Steps:
- Preheat the oven to 375 degrees F.
- Arrange the bread slices on 2 heavy large baking sheets. Brush olive oil over the bread slices. Bake until the crostini are pale golden and crisp, about 15 minutes.
- Blend the goat cheese and cream cheese in a food processor until smooth and creamy. Add the parsley, thyme, and lemon peel. Using the on/off button, pulse just to blend. Season with salt and pepper, to taste. Spread the cheese mixture over the crostini. Sprinkle with the olives, chives, and more pepper. Arrange the toasts on a platter and serve.
- Do-Ahead Tip: The crostini and cheese mixture can each be prepared 2 days ahead. Store the crostini in an airtight container at room temperature. Cover and refrigerate the cheese mixture. Let the cheese mixture stand at room temperature for 1 hour to soften slightly before spreading over the crostini.
BAKED GARLIC
Baked garlic is sweet and very yummy, as well as being very spreadable. Serve as an appetizer with a good crusty bread or with crackers. People can peel a piece of garlic off of the bulb and squeeze the soft, warm garlic our of its shell.

- Preheat oven to 350 degrees F (175 degrees C).
- Cut aluminum foil into 3 6-inch squares (large enough to wrap each garlic head). Place 2 teaspoons of butter in each square of foil and place one garlic head into each square of foil. Fold the packets up, and arrange them in a 9 inch pie pan.
- Bake for 30 minutes, or until the garlic is soft.

- Preheat the oven to 350°. Cut the top off the garlic heads so that the cloves are exposed. Place the heads in a small baking dish.
- Drizzle 3 tablespoons of the oil over the tops, allowing it to sink in around the garlic papers. Season to taste with kosher salt and freshly ground pepper. Bake for 1 hour.
- Meanwhile, prepare the goat cheese for baking. In another small baking dish, place the log of goat cheese. Drizzle the remaining tablespoon of oil over the cheese, rolling the log to coat.
- In a small bowl, combine the bread crumbs, tarragon, and a little more freshly cracked pepper. Sprinkle the bread crumb mixture over all sides of the log, turning as necessary.
- Bake cheese, uncovered for 30 minutes alongside the garlic.
- The garlic cloves will practically pop out of their skins. Spread them on baguette slices along with some goat cheese.

- Preheat oven to 350°F. Place garlic, cut side up, in small glass baking dish; pour oil over each head and sprinkle with salt. Cover; bake until garlic is tender, about 1 hour. Uncover; let cool 15 minutes. Squeeze garlic from each clove into medium bowl and mash. Mix in Parmesan, cream cheese, mayonnaise, and thyme. Season to taste with salt and pepper. (Can be made one day ahead; cover and refrigerate. Allow to soften slightly at room temperature before continuing.)
- Preheat oven temperature to 425°F. Spread garlic mixture on bread slices; arrange on 2 baking sheets. Bake until toasts are beginning to brown at edges, about 12 minutes.
WHOLE ROASTED GARLIC WITH GOAT CHEESE
So perfect with a crusty baguette! Wonderful as a side to meaty entrees. I use this dish to bribe Dh into tackling his honey-do list. It's never let me down. This is an adaptation of a Rozanne Gold dish.

- Preheat oven to 375°.
- Remove any loose papery skins from the outside of the garlic heads; cut off the top 1/3 of the heads to open the cloves; set aside for another use; place the heads in a small baking dish, cut sides up; pour olive oil over them and sprinkle with salt and pepper.
- Cover the dish tightly and bake until 3/4 done, about 45 minutes; uncover and continue to bake another 15 minutes or until the cloves begin to pop out of their skins and brown.
- Top each head with 1/2 ounce slice of goat cheese and broil until golden, about 1 minute; serve warm.
WHOLE BAKED GARLIC WITH TOASTS

- Cut off the top quarter of the garlic with a sharp knife to expose the cloves, set the garlic in the middle of a large piece of foil, and drizzle it with 2 teaspoons of the oil. Crimp the foil around the garlic to enclose it completely and bake the garlic in the middle of a preheated 425°F. oven for 40 minutes. While the garlic is baking, brush the bread slices with the remaining oil and bake them on a baking sheet in the lower third of oven (below the garlic), turning them once, for 10 to 12 minutes, or until they are golden and crisp. Unwrap the garlic and put it on a serving plate surrounded by the toasts. To serve the garlic: Remove the softened cloves with a knife or fork, or turn the head of garlic upside down and squeeze out the cloves, and spread the garlic on the toasts.

- Place garlic and oil in a pie plate. Cover and bake at 350° for 30 minutes. , Meanwhile, in a small skillet, saute onion in butter until tender and lightly browned. - Press goat cheese to fit the shape of a small baking dish, leaving a 1-inch border around the edge. Gently spoon marinara sauce around the border, taking care to cover the edge of goat cheese but not the middle. Sprinkle with salt.

A more-than-one-bite hors d'oeuvre, these savory toasts make a satisfying snack to serve with drinks or to take on a picnic. They taste best at room temperature or just barely warm. Roasting the peppers can done a day ahead, as can marinating the goat cheese, making this treat very easy to put together.

- Roast the pepper: Place the bell pepper directly over the open flame of a gas burner, under the broiler or on a hot, glowing charcoal grill. Let the skin of the pepper blacken and blister, using tongs to turn the pepper frequently. When completely blackened, after 5 to 8 minutes, transfer to a plate to cool.
- Using a paring knife, cut pepper in half lengthwise. Cut away seeds and stem and discard. Scrape away the skin and discard. Do not rinse. It's OK if a few bits of charred skin remain.
- Cut pepper halves into long strips about 1-inch wide. Season lightly with salt. (The pepper can be prepared up to 24 hours ahead of serving.)
- Marinate the goat cheese: Slice the goat cheese log into 10 pieces (each about 3/4-inch thick). Place pieces in a single layer on a plate and pour 1/4 cup oil over.
- Strip leaves from a few thyme sprigs and a rosemary sprig, roughly chop and sprinkle over the cheese. Finish with a bit of freshly ground black pepper, and a small pinch of red-pepper flakes. Cover and set aside. (This can also be done up to 24 hours ahead.)
- Set oven to 350 degrees. Cut the baguette on a diagonal into 10 slices, each about 1/4-inch thick. (If using ciabatta, cut into similar-size pieces.) Arrange on a baking sheet in a single layer, then place in oven for about 5 minutes, until bread is barely toasted.
- Remove from oven and carefully give each toast a light swipe with the garlic clove. Lay a strip of roasted pepper across each toast to cover. Place a goat cheese round in the center of each toast. Spoon the remaining olive oil from the plate generously over each piece of cheese and any exposed toast.
- To finish, return to the oven and bake, uncovered, until the bread is nicely browned and the cheese has gotten a bit of color, 8 to 10 minutes. Let toasts cool a bit, then arrange on a platter and serve. (They taste best at room temperature or just barely warm.) Toasts can be baked up to 1 hour ahead and popped in the oven to reheat slightly.

- Pre-heat oven to 425.
- Cut off the top quarter of the head of garlic to expose the colves. Set the head in the middle of a large piece of tin foil, and drizzle with 2 tsp of olive oil. Crimp the foil around the garlic to enclose it completely.
- Bake in a 425 oven for 40 minutes.
- Slice the bread thinly and brush with the remaining oil.
- Bake in the bottom half of the oven, below the garlic, on a cookie sheet, turning once until they are golden (about 4 minutes each side - watch them!).
- Unwrap the garlic and squeeze out the cloves. Mix it with the goats cheese. Add salt and pepper to taste if you wish.
- Spread on the toasts.
