3 cups red wine
1 cup sugar
1 cinnamon stick
2 whole cloves
2 to 3 whole peppercorns
1 or 2 strips lemon rind
2 large peaches, halved and pitted
1 pint vanilla bean ice cream
Whipped cream, in canister
Freshly grated nutmeg, to garnish

Steps:

  • Combine the wine, sugar, cinnamon stick, cloves, peppercorns, and lemon rind in a medium saucepan. Bring to a boil, stir to dissolve the sugar, and reduce heat to a bubble.
  • Bring the poaching liquid to a boil and cook on high heat until reduced to a syrupy texture. Add the peaches and poach the fruit, spooning the syrup over them occasionally, until you can pierce the peach easily with a knife, about 5 minutes.
  • Put the peach halves in 2 dessert bowls. Top with ice cream, whipped cream, and drizzle with the poaching syrup. Grate a little nutmeg over the top.

6 medium Bosc pears, peeled with stems intact
1 cup white wine
2 cups water
2 tablespoons sugar
½ vanilla bean, halved lengthwise
2 whole star anise pods
1 small cinnamon stick
1 lemon, zested
1 orange, zested
¼ cup walnut oil
¼ cup red wine vinegar
salt and freshly ground black pepper to taste

Steps:

  • Trim flat the bottoms of pears, and stand them upright in the bottom of a large stock pot. Pour the wine and water into the pot, and turn the flame to high heat. Sprinkle with sugar, and add vanilla bean, star anise, cinnamon stick, and lemon and orange peels. Bring to a boil; reduce heat to medium low, and simmer 20 to 25 minutes. Remove pot from stove, and let cool completely. Reserve 1/4 cup poaching liquid. Transfer pears to a bowl, cover, and refrigerate.
  • Place 2 poached pears in a blender or food processor, and puree. Remove to a large bowl. Whisk in walnut oil, red wine vinegar, and reserved poaching liquid. Season with salt and pepper to taste. Cover, and refrigerate.
  • Place pears in individual bowls, and top with sauce.

1 ½ cups red wine
1 cup water
⅔ cup white sugar
2 tablespoons lemon juice
2 teaspoons ground cinnamon
1 star anise pod
1 (11 ounce) jar chocolate sauce (such as Fran's®)

Steps:

  • Cut bottom off each pear and core from the bottom to give each pear a flat bottom to stand upright.
  • Combine wine, water, sugar, lemon juice, cinnamon, and star anise in a large saucepan; bring to a boil. Reduce heat and arrange pears on their sides in the saucepan. Simmer pears for 10 to 12 minutes. Turn pears and continue simmering until tender and easily poked with a fork, 8 to 10 minutes. Work in batches if needed.
  • Remove pears from wine mixture and place in a serving dish, standing upright. Continue boiling wine sauce until reduced to about 3/4 cup, 5 to 10 more minutes.
  • Fill each pear's core cavity with chocolate sauce. Pour wine sauce over each pear.

Here they're made with slices of toasted pound cake and topped with wine-poached pears and ice cream. It's a dessert that's easy to make and a perfect conclusion to a county-style, French-inspired menu.

4 1/2 cups dry red wine (about 1 1/2 750-ml bottles)
3/4 cup sugar
18 whole black peppercorns
2 6x1-inch strips orange peel (orange part only)
1 bay leaf
3 firm but ripe Bosc or Bartlett pears, peeled, halved, cored
1 1/2 tablespoons cornstarch
1 1/2 tablespoons orange juice
6 1/2-inch-thick pound cake slices, lightly toasted
Vanilla ice cream

Steps:

  • Stir wine, sugar, peppercorns, orange peel and bay leaf in heavy medium saucepan over medium heat until sugar dissolves. Increase heat to high; cover and boil 5 minutes. Add pears. Reduce heat; cover and simmer until pears are tender, turning occasionally, about 10 minutes. Cool to room temperature. Chill until cold, about 6 hours. (Can be made 1 day ahead. Cover and keep chilled.)
  • Remove pears from liquid. Strain liquid into heavy small saucepan. Boil until liquid is reduced to 1 1/2 cups, about 8 minutes. Whisk cornstarch and orange juice in small bowl to blend. Add to saucepan and whisk until sauce boils and thickens, about 1 minute. Remove sauce from heat and cool slightly.
  • Cut pound cake slices diagonally in half. Thinly slice pears lengthwise. Arrange 2 pound cake triangles and 1 sliced pear half on each of 6 plates. Top each with ice cream; drizzle with sauce.

2 cans pears in syrup
1 cup port wine
1/2 cup sugar
1 star anise, optional
1 cinnamon stick, ground, or ground cinnamon, to taste
1 tablespoon vanilla extract
1 sprig fresh rosemary
1 lemon, juiced
1 orange, zested
1/3 cup raspberry filling
Whipped topping, for garnish
Fresh mint sprigs, for garnish

Steps:

  • Strain pears and discard syrup; set pears aside.
  • Combine all ingredients, except the pears and raspberry filling, in a non-reactive saucepan and bring to a boil over high heat. Reduce the heat to a gentle simmer and add the pears. Add enough cold water to cover pears and simmer for 15 to 20 minutes. Once thickened, remove pears and chill.
  • Add raspberry filling to port syrup and bring to a boil. Cook until reduced to the consistency of a glaze. Remove from heat and let cool to room temperature. Spoon pears into bowls and top with glaze. Garnish with whipped topping and fresh mint, if desired.

4 firm but ripe pears, peeled, stems left intact
1 pint vanilla ice cream
1 plain or almond biscotti, crumbled
Orange peel strips (optional)

Steps:

  • Combine first 7 ingredients in heavy large saucepan. Stir over medium heat until sugar dissolves and mixture comes to simmer. Add pears and return mixture to simmer. Reduce heat and simmer slowly until pears are tender when pierced with knife, about 25 minutes. Transfer pears to plate. Boil liquid in saucepan until reduced to 3 cups, about 20 minutes. (Can be made 1 day ahead. Cover and chill pears in poaching liquid. Before serving, rewarm over medium-low heat until pears are heated through.)
  • Arrange 1 warm pear and 1 scoop of ice cream on each of 4 plates. Drizzle some poaching liquid over. Sprinkle with biscotti crumbs. Garnish with orange peel strips, if desired, and serve.

Steps:

  • 1. Bring the first eight ingredients to a boil, then simmer for 10 minutes.
  • 2. Add the pears and poach for 15-20 minutes until tender. Remove the pears and cool.
  • 3. Reduce the poaching liquid until it is a light syrup consistency, then strain.
  • 4. Cut the pears lengthwise into strips and fan them out on a plate. Drizzle the syrup on top. Serve with cinnamon ice cream.
