ZUCCHINI AND POBLANO CASSEROLE

1 cup Original Bisquick™ mix
3/4 cup milk
2 eggs
3 tablespoons olive oil
1 medium onion, cut into julienne (matchstick-cut) strips
1 clove garlic, finely chopped
8 small zucchini, finely chopped
4 poblano chiles, roasted, peeled and cut into julienne (matchstick-cut) strips
1 cup frozen whole kernel corn
1 can (14.5 oz) petite diced tomatoes, undrained
1/2 cup whipping cream
3 tablespoons cornstarch
1/3 cup sour cream
1 teaspoon coarse salt (kosher or sea salt)
1/2 teaspoon chicken boullion granules
2 tablespoons chopped fresh cilantro
1 1/2 cups shredded Oaxaca (or asadero) cheese (6 oz)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch glass baking dish with cooking spray. In small bowl, stir crepe ingredients until blended.
  • Grease 6- or 7-inch skillet with shortening; heat over medium-high heat. For each crepe, pour 2 tablespoons batter into skillet; rotate skillet until batter covers bottom. Cook until golden brown. Gently loosen edge with metal spatula; turn and cook other side. Stack crepes as removed from skillet, placing waxed paper between each. Cover stack with cloth towel to prevent crepes from drying out.
  • In 3-quart saucepan, heat oil over medium-high heat. Add onion and garlic; cook 3 minutes. Add zucchini, chiles, corn and tomatoes; cook 4 minutes. In small bowl, stir whipping cream and cornstarch until blended; stir into vegetable mixture. Add sour cream, salt and bouillion; cook and stir about 2 minutes until mixture boils. Stir in cilantro.
  • Place 6 crepes in bottom of baking dish. Spread filling over crepes; sprinkle with half of the cheese. Top with remaining crepes; sprinkle with remaining cheese. Bake 20 minutes or until golden brown.

4 poblano chile peppers
4 tablespoons unsalted butter
3 cloves garlic, minced
2 cups fresh or frozen corn kernels (thawed if frozen)
2 cups heavy cream
1 teaspoon fresh thyme
Kosher salt and freshly ground pepper
1/2 cup thinly sliced white onion
1 large zucchini, thinly sliced lengthwise
12 (7-by-3-inch) no-boil lasagna sheets
2 cups shredded Oaxaca or mozzarella cheese

Steps:

  • Preheat the broiler. Halve the poblanos lengthwise and remove the stems and seeds. Place cut-side down on a baking sheet and broil until browned in spots, about 5 minutes. Transfer to a bowl, cover with a plate and set aside 5 minutes. Peel off the skin with your fingers, then cut the peppers into 1-inch strips. Melt 2 tablespoons butter in a medium heavy saucepan over medium heat. Add 2 minced garlic cloves and saute 1 minute. Mix in the corn and saute 5 minutes. Stir in the cream and thyme, reduce the heat to medium low and cook 5 minutes to let the flavors incorporate. Turn off the heat and let cool slightly, then transfer to a blender and puree until smooth. Add 1/4 teaspoon salt, and pepper to taste. Preheat the oven to 350 degrees F. Heat the remaining 2 tablespoons butter in a medium heavy skillet over medium heat. Add the onion and saute until translucent, about 5 minutes. Add the remaining minced garlic clove and cook 1 minute. Mix in the zucchini and poblano strips and cook 5 minutes; season with salt and pepper. Spread about one-quarter of the corn mixture in the bottom of an 8-by-11-inch flameproof baking dish. Cover with 3 lasagna sheets. Layer one-quarter each of the poblano mixture and cheese over the pasta. Repeat the layering 3 more times. Cover with aluminum foil. Bake until the pasta is tender, about 50 minutes. Turn on the broiler. Remove the foil and broil until golden brown and bubbly, 8 to 10 minutes. Let stand 15 minutes before serving.

Nonstick cooking spray
3 large poblano chiles, charred, stemmed, seeded, and cut into 2-inch wide by 1/2-inch-thick strips
1 cup frozen corn, thawed
1/2 cup half-and-half
1/2 cup Mexican crema, or creme fraiche
4 Yukon gold potatoes (about 1 pound), unpeeled and cut into 1/8-inch thick rounds
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3 cup coarsely grated Monterey Jack cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • Spray a glass 9 1/2-inch, deep dish pie dish with nonstick cooking spray. Set aside.
  • In a medium bowl, combine the poblano strips and corn.
  • In a small bowl, mix together the half-and-half and crema.
  • Arrange 1/2 of the potato rounds, overlapping slightly, in the prepared pie dish. Sprinkle 1/2 of the poblano-corn mixture on top, season with the salt and pepper, and top with 1/3 of the cheese. Repeat the layers, ending with the cheese. Pour the cream mixture over the potatoes. Place the pie dish on a baking sheet. Cover the dish tightly with foil. Bake for 30 minutes. Remove the foil and continue baking until the potatoes are tender and the cheese is golden brown, about 30 minutes longer.
  • Let stand 10 minutes before serving.
  • Cook's Note: For easy peeling, enclose the charred poblanos tightly in a plastic bag.

