Steps:

  • Preheat oven to 450 degrees.
  • Combine first 7 ingredients in a bowl. Beat at medium speed with electric mixer until smooth. Beat at high speed 15 seconds; set aside.
  • DIvide oil evenly among 8 muffin or popover cups. Coat sides of cups with cooking spray. Place muffin cups in oven for 3 minutes. Divide batter evenly among hot prepared cups. Bake for 10 minutes.
  • Reduce oven temperature to 350 degrees. Bake additional 15 minutes or until golden. Serve immediately.

5 bacon strips, chopped
2 tablespoons butter, melted
1-1/2 cups all-purpose flour
3 tablespoons minced fresh sage, divided
1/2 teaspoon salt
1-1/2 cups 2% milk
3 large eggs, room temperature

Steps:

  • Preheat oven to 450°. In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving drippings., Transfer drippings to a measuring cup; add enough melted butter to measure 1/4 cup. Pour into 12 ungreased muffin cups. Place in oven until hot., Meanwhile, in a small bowl, combine the flour, 2 tablespoons sage and salt; beat in milk and eggs until smooth. Fold in two-thirds of the bacon. As legend has it, Yorkshire puddings were traditionally cooked in a pan of fat, at the bottom of a hearth, underneath a large piece of roasting beef. The smoky heat from the fire, along with all the other goodness dripping into the pan from the meat, must've made for quite a delicious pastry. Though limited by modern ovens, we can still come close to the original by using real rendered beef fat, without which you're just eating a popover.

4 large eggs
1 teaspoon kosher salt
⅞ cup all-purpose flour
1 cup whole milk
¾ cup melted beef fat

Steps:

  • Whisk eggs and salt together in a bowl until light and frothy. Whisk in flour and milk until smooth and lump-free; batter will be thin and barely coat the back of a spoon.
  • Transfer batter to a 4-cup measuring cup and chill in the refrigerator, at least 15 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Fill each cup of a 12-cup nonstick muffin tin with 1 tablespoon melted beef fat; use your finger to grease the sides and tops of the cups. Place the muffin tin on a baking sheet.
  • Heat in the preheated oven on the middle rack until fat is smoking hot, 10 to 15 minutes.
  • Remove from the oven and fill each muffin cup halfway full with batter.

I'm very excited to show you this new, and possibly slightly improved, popover recipe. While we may have tweaked the ingredient amounts a little bit, we are still going to be using our foolproof, cold-oven method for making these. The reason this technique is so fun to use, is that it's literally the opposite of everything every popover expert says you should do.

5 large eggs, at room temperature
1 teaspoon kosher salt
1 pinch cayenne pepper, or to taste
2 cups whole milk, at room temperature
¼ cup vegetable oil
2 cups all-purpose flour
1 tablespoon unsalted butter, softened
nonstick vegetable oil cooking spray
½ cup crumbled blue cheese, or to taste

Steps:

  • Whisk eggs, salt, cayenne, milk, oil, and flour together in a large measuring cup or mixing bowl just until blended.
  • Cover the bowl with plastic wrap and allow to rest for 1 hour on the counter, or in the refrigerator for 2 to 3 hours, up to overnight.
  • Grease 14 nonstick muffin cups with butter, and then mist with cooking spray.
  • Whisk the batter for a few seconds and fill each prepared muffin cup 4/5 full. Sprinkle each evenly with blue cheese.
  • Place the muffin pans into a cold oven with a drip pan set underneath. Set the heat to 450 degrees F (230 degrees C). Bake in the oven until popovers are well browned and fully puffed, about 30 to 35 minutes. Poke each popover with a knife to allow steam to escape. Serve hot.

3 large eggs
1/2 teaspoon coarse salt
1 1/2 cups whole milk
1 1/3 cups all-purpose flour, sifted
1/4 cup reserved beef drippings (from Standing Rib Roast)

Steps:

  • In a medium bowl, whisk together eggs and salt until frothy. Whisk in milk, followed by flour, until well combined. Cover and refrigerate batter at least 4 hours, and up to overnight.
  • Preheat oven to 450 degrees with rack set in center of oven.
  • Add beef drippings to reserved pan from Standing Rib Roast and transfer to oven. Heat until hot and sizzling, 4 to 6 minutes.
  • Remove batter from refrigerator and stir. Slide out roasting pan just enough to add batter all at once; batter should be very liquid and spread on its own without tilting. Bake for 12 minutes.
  • Reduce oven temperature to 350 degrees; rotate pan and continue baking until pudding is puffy and nicely browned, about 15 minutes more. Cut into small squares and serve immediately.

1/2 teaspoon salt
1 cup milk
2 eggs
1 -2 ounce roast beef drippings
1 -2 ounce shortening (enough combined with drippings to measure 1/2 cup)

Steps:

  • One half hour before standing rib roast is done, prepare Yorkshire pudding batter. ( Mix all ingredient with hand mixer just until smooth.).
  • Heat 9x9" pan in oven with roast.
  • Remove roast from oven; spoon off drippings and add melted shortening to measure 1/2 cup.
  • Increase oven temperature to 425 degrees; return roast to oven.
  • Place hot drippings in heated square pan; pour in batter.
  • Bake for 10 minutes.
  • Remove roast; continue baking pudding 25-30 minutes longer.
  • Cut pudding into squares and serve.
  • To bake in a large 6 muffin pan: Preheat oven to 375°F.
  • Place pan in oven and heat for 10 minutes.
  • Place equal amounts of the drippings into each muffin mold and continue heating in oven for 10 to 15 minutes.
  • Pour equal amounts of prepared batter into each muffin mold and bake for 15 to 20 minutes or until golden brown.
  • Serve immediately.

25g butter
140g golden caster sugar
4 apples (Cox's are good), peeled, cored and cut into bite-size chunks
1 egg white
2 eggs
140g plain flour
200ml full-fat milk
150g punnet blackberry
2 tbsp sunflower oil

Steps:

  • Heat oven to 240C/fan 220C/gas 9. Heat the butter and 100g of the sugar in a frying pan, throw in the apples and cook over a high heat for 3-4 mins until slightly caramelised and just starting to soften. Set aside.
  • In a clean bowl, whisk the egg white until frothy, then whisk in the rest of the sugar, the whole eggs, the flour and the milk. Stir the apples and the blackberries into the batter.
  • Place a 6-hole non-stick Yorkshire pudding tin over a high heat and add a splash of oil to each hole. Spoon a large ladleful of batter into each hole, making sure all the fruit is used. Put the tin in the oven and leave for 15 mins, without opening the door, until puffed up and golden. Remove from the oven and carefully place each pudding onto a plate. Serve immediately with custard or vanilla ice cream.

Number Of Ingredients 4

140g plain flour (this is about 200ml/7fl oz)
4 eggs (200ml/7fl oz)
200ml milk
sunflower oil , for cooking

Steps:

  • Heat oven to 230C/fan 210C/gas 8.
  • Drizzle a little sunflower oil evenly into two 4-hole Yorkshire pudding tins or two 12-hole non-stick muffin tins and place in the oven to heat through.
  • To make the batter, tip 140g plain flour into a bowl and beat in 4 eggs until smooth.
  • Gradually add 200ml milk and carry on beating until the mix is completely lump-free. Season with salt and pepper.
  • Pour the batter into a jug, then remove the hot tins from the oven. Carefully and evenly pour the batter into the holes.
  • Place the tins back in the oven and leave undisturbed for 20-25 mins until the puddings have puffed up and browned.
  • Serve immediately. You can now cool them and freeze for up to 1 month.
