WHITE PEACH SANGRIA

One 750-milliliter bottle semisweet white wine, such as Riesling
3/4 cup Simple Syrup, recipe follows
1/4 cup orange juice
1/4 cup white rum
1 cup raspberries
2 white peaches, sliced into wedges, plus additional peach slices, for garnish
Fresh mint sprigs, for garnish
1 cup sugar

Steps:

  • Combine the wine, Simple Syrup, orange juice and rum in a pitcher. Add the raspberries and peaches and stir. Chill, covered, at least 1 hour and up to 24. Serve over ice. Add a peach slice and mint for garnish and enjoy!
  • Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

2 tablespoons unsalted butter, melted
2 tablespoons fresh lemon juice (from 1 lemon)
2 tablespoons sugar
1 vanilla bean, halved lengthwise and scraped, or 1 teaspoon pure vanilla extract
4 firm, ripe peaches (1 to 1 1/2 pounds total), halved and pitted
1 pint vanilla ice cream
1 package (5 to 6 ounces) raspberries

Steps:

  • Preheat oven to 400 degrees. In a large, shallow baking dish, combine butter, lemon juice, sugar, and vanilla bean (seeds and pod). Add peaches, and turn to coat with butter mixture; arrange, cut side down, in a single layer.
  • Roast until peaches are tender and cooking liquid is syrupy, 15 to 25 minutes, brushing with cooking liquid halfway through. Serve peaches (warm or at room temperature) with ice cream and raspberries; drizzle with cooking liquid.

1 1/2 cups cabernet sauvignon wine
1 1/2 cups seltzer
1/2 cup sugar
2 strips lemon peel
3 strips orange peel
4 black peppercorns
Pinch of ground cinnamon
3/4 pint fresh raspberries
8 ripe white peaches
Lemon juice to taste (optional)

Steps:

  • Combine wine and seltzer in a medium-size nonreactive saucepan. Add sugar, lemon and orange peels, peppercorns and cinnamon and bring to boil over high heat. Reduce heat to medium high and boil for 15 minutes. Remove from heat. Strain the syrup and then refrigerate until chilled.
  • Puree the raspberries in a food processor. Strain the puree into a bowl and set aside. When the cabernet syrup is cold, stir into the raspberry puree.
  • Peel and pit the peaches. If they are very ripe, they should peel easily without blanching; otherwise blanch them and remove their skins. Cut the peaches into even slices and divide them among four large round wine glasses. Taste the wine syrup and add more sugar, lemon juice or seltzer to taste. The syrup should be quite thin. Pour the syrup over the peaches and serve immediately.

1 quart apple juice
2 cups water
2 cinnamon sticks
6 whole allspice berries
12 whole cardamom seeds
6 firm ripe peaches
1 cup water
1/2 cup sugar
2 cups unsweetened raspberries (fresh or frozen)

Steps:

  • To prepare peaches, bring juice, water and spices to a boil. (Make sure your pot is narrow enough so that the liquid will cover the peaches).
  • Drop peaches in liquid and poach for 10 minutes.
  • Remove the peaches, cover with cold water and slip off the skins.
  • Cut each peach in half and remove the stone.
  • Place the peaches in a glass or porcelain bowl. (The poaching liquid can be saved and re-used).
  • For the sauce, mix the water and sugar in a saucepan, heat to a low boil and simmer until liquid has reduced by 1/2.
  • In a blender, puree 1 cup of raspberres and 1/4 cup sugar syrup.(You can store the remaining syrup in a glass jar in the refrigerator.).
  • Stir the remaining berries into the puree.
  • Serve the peach halves, round side up, in a pool of raspberry sauce and garnish with whipped cream on the side, if you like.

A fruity flavor and mellow heat make ancho chile - poblano chile in its dried form - a delicious and unusual addition to the sweetness of ripe peaches and raspberries.