Steps:

  • Char poblano chilies and bell pepper over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel and seed chilies and pepper; cut into 1/2-inch pieces.
  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add half of zucchini; sauté until brown, about 7 minutes. Using slotted spoon, transfer to medium bowl. Repeat with remaining zucchini. Discard oil from skillet; wipe skillet clean. Heat remaining 2 tablespoons oil in same skillet over medium-high heat. Add onion and garlic; sauté until onion begins to soften, about 5 minutes. Add chilies and pepper and stir until heated through, about 3 minutes. Stir in zucchini and corn. Reduce heat to medium, cover and cook until corn is tender, stirring occasionally, about 5 minutes. Season with salt and pepper.

3 medium zucchinis, sliced
2 medium onions, sliced
3 tablespoons olive oil
salt and ground black pepper to taste
1 (16 ounce) package penne pasta
1 (28 ounce) jar marinara sauce
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Toss zucchinis and onions in a large bowl with olive oil until evenly coated. Spread vegetables into a large baking dish.
  • Roast vegetables in the preheated oven until golden, about 30 minutes. Season with salt and pepper. Reduce oven heat to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes; drain.
  • Lightly grease a 9x13-inch baking dish.
  • Heat marinara sauce in a saucepan over medium heat until sauce is hot. Spread hot marinara sauce into the prepared baking dish, followed by penne pasta and zucchini mixture. Sprinkle Parmesan cheese atop vegetables.
  • Bake in the preheated oven until sauce is bubbly, 35 to 40 minutes. Allow casserole to rest for 5 minutes before serving.

I came up with this when I completely messed up on buying the ingredients needed to make Delicious Chicken Poblano #98285. Rather than review with a bunch of changes, I am posting it as new. It was very good, my family of 4 polished off the whole thing. Served with taco toppings and spanish rice it was great. My kids put theirs over Fritos.

1 small yellow onion, diced
2 cloves garlic, minced
1 (12 1/2 ounce) can swanson chicken, plus
1 (5 ounce) can swanson chicken
2 poblano peppers, seeded and diced
1/2 cup sour cream
8 ounces half-and-half
2 cups colby-monterey jack cheese
salt, to taste
pepper, to taste
1 tablespoon cumin, to taste

Steps:

  • Preheat oven to 350.
  • Saute onion, garlic and peppers in olive oil until soft.
  • Pour all into food processor or blender and blend with half n half and sour cream and seasonings.
  • Mix pepper mix with chicken and 1 cup cheese and pour into greased casserole dish.
  • Top with remaining cheese.
  • Bake for 35 minutes covered, then uncover and bake another 10-15 minutes until golden and bubbly on top.

I've begun making my enchiladas casserole style, which saves a lot time, not to mention burned fingers. :) However, everyone still raves over my enchiladas, and this recipe recently earned a round of applause when I made them on a skiing holiday. The sauce is actually a modified Alfredo recipe and is also great over fajitas.

6 tablespoons butter, divided
6 skinless, boneless chicken breast halves
2 fresh poblano peppers, seeded and sliced into strips
4 fresh jalapeno peppers, seeded and diced
2 cloves garlic, chopped
1 lime, halved
¼ cup all-purpose flour
1 pint half-and-half
1 bunch fresh cilantro, chopped
1 (8 ounce) package fresh mushrooms, sliced
2 ounces sour cream
12 (6 inch) corn tortillas
4 cups shredded mozzarella cheese

Steps:

  • Melt 2 tablespoons butter in a large skillet over medium heat. Place the chicken breasts in the skillet. Mix in the poblano peppers, jalapeno peppers, and garlic. Squeeze the juice from one lime half over the chicken, and place the lime peel and pulp into the skillet. Cover, and simmer 25 minutes, stirring occasionally, until chicken juices run clear. Remove from heat, cool, and cut chicken into cubes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 1/4 cup butter in a medium saucepan over low heat. Gradually stir in the flour and half-and-half. Mix in the cilantro, mushrooms, sour cream, and juice of remaining lime half. Cook and stir 10 minutes, until mushrooms are tender.
  • Line the bottom of a 9x13 inch baking dish with 6 tortillas. Arrange 1/2 the chicken and pepper mixture over the tortillas. Sprinkle with 1 cup cheese, and cover with remaining tortillas. Layer with remaining chicken and pepper mixture, and pour the cilantro sauce evenly over the casserole. Top with remaining cheese.
  • Bake 25 minutes in the preheated oven, until cheese is melted and lightly browned.
