2 medium-size ripe Hachiya persimmons
3 1/2 cups whole milk
2/3 cup arborio rice
1/4 cup honey
3 tablespoons sugar
1 1/2 teaspoons grated orange peel
1/4 teaspoon salt
1/2 cup dried cranberries

Steps:

  • Make deep cut in pointed end of each persimmon. Scoop out pulp into processor and puree until smooth. Measure 2/3 cup puree.
  • Combine milk, rice, honey, sugar, orange peel, and salt in medium saucepan. Bring to simmer, stirring until sugar dissolves. Reduce heat to low and cook, uncovered, until pudding is very thick, stirring frequently, about 40 minutes.
  • Add cranberries and cook until softened, stirring frequently, about 5 minutes. Remove from heat and stir in 2/3 cup persimmon puree. Serve pudding warm or at room temperature. (Can be made 2 days ahead. Cover and chill. Bring to room temperature before serving.)

2 Earl Grey tea bags
1 tablespoon butter
½ teaspoon salt
1 cup UNCLE BEN'S® ORIGINAL CONVERTED® Brand Rice
3 cups whole milk
1 cup natural (raw) sugar
2 teaspoons golden rum
2 tablespoons golden raisins
2 tablespoons sweetened dried cranberries
2 tablespoons dried pineapple pieces
1 teaspoon ground cinnamon or cardamom for dusting

Steps:

  • Bring water to a boil in a saucepan over high heat. Steep the tea bags until tea is strong, about 5 minutes. Discard tea bags.
  • Melt the butter in a saucepan over medium heat. Stir in the rice; cook and stir until grains are coated and begin to turn golden, about 2 minutes. Stir in the tea water. Raise heat to medium-high and bring to a boil; reduce heat, cover, and cook on low until most of liquid is absorbed, 15 to 20 minutes.
  • Remove pot from heat. Stir in milk, sugar, rum, raisins, cranberries, and pineapple. Cover; return to stove and cook over low heat until mixture is thickened and silky, 35 to 45 minutes.
  • Spoon into serving dishes and dust with cinnamon or cardamom.

  • Combine milk, rice, sugar, raisins and salt in medium saucepan. Bring to a boil, stirring constantly. Reduce heat to medium-low; simmer 6 minutes, stirring occasionally.
  • Beat eggs and vanilla lightly in a small bowl. Stir small amount of hot mixture into eggs. Stirring constantly, slowly pour egg mixture back into hot mixture. Stirring constantly, cook on low heat 1 minute until thickened. DO NOT BOIL.
  • Remove from heat. Let stand 30 minutes. If desired, sprinkle with cinnamon. Serve warm. Store any remaining pudding in refrigerator.

1 cup arborio or medium-grain rice
5 cups whole milk
1/4 cup raisins
1/2 teaspoon grated orange peel
1/4 vanilla bean, split lengthwise
4 large egg yolks

  • Place rice in strainer and rinse under cold running water until water runs clear. Place rice, milk, raisins, and orange peel in large saucepan. Scrape seeds from vanilla bean into pan; add bean. Bring rice mixture to simmer over medium heat, stirring occasionally. Reduce heat to lowest possible temperature, cover, and simmer, stirring occasionally, until rice is tender, about 23 minutes. Remove from heat. Add egg yolks; stir until thickened, about 1 minute. Stir in sugar.

1 1/2 cups heavy cream
1/3 cup maple syrup
3 whole eggs, plus
3 egg yolks
3/4 teaspoon vanilla extract
1/2 teaspoon nutmeg
1 cup mixed dried fruit, chopped (about 6 ounces)
1/2 cup golden raisin
1 cup cooked wild rice
1 cup cooked brown rice

Steps:

  • Preheat the oven to 325 degrees Fahrenheit. Butter a shallow 1-quart baking dish.
  • In a large bowl, combine the light cream, heavy cream, maple syrup, whole eggs, egg yolks, vanilla, nutmeg, dried fruit, raisins, wild rice, and brown rice.
  • Turn the mixture into the prepared dish and bake, uncovered, for 35 minutes.
  • Stir the mixture in the baking dish and bake for an additional 5 minutes, or until the custard is set. Serve warm or chilled.

1/2 cup sugar
2 teaspoons vanilla extract
3/4 cup long-grain white rice
3/4 cup diced ( 1/2 inch) dried fruits (raisins, apricots, figs, cherries)
1 cup yogurt or sour cream (optional)

Steps:

  • Bring the milk, sugar and vanilla to a boil in a saucepan. Add the rice, mix well, and bring the mixture back to a boil. Cover, reduce the heat to very low, and simmer for about 40 minutes, until the rice is very soft. (The mixture should still be soupy; if it is not, add enough additional milk to make it soupy.)
  • Add the dried fruits to the pudding, mix, and set aside until cooled to room temperature. Spoon into six dessert dishes and serve, if desired, with 1 or 2 tablespoons of yogurt or sour cream on top.

1 cup glutinous rice
1 tablespoon peanuts
1 tablespoon pine nuts
1 tablespoon lotus seeds
8 ounces mixed dried fruit (raisins, kumquats, prunes, dates, etc.)
8 cups water
1/2 cup sugar, more if needed

Steps:

  • Soak the rice in a bowl of cold water for at least 2 hours. Drain well. Soak the peanuts, pine nuts, and lotus seeds in a separate bowl of cold water for at least 1 hour. Drain well. Soak the dried fruits as necessary. Drain well. Chop all the large fruits into small pieces.
  • Bring the water to a boil in a pan, then add the sugar and stir until dissolved. Add the drained rice, peanuts, pine nuts, lotus seeds, and dried fruits. Return to a boil. Reduce heat to very low and simmer, covered, for 1 hour, stirring frequently.
  • The texture of this dish should be that of a very thick soup. Simply add more water to create a slightly thinner version.
