YOGURT AND OLIVE OIL BECHAMEL

Yogurt and Olive Oil Bechamel image

This is a contemporary version of the classic bechamel from a gifted Greek cook Aglaia Kremezi. I couldn't wait to try this. Even my hubby thought it was good, which is about all I can get out of him when he has to eat yogurt. I love the touch of Gruyere cheese, but you may leave it out or add in your favorite cheese.

Provided by FLUFFSTER

Categories     Sauces

Time 25m

Yield 3 cups

Number Of Ingredients 7

4 tablespoons olive oil
4 tablespoons all-purpose flour
2 cups whole cold milk
1 cup whole-milk yogurt
2/3 cup grated gruyere cheese
sea salt, to taste
1 pinch ground black pepper or 1 pinch white pepper

Steps:

  • Whisk the olive oil and the flour together in a saucepan over medium heat. Continue to whisk for about a minute until the mixture starts to froth. Remove from the heat, whisk for a couple of minutes, then pour in the cold milk, while continuing to whisk. Now whisk in the yogurt.
  • Set the saucepan over the heat and, whisking, bring to a boil to thicken. The mixture may look curdled, but don't worry about it, it'll smooth out once it is boiled and thickened.
  • Stir in the grated Gruyere cheese; add in the salt to taste, and the pepper.

OLIVE OIL BéCHAMEL RECIPE - (4.3/5)

Olive Oil Béchamel Recipe - (4.3/5) image

Provided by KEM77

Number Of Ingredients 6

2 tablespoons extra virgin olive oil
2 tablespoons finely chopped shallot or onion (optional)
2 tablespoons flour
2 cups low-fat (1 percent) milk
Salt to taste
Freshly ground white or black pepper

Steps:

  • 1. Heat the oil over medium heat in a heavy medium saucepan. Add the shallot or onion, and cook, stirring, until softened, about three minutes. Stir in flour, and cook, stirring, for about three minutes until smooth and bubbling but not browned. The paste should have the texture of wet sand. Whisk in the milk all at once, and bring to a simmer, whisking all the while, until the mixture begins to thicken. Turn the heat to very low, and simmer, stirring often with a whisk and scraping the bottom and edges of the pan with a rubber spatula, for 10 minutes, until the sauce has thickened and lost its raw flour taste. Season with salt and pepper. Strain while hot into a heatproof bowl or a Pyrex measuring cup. Variation: Substitute vegetable stock for the milk for a vegan version of this sauce. Yield: Makes 1 1/2 cups Advance preparation: You can make a béchamel up to a day ahead of using it. Keep in the refrigerator. If you lay a sheet of plastic or wax paper directly on the top, there is less chance that a skin will form. If it does, whisk vigorously when you reheat the béchamel and the sauce should be as smooth as it was when you made it. Thin out if necessary with milk or stock. OLIVE OIL BéCHAMEL

Olive Oil Béchamel image

Here, a classic French sauce, revisited. Make sure the milk is cold or at room temperature. If the liquid is too hot, the roux won't have time to properly disperse in the liquid before the mixture comes to a boil; this is what causes sauces to lump. The main thing to watch for here is scorching. Stir often with a rubber spatula, especially at the bottom and edges of the pan, so that the mixture doesn't stick and begin to burn. If it does, immediately pour the sauce into another pot and continue to cook over very low heat.

Yield Makes about 2 cups

Number Of Ingredients 10

Cheesecloth
4 cups plain yogurt (do not use low-fat or nonfat)
1 teaspoon sesame seeds
1/2 teaspoon salt
1/4 teaspoon dried summer savory
1/8 teaspoon cayenne pepper
1/8 teaspoon ground cumin
2 tablespoons extra-virgin olive oil
Toasted pita bread triangles

Spoon yogurt into strainer. Gather cheesecloth together; fold over yogurt. Refrigerate at least 8 hours or overnight (liquid will drain out and yogurt will thicken).
  • Combine sesame seeds, salt, summer savory, cayenne and cumin in small bowl. Open cheesecloth at top. Using rubber spatula, transfer drained yogurt to bowl. Drizzle olive oil over. Sprinkle with sesame seed mixture. Place bowl in center of platter; surround with pita bread triangles and olives.
  • Broil tomatoes until skins begin to split and blacken in spots, turning occasionally, about 4 minutes. Cool. Peel tomatoes. Cut into wedges. Arrange peppers, tomatoes and eggs on platter. Sprinkle with tuna and capers. Mix oil and lemon juice in small bowl. Season to taste with salt and pepper. Drizzle dressing over salad.
