- In a medium bowl, toss the toss the sliced cucumbers, dried shrimp, beans, and cherry tomatoes; In a small bowl, combine the Thai chilies, palm sugar, fish sauce, and lime juice.Toss the two mixture together. Season to taste.Sprinkle the crushed peanuts then serve.

YUMM TAENG KUA: CLASSIC CUCUMBER SALAD
Steps:
- Put the cucumber and scallion in a small mixing bowl and add the dressing. Mix well and let sit for 10 minutes before serving.
- In a small saucepan, combine the sea salt, fish sauce, palm sugar, and granulated sugar and cook over low heat, stirring, just until the sea salt and sugar are dissolved. Remove from the heat and transfer to a mixing bowl to cool. When cooled completely, stir in the lime juice.

- Finely grind shrimp (if using) in a blender until very fluffy, about 1 minute.
- Stir together lime juice, sugar, and fish sauce in a large bowl until sugar is dissolved, then add cucumber and shallot, tossing to coat.
- Serve salad sprinkled with dried shrimp.

Scouring the cucumbers decoratively, as the Thais would do, makes this dish visually alluring. This recipe comes from a great little book called 'The Best of Thailand'.

- Cut cucumber halves into 2-inch long sections, then cut each section into 1/4-inch thick strips or thick matchsticks.
- Place cucumbers in a bowl.

- Garnish with whole chilies and coriander sprigs.
