Wonderful Leftover Mac and Cheese image

As a kid, I hated leftover mac and cheese; it just wasn't any good. Then about the time I turned 15, a friend taught me this little trick. The measurements probably aren't perfectly accurate; I usually eyeball it.

4 cups leftover Kraft macaroni and cheese
1 cup cheese (I prefer the Pizza Blend packaged, pre-shredded cheese)
1/2 tablespoon butter or 1/2 tablespoon margarine
4 tablespoons milk

Steps:

  • Heat mac and cheese approximately 30 seconds in the microwave.
  • Stir in milk and butter, then top with cheese.
  • Microwave another 30 seconds and stir well to mix in cheese.

Leftover baked macaroni and cheese, refrigerated for at least overnight
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cayenne
1 egg beaten with 2 ounces water
1 cup panko bread crumbs
Oil for deep frying, preheated to 375 degrees

Steps:

  • Cut refrigerated macaroni and cheese into slices or bite size pieces.
  • Season the flour with salt, pepper and cayenne. Dredge each piece through the flour and gently tap off excess. Dip in the egg wash and then coat with the bread crumbs. Allow them to rest for 5 minutes so the crust can set. Very carefully drop into the oil and fry until golden brown. Remove to a baking sheet fitted with a rack and rest for 2 minutes before serving.

4 Acorn Squashes
5 tablespoons of butter, divided
4 cups of leftover mac and cheese
2 tablespoons of milk (more if needed)
Shredded cheddar cheese
Breadcrumbs

Steps:

  • Preheat your oven to 400 degrees.
  • Cut tops of acorn squash off. Scoop out seeds and pulp leaving about 1-2 inches on the sides and bottom. Place acorn squashes on a baking sheet.
  • Melt 3 tablespoons of butter in the microwave then use a basting brush to spread butter on top and inside of each acorn squash.
  • Bake squash for 40-50 minutes, until tender with a fork.
  • While the acorn squash is baking, reheat the macaroni and cheese by adding in the remaining 2 tablespoons of butter and milk, then reheat in the microwave, stirring a few times when cooking.
  • Remove the acorn squash from the oven, scoop 1 cup of macaroni and cheese into each acorn squash and enjoy!
  • Optional: Top with breadcrumbs, shredded cheddar cheese, and broil for 2 minutes, if desired.
