1 1/2 ounces Cocchi Americano Bianco
1 ounce elderflower liqueur, such as St-Germain
2 ounces club soda
1 grapefruit twist

Steps:

  • Fill a 10-ounce Collins glass with ice. Add Cocchi and elderflower liqueur. Top with club soda, stir briefly with a long cocktail spoon, and garnish with a grapefruit twist.

1/4 glass super-chilled club soda (again: very, very cold!)
Slice of lime

Steps:

  • Fill a wine glass halfway with the super-chilled wine ... the glass should frost ... that's when you know your wine's cool enough.
  • Splash in the club soda until the glass is three-quarters full. (Note: You can also use ginger ale or lemon lime soda!)
  • Then take a slice of lime and put it on the rim of the glass.

Steps:

  • Add the Aperol to a glass filled with ice and stir. Top with the sparkling wine and soda water.
  • Squeeze in the orange wedge and stir gently, then serve. Serve with a straw to minimize dilution!
