8 oz. fun-shaped pasta (such as wagon wheels or elbow twists)
1-1/2 pkg. (6 oz. each) OSCAR MAYER CARVING BOARD Flame Grilled Chicken Breast Strips
1/2 cup KRAFT Original Barbecue Sauce
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Cook pasta as directed on pkg.; drain. Set aside.
  • Combine chicken and barbecue sauce in large saucepan; cook on medium heat until heated through, stirring occasionally.
  • Stir in sour cream until well blended. Add pasta; mix lightly.

This recipe from the Florida Keys has been given to almost everyone I know. It is the best marinade for chicken, and it only takes 30 minutes from prep till you can grill! It's a great blend of flavors with honey, soy sauce, and lime juice. If you have time, try marinating overnight for the fullest flavor.

3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vegetable oil
1 teaspoon lime juice
1 teaspoon chopped garlic
4 skinless, boneless chicken breast halves

Steps:

  • In a shallow container, blend soy sauce, honey, vegetable oil, lime juice, and garlic. Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes.
  • Preheat an outdoor grill for high heat.
  • Lightly oil the grill grate. Discard marinade, and grill chicken 6 to 8 minutes on each side, until juices run clear.

3 teaspoons salt
12 ounces penne pasta
1 lb boneless skinless chicken breasts or 1 lb boneless skinless chicken thighs
1 teaspoon dried oregano
2 red bell peppers, cut into thin strips
3 tablespoons olive oil
16 ounces salsa (about 2 cups at your desired spice level)
1 cup sour cream
1/4 cup fresh cilantro, chopped (optional)
1 cup cheddar cheese, shredded

Steps:

  • Bring a large pot of water to a boil.
  • Add 2 1/2 tsp of salt and penne to the boiling water. Cook according to package directions.
  • Sprinkle the chicken with the remaining 1/2 tsp of salt and the oregano.
  • Cut the chicken across the short side to create strips.
  • Heat the olive oil in a wide skillet over high heat.
  • When the oil is hot, add the chicken.
  • Spread it out into a single layer.
  • Then add the sliced peppers.
  • Cook without stirring for about 5 min - you would like the chicken to brown a little bit. If it seems as if it will burn, stir it.
  • Add the salsa, stir and cook for about 5 more min or until the chicken is cooked through.
  • Remove the skillet from the heat.
  • Stir in the sour cream.
  • Spoon cooked penne into a serving bowl or onto plates.
  • Top with the chicken mixture.
  • Sprinkle with chopped cilantro, if desired, and a little of the shredded cheese.

This is a variation of a chili recipe in which I use Chicken instead of ground beef. I usually make two batchs and freeze individual servings in 1 cup containers. I usually use them up in lunches.

2 large onions, coarsely chopped
1 green pepper, cut in 1/2-inch pcs
2 -3 chicken breasts, cut to 1-inch pcs
1 lb ground chicken
4 stalks chopped celery
4 garlic cloves, chopped
3 tablespoons olive oil
1 tablespoon chili powder
1 (28 ounce) can crushed tomatoes
2 (14 ounce) cans red kidney beans
3/4 cup tomato paste
1/2 cup water
1 tablespoon Tabasco sauce
1 teaspoon salt
2 tablespoons parsley
2 cups sliced mushrooms

Steps:

  • In large pan, over medium heat, cook meat in 2 tbsp olive oil until browned on all sides and ground meat is cooked thru.
  • Add onion and green pepper and cook until soft.
  • Add remaining ingredients, except the mushrooms, stir and bring to a boil.
  • Reduce heat and simmer for 90 minutes
  • Add mushrooms after 1 hour.
  • After 90 minutes remove from heat and place in single serving containers and freeze.

2 cups cooked chicken strips
1/2 teaspoon ground cumin
1/2 teaspoon paprika
4 Old El Paso™ Stand 'N Stuff™ taco shells (from 4.7-oz box)
1 medium red bell pepper, cut into thin strips
1 cup barbecue baked beans (from 16-oz can)
1 cup shredded Monterey Jack cheese (4 oz)
4 slices bacon, crisply cooked, crumbled

Steps:

  • Heat oven to 400°F. In small bowl, toss chicken strips with cumin and paprika to coat. In 8-inch square (2-quart) glass baking dish, stand taco shells side by side.
  • Fill each shell evenly with seasoned chicken. Divide pepper strips evenly over chicken. Top each with 1/4 cup baked beans and 1/4 cup cheese. Sprinkle with bacon.
  • Bake 8 minutes or until thoroughly heated and cheese is melted. If desired, garnish with grape tomatoes.
