1 cup uncooked small pasta shells (4 ounces)
1 medium apple, chopped (1 1/4 cups)
1 medium pear, chopped (1 1/4 cups)
4 medium green onions, chopped (1/4 cup)
1/4 cup chopped pecans
1/4 cup dried cranberries
1/3 cup mayonnaise or salad dressing
3 tablespoons orange marmalade
1/2 teaspoon dried marjoram leaves
1/4 teaspoon salt

Steps:

  • Cook and drain pasta as directed on package. Rinse with cold water; drain.
  • In large glass or plastic bowl, mix pasta, apple, pear, onions, pecans and cranberries. Mix all remaining ingredients; stir into pasta mixture.
  • Cover and refrigerate at least 30 minutes until chilled.

1 cup mini farfalle pasta
2 mandarin oranges, peeled and segmented
2 kiwi fruits - peeled, sliced, and quartered
1 medium apple, diced
1 medium Bartlett pear, cored and diced
¼ cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
2 tablespoons pomegranate arils
2 tablespoons minced celery
2 tablespoons lime juice
1 tablespoon honey
1 tablespoon olive oil
1 teaspoon poppy seeds

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook farfalle at a boil, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Rinse under cold water and drain well.
  • Meanwhile, combine mandarin orange sections, kiwi, apple, pear, dried cranberries, pomegranate arils, and celery in a large bowl.
  • Add pasta to the fruit salad, mixing until well combined.
  • Whisk lime juice, honey, olive oil, and poppy seeds together in a small bowl. Pour over pasta salad and stir until combined. Place in the refrigerator until flavors have blended, about 30 minutes.

Winter Salad Recipes: Pear Salad with Balsamic & Walnuts image

This quick & easy pear salad is one of our favorite winter salad recipes!

Number Of Ingredients 11

4 cups mixed salad greens
2 ripe pears (sliced)
1 fennel bulb (sliced paper thin*)
Lemon wedge
2 tablespoons dried cranberries
1 tablespoon chopped pecans
1 tablespoon chopped walnuts
1 tablespoon chopped hazelnuts (or more pecans or walnuts)
⅓ cup shaved pecorino
Balsamic vinaigrette ((store bought, or a 50/50 mix of olive oil & balsamic vinegar))
Sea salt and freshly ground black pepper

Steps:

  • Assemble the salad with the mixed greens and top with the pears and fennel. Squeeze a little lemon over the pears and fennel and toss.
  • Top with the cranberries, pecans, walnuts, hazelnuts, and pecorino. Drizzle with balsamic vinaigrette. Season to taste with salt and pepper.

2 cloves of garlic
a few sprigs of fresh thyme
300 g wild mushrooms
300 g leftover cooked higher-welfare ham or turkey
500 g short pasta
olive oil
3 tablespoons crème fraîche
200 g baby spinach
Parmesan cheese
1 lemon

Steps:

  • Peel and finely slice the garlic, pick the thyme leaves, and clean and tear up the mushrooms. Shred up the leftover ham or turkey.
  • Cook the pasta in a pan of boiling salted water according to the packet.
  • Heat a little oil in a large pan, add the garlic and cook for 1 minute, until golden. Add the thyme, mushrooms, sea salt and black pepper and fry for 5 to 8 minutes.
  • Stir in the ham or turkey, and continue to cook for 5 minutes, so everything gets some colour. Stir in the crème fraîche and remove the pan from the heat. Drain the pasta once cooked - saving a mugful of the cooking water - and let it cool slightly. Toss the pasta with a little oil, then stir into the sauce. Add a little cooking water to loosen, if needed.
  • Stir in the spinach, add a good grating of Parmesan, squeeze in the lemon juice, then season to taste before serving.

  • Start by preparing all ingredients. Peel and remove seeds from butternut squash, and chop into small 1-inch pieces. Quarter cremini mushrooms and cut broccoli into small florets. Mince garlic cloves and chop parsley.
  • Place the chopped butternut squash on one large baking sheet and toss in olive oil, salt, pepper, and 1/2 of the minced garlic. Spread out squash pieces evenly on baking sheet.
  • Place the quartered mushrooms on a separate large baking dish and toss in olive oil, salt, pepper. Place both the mushrooms and butternut squash in the oven. After 15 minutes, remove mushrooms and drain off any liquid (if necessary). Add broccoli florets to the baking dish (toss in a little more oil and add other 1/2 of minced garlic). Return to the oven for 30 minutes.
