Prepare the marinade in 5 minutes, marinate 2 hours and then into the oven to bake - too easy! For a budget friendly family meal for 4, serve with chips, a simple salad on vegetables on the side. Preparation time does not include the two hours marinating time required. You can use a large Ziploc bag for the marinade to save on washing up if you wish to. This recipe was made using competition ingredients for Dining on a Dollar comp. For a great home-made ponzu sauce - see recipe#487741 #487741 (You could just make up the small amount as used in this recipe) Alternatively, I think a blend of soy sauce and lime juice would work well

8 chicken drumsticks
4 tablespoons ketchup
2 tablespoons ponzu sauce, see intro for other options (lime and citrus dressing sauce)
2 tablespoons maple syrup
2 teaspoons dried oregano
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
2 tablespoons olive oil or 2 tablespoons vegetable oil
2 tablespoons rice wine vinegar

Steps:

  • Combine all of the marinade ingredients in a large bowl (the bowl must be able to hold all 8 drumsticks).
  • Add the drumsticks and ensure thoroughly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for 2 hours.
  • Preheat oven to 375°F (190°C ).
  • Place chicken drumsticks in a single layer on a baking tray and bake for 40 minutes. Depending on the size of the drumstick, they may need a little longer.
  • Allow to rest for 5 minutes before serving .

If you're looking for a quick, easy way to cook chicken drummies without having to fire up the grill, this is it. I have found this to be the best way to bake chicken legs in the oven. This recipe would also work for chicken thighs or even breast!

8-12 Chicken legs
½-3/4 cup honey
¼ cup ketchup
½ cup Soy sauce
1 tsp minced garlic
Salt & pepper

Steps:

  • Preheat oven to 350 degrees.
  • Spray a lined (with foil) casserole pan (or a cookie sheet) with Pam.
  • Give the drummies a good sprinkling of salt and pepper, on both sides.
  • Mix honey, soy sauce, ketchup and minced garlic together and stir.
  • Pour the mixture over the drummies.
  • Bake the drummies for 45 minutes.
  • Take them out of the oven and turn them over.
  • Raise the temperature to 425 degrees and bake for about 15 more minutes.
  • Remove and let them rest for about 5 minutes.
  • Serve and enjoy! They're yummy!!

8 small red potatoes, quartered

1 tablespoon vegetable oil
1/2 teaspoon garlic-pepper blend
1/4 teaspoon salt

Steps:

  • Unwrap corn; place in bowl of warm water for 15 to 20 minutes to partially thaw.
  • Meanwhile, heat oven to 425°F. Spray 15x10x1-inch pan with cooking spray. In large bowl, place chicken drummettes, potatoes and bell pepper.
  • Drain corn; add to chicken mixture. Add mustard-mayonnaise sauce, oil, garlic-pepper blend and salt; toss to coat well. Spread mixture in pan.
  • Bake 40 to 50 minutes or until juice of chicken is clear when thickest part is cut to bone (180°F), stirring and turning chicken and vegetables once during baking.

1 ½ pounds chicken drumsticks
¼ cup extra-virgin olive oil
1 teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon paprika
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon cayenne pepper
1 ½ cups barbeque sauce (such as Sweet Baby Ray's®), or more to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil.
  • Mix olive oil, salt, pepper, paprika, garlic powder, onion powder and cayenne together in a large bowl. Add drumsticks and toss to coat. Spread out on the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes. Remove from oven and brush with barbeque sauce. Bake for 7 to 8 minutes. Flip drumsticks, brush with barbeque sauce, and bake an additional 7 to 8 minutes.
  • Set an oven rack about 6 inches from the heat source and turn on the oven's broiler.
  • Brush drumsticks with more barbeque sauce and broil for 3 to 4 minutes. Flip drumsticks, brush with barbeque sauce, and broil until chicken is no longer pink at the bone and the juices run clear, 3 to 4 more minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

6 (4 ounce) bone-in chicken drumsticks, with skin
6 tablespoons unsalted butter
½ cup extra-virgin olive oil, divided
1 pinch garlic salt, or to taste
1 pinch seasoned salt, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a glass baking dish with aluminum foil.
  • Spread 1/4 cup of olive oil over the bottom of the prepared baking dish and line up drumsticks on top, alternating directions so that they fit. Top with 1 tablespoon of butter each, on the thick part of the chicken. Sprinkle with garlic salt, seasoned salt, salt, and pepper.
