving.
