MOM'S HOMEMADE WHITE BREAD ROLLS (OR LOAVES)
My mom makes this every year for the holidays, these are delicious and pretty easy to make. I've gotten detailed in the instructions, because she gave me this recipe when I was first learning how to make bread.

Steps:
- Dissolve yeast and 2 Tablespoons sugar in 1/4 cup warm water, set aside.
- Microwave 2 cups water, shortening and salt, until the shortening melts.
- Stir this mixture until it completely dissolves.
- Start adding flour about 2 cups to start to this mixture, just a little at a time so that it stays smooth and doesn't get lumpy.
- Then add yeast mixture, mix well.
- Continue adding flour and then turn out on floured surface and knead in remaining flour, until no longer tacky.
- Grease a large bowl or pan with vegetable oil.
- Put the bread in this bowl cover and let it rise.
- If you use a fast acting yeast it should take about 45 minutes.
- Turn out on the counter and fold in sides, put back in bowl and let rise again.
- After the second rising it is time to turn it out and make the rolls or bread and place it in a pan.
- Make sure the pan is well oiled with vegetable oil.
- Place them in the pan (pans) and let rise one last time and then bake them at 375°F oven until done, about 20 minutes or so.

WHITE BREAD AND ROLLS

- Mix the flours and salt in a warm bowl. Blend the yeast to a cream with a little of the water, then mix in the ale, honey, and 2 1/2 cups of the remaining water. Stir the liquid into the flour mixture and mix to a firm dough, adding more water if it does not cohere. On a board or work-top, knead the dough for about 8 minutes. Shape into a ball. Oil the inside of the bowl, add the dough, and cover it loosely with oiled greaseproof paper. Leave in a warm place to double in bulk.
- Punch down the dough and cut it in half. Shape 1/2 into 2 equal sized round loaves and the other half into rolls. Make a cross-cut in the top of each loaf. Place on oiled baking sheets, well apart, cover loosely with oiled greaseproof paper and leave to proof in a warm place.
- Preheat the oven to 450 degrees F.
- Bake the rolls until golden, about 15 to 17 minutes and the loaves for 25 minutes. Remove from the oven and cool slightly before serving.
TRADITIONAL WHITE BREAD
A delicious bread with a very light center with crunchy crust. You may substitute butter or vegetable oil for the lard if you wish.

- In a large bowl, dissolve yeast and sugar in warm water. Stir in lard, salt and two cups of the flour. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
- Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes.
- Preheat oven to 425 degrees F (220 degrees C).
- Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped.

COUNTRY WHITE BREAD OR DINNER ROLLS (BREAD MACHINE)
We think this is the best white bread recipe ever! It is a tender bread with a slightly sweet taste. My dinner rolls using this dough are so good, everyone always loves them. It doesn't take to long to make them when the bread maker does most of the work. The cook time is listed for the rolls only because everyone's bread makers cooks at different rates. Mine is older and a regular loaf will take 4 hours and 10 minutes. I have found that 15 balls of dough fit perfectly in the 9X13 pan with sides touching after raising the 2nd time but they can be made whatever size you want. I hope you enjoy this great bread as much as we do.

Steps:
- In bread machine pan, place all ingredients from flour through yeast in order as recommended by the manufacturer.
- Select the basic bread setting.
- Check dough after 5 minutes of mixing, if needed add 1-2T of water or flour.
- Bake as normal.
- For dinner rolls.
- Mix in bread machine but use only the dough option.
- Lightly grease a 9 x 13 baking pan (I always use a metal pan).
- When dough is finished shape into 15 uniformly sized balls. I always grease my hands with shortening to smooth the dough out and it helps keep the dough from drying out.
- Cover and let the rolls rise in a warm, draft free place until risen to the desired size.
- I let them about double in size.
- Bake in a 350° oven about 12-15 minutes until golden brown.
- After removing from the oven, brush the tops of the rolls with melted butter.
- Take out of pan and let completely cool before storing.

- Place the bread flour, buttermilk, brown sugar, salt, yeast, and egg yolk into a bread machine. Using the Dough setting, allow the machine to mix the ingredients until moist. Pause the cycle and pour in the oil, then let the machine continue to the end of the Dough cycle.
- Grease muffin pans or a baking sheet, and set aside.
- Punch down the dough, and remove it from the machine. Divide the dough into 12 equal parts, form into round, smooth rolls, and place them into the cups of the muffin pans or on baking sheet, making sure the rolls don't touch each other. Cover the rolls with a kitchen towel, and let rise in a warm place until double, about 25 minutes.
- While the rolls are rising, preheat oven to 350 degrees F (175 degrees C). Bake the rolls in the preheated oven for 20 minutes, or until golden brown. Rub the tops of the hot rolls with a stick of butter for a soft crust, cool the rolls slightly, and serve warm.

EASY BREAD ROLLS

- Tip the flour, yeast, sugar, salt and oil into a bowl. Pour over 325ml warm water, then mix (with a spatula or your hand), until it comes together as a shaggy dough. Make sure all the flour has been incorporated. Cover and leave for 10 mins.
- Lightly oil your work surface and tip the dough onto it. Knead the dough for at least 10 mins until it becomes tighter and springy - if you have a stand mixer you can do this with a dough hook for 5 mins. Pull the dough into a ball and put in a clean, oiled bowl. Leave for 1 hr, or until doubled in size.
- Tip the dough onto a lightly floured surface and roll into a long sausage shape. Halve the dough, then divide each half into four pieces, so you have eight equal-sized portions. Roll each into a tight ball and put on a dusted baking tray, leaving some room between each ball for rising. Cover with a damp tea towel and leave in a warm place to prove for 40 mins-1 hr or until almost doubled in size.
- Heat the oven to 230C/210C fan/gas 8. When the dough is ready, dust each ball with a bit more flour. (If you like, you can glaze the rolls with milk or beaten egg, and top with seeds.) Bake for 25-30mins, until light brown and hollow sounding when tapped on the base. Leave to cool on a wire rack.

EASY WHITE BREAD ROLLS

- Firstly before we start, keep in mind that the doughs first rising can be done over night in the fridge in a well oiled bowl.
- Combine the flour, yeast, salt and caster sugar in a large bowl. I like to mix the mixture with a regular knife.
- Once combined make a well in the center of the flour in preparation for the wet ingredients.
- Measure 300ml of luke warm water and add 3 tbsp of olive oil.
- Pour the water and oil into the well of flour and gradually mix the flour in until it forms a dough.
- Transfer the dough to the work top and start to knead. Do not be intimidated if your dough is quite wet. Many people tend to then add to much flour and this will result in a denser bread. Persist in kneading for ten minutes until smooth and elastic.
- Place your smooth dough into a lightly oiled, covered bowl and leave to prove for an hour. If you have made your dough in the evening then you can leave in the fridge overnight.
- Once your hour prove has finished knock back the dough for a good 10 minutes, then roll into a long sausage shape and divide into 8 sections. Form these sections into small rounds and place on covered baking trays for another hour.
- Whilst proving preheat the oven to 220C/fan. (This step also applies for the fridge proving option).
- Now cook your rolls in the oven for 10-15 minutes. Once out of the oven transfer to a cooling rack, tapping the bottom of the rolls to check that they sound hollow. Cover with a clean tea towel when cooling. This will absorb the moisture from the heat coming of the rolls.
- Best eaten warm!