Yield Makes 4 dessert servings

Number Of Ingredients 6

1 pliable dried ancho chile* (less than 1/2 oz)
3 cups water
1/2 cup sugar
1 1/2 cups fresh raspberries (6 oz)
1/2 teaspoon fresh lemon juice
2 firm-ripe large peaches (preferably freestone)

Steps:

  • Simmer chile in 2 cups water in a 1- to 2-quart saucepan, uncovered, turning over once or twice, until softened, 15 to 20 minutes. Transfer chile to a cutting board and discard cooking liquid.
  • When cool enough to handle, stem and seed chile, then carefully peel off skin in large pieces and reserve.
  • Transfer chile pulp to cleaned saucepan and add sugar, 1/2 cup raspberries, a pinch of salt, and remaining cup water. Bring to a boil over moderate heat, stirring until sugar is dissolved.
  • Remove syrup from heat and cover pan with lid, then let steep, covered, 20 minutes.
  • While syrup is steeping, pat chile skin dry and cut skin into very fine threads with a sharp knife.
  • Pour syrup through a fine-mesh sieve into a bowl, pressing gently on solids (do not push solids through), then discard solids. Stir lemon juice into syrup.
  • Halve peaches lengthwise, pit, and cut lengthwise into 1/4-inch-thick slices. Divide, along with remaining cup raspberries, among 4 shallow bowls and spoon syrup over fruit. Sprinkle with some chile threads.

2 large ripe peaches, preferably white
2 cups dry champagne
1/2 cup maple syrup
1/2 small vanilla bean
3 large strawberries
2 tablespoons powdered sugar
1/4 medium lemon, juice of
1 cup romance whipped cream, see recipe below
2 large mint leaves (to garnish)
1/2 cup heavy whipping cream
3 tablespoons powdered sugar
2 teaspoons vanilla extract

Steps:

  • Make a very light incision all around peach skins.
  • Plunge the peaches briefly into boiling water, then into cold water, and peel.
  • Place in a shallow pan and douse with champagne.
  • Add the syrup and vanilla bean.
  • Bring to a slow boil over low heat, and poach peaches at about 185°F, but do not allow to boil.
  • If peaches are very ripe, they will be poached after 5 minutes.
  • Place peaches and syrup in a cool place, but do not refrigerate.
  • Drain peaches, reserving the poaching liquid.
  • Wash strawberries, remove any leaves, and purée in a blender or food processor.
  • Place in a bowl and stir sugar into the purée.
  • Stir romance whipped cream into the strawberry purée and add lemon juice.
  • Serve on round plates, or in glass dishes or small bowls.
  • Line the bottom of the dishes with strawberry cream and arrange the cooled, but not chilled, peaches on top.
  • Garnish each peach with a mint sprig. Serve the chilled poaching liquid separately in a sauce boat.
  • ROMANCE WHIPPED CREAM:.
  • Using a wire whisk or electric mixer, beat heavy cream over ice cubes in a chilled mixing bowl, just until cream thickens. When peaks start to form, add sugar and vanilla. Then whip to the desired consistency.
  • Yield: 1 1/4+ cups.

  • Blanch peaches in large pot of boiling water 20 seconds. Transfer to bowl of cold water, using slotted spoon. Drain. Pull off skin with small sharp knife. Slice peaches and transfer to large bowl. Add raspberries and wine mixture. Cover and refrigerate at least 1 hour. (Can be prepared 6 hours ahead. Stir occasionally.) Divide fruit and wine among glass goblets. Serve with biscotti.

2 cups dry rose wine
1/2 cup sugar
1 strip (about 4 inches) lemon zest
4 lemon verbena sprigs (each about 6 inches long), plus more for garnish (optional)
1 1/2 cups water
4 large white donut peaches (1 1/4 pounds total)

Steps:

  • Bring wine, sugar, lemon zest, lemon verbena, and water to a simmer in a medium saucepan over high heat. Carefully add peaches, and reduce heat to medium. Gently simmer until tender all the way to the pit when pierced with a skewer or a sharp knife, 20 to 25 minutes.
  • Using a slotted spoon, transfer peaches to a plate. Let cool slightly. When cool enough to handle, peel off skin.
  • Meanwhile, return poaching liquid to a simmer, and cook until reduced by about three-quarters, about 20 minutes. Pour through a sieve, and discard zest and leaves. (You should have about 1 cup syrup.) Let cool for 10 minutes.
  • Refrigerate single layers of peaches and the syrup in separate airtight containers until cold, at least 30 minutes (or overnight). To serve, place a peach on a serving plate and spoon about 3 tablespoons syrup around each peach. Garnish with lemon verbena if desired.
