YOGURT AND COCONUT FRUIT SALAD



Yogurt and Coconut Fruit Salad image

I made this up yesterday at the grocery store. Alltogether it was about $17, and because there is no actual sugar, it makes you feel good. It was worth every penny. I wanted to add a mango and a little honeydew, but none were available. I could have eaten a pound of it.

1 cup halved strawberry
3/4 whole cantaloupe
1 cup grapes (concord or black)
1 kiwi fruit
1 banana
1/4 lemon
1 ounce slivered almonds
1/2 cup shredded coconut
1/2 cup nonfat plain yogurt
2 tablespoons honey

Steps:

  • Chop canatloupe into 1 inch pieces.
  • Slice and chop kiwi (I left fuzz on).
  • Slice banana (not too thin).
  • Mix yogurt and honey (add or subtract honey according to taste).
  • Mix all in a bowl.
  • Squirt lemon on top.
  • mmmm -- good.

3 bananas, peeled and sliced
1 (11 ounce) can mandarin orange segments, drained
1 cup strawberry, washed, hulled and halved
1/2 cup green seedless grape
1/2 cup red seedless grapes
2 kiwi fruits, peeled, thinly sliced
1/2 cup raisins
1/2 cup nuts, chopped
1/4 cup shredded coconut
1 (15 1/4 ounce) can fruit cocktail, drained
1 pint plain yogurt
artificial sweetener (your choice)

Steps:

  • In a large, clear bowl, combine the fruits, nuts, and coconut and mix well. Cover and refrigerate at least 2 hours.
  • Serve fruit in small bowls and top with plain yogurt just before eating.
  • Sweeten individually with your favorite sweetener.(ex.honey,equal,sweet'n low).

1 container (6 ounces) Yoplait® Thick & Creamy Key lime pie yogurt
2 tablespoons orange juice
2 cups fresh pineapple chunks
1 cup strawberry halves
2 cups green grapes
1 cup blueberries
2 cups cubed cantaloupe
1/4 cup flaked or shredded coconut, toasted

Steps:

  • Mix yogurt and orange juice; set aside.
  • In 2 1/2-quart clear glass bowl, layer fruit in order listed. Pour yogurt mixture over fruit. Sprinkle with coconut. Serve immediately.
