Zucchini & Spaghetti Squash

2 About 2 cups Homemade sauce (or your favorite red sauce)
1 medium zucchini thinly sliced (I used the slice setting on my cheese grater)
2-2 1/2 About 2-2 1/2 cups cooked spaghetti squash
1/2 cup fat free ricotta cheese
3 oz fancy shredded mozzarella cheese
Ground pepper
Dried parsley flakes

Steps:

  • Preheat the oven to 350 degrees. In a casserole dish, smear a little of the sauce on the bottom to prevent sticking then begin layering zucchini, top with a bit of squash, dab on ricotta (I crumpled the best I can to cover the area), sprinkle with a bit of the shredded cheese, add some sauce repeat until you are out of ingredients. Repeat the layering until you are out of ingredients. Be sure the save a bit of mozzarella cheese for the top. If you use fancy shredded cheese it tends to go a bit further. Sprinkle the top with some ground pepper and dried parsley. Bake uncovered for at about 45 minutes until zucchini is tender. During the baking process there will be a lot of water, no pasta to soak it up. About every 10-15 minutes use a turkey baster to remove some excess water. You will be able to get 6 servings like the one pictured above. 4 zucchini - peeled and cut
1 Vidalia onion - diced
5 cloves of garlic - chopped
1/2 cup fresh Italian parsley - chopped
29 oz. can of crushed tomatoes
3-4 tbs. red wine
1 tsp. salt
1 tsp. black pepper
1 tbs. dried oregano
1/2 tsp. red pepper flakes
1/2 tsp. sugar
16 oz. mozzarella - shredded
1/2 lb. sliced salami
1/4 cup Italian style breadcrumbs
2 lbs. your favorite spaghetti
Olive oil

Steps:

  • Heat a saucepot with 2-3 tablespoons of olive oil. Add the onions, garlic, zucchini and Italian parsley and sauté until the onions are softened and the garlic fragrant. Add the crushed tomatoes, seasonings and wine and simmer on low while preparing the spaghetti. Preheat Oven 325 degrees Drain the spaghetti; place in a bowl and toss with some of the sauce, reserving a little sauce for between the layers and the top of the "lasagna". Drizzle a little olive oil at the bottom of a large baking pan. Place 1/3 of the spaghetti at the bottom of the pan then a layer of salami and shredded mozzarella. Repeat the process until you have used the spaghetti and the sauce. Bake for 45-50 minutes. Let rest for at least 15 minutes before cutting.

½ pound bulk Italian sausage
1 onion, chopped
4 cloves garlic, minced
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh oregano
2 tablespoons brown sugar
1 tablespoon red pepper flakes, or to taste
1 teaspoon salt
½ teaspoon ground black pepper
1 (14.5 ounce) can diced tomatoes
1 (12 ounce) can tomato paste
2 eggs
2 cups ricotta cheese
1 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley
1 teaspoon salt
3 large zucchini, trimmed
2 cups shredded mozzarella cheese, divided
2 tablespoons grated Parmesan cheese
1 cup shredded mozzarella cheese

Steps:

  • Cook and stir ground beef, Italian sausage, onion, and garlic in a large skillet over medium heat until the meat is crumbly and no longer pink, about 10 minutes. Drain grease and stir basil, oregano, brown sugar, red pepper flakes, 1 teaspoon salt, black pepper, tomatoes, and tomato paste into the meat. Bring to a boil, reduce heat to low, and simmer meat sauce for 30 minutes. Stir occasionally.
  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Mix eggs, ricotta cheese, 1 cup Parmesan cheese, parsley, and 1 teaspoon salt in a bowl until thoroughly combined. Pare several slices of skin lengthwise from zucchini, alternating with strips of remaining skin. Cut zucchini into long strips to resemble lasagna noodles. Discard seedy middle strips.
  • Place 1/3 of the zucchini strips into bottom of the prepared baking dish, filling in any gaps with scrap pieces of zucchini. Spread half the ricotta mixture over zucchini; spread 1 cup of mozzarella cheese over ricotta mixture; spread 1/3 of the meat sauce over mozzarella cheese. Repeat layers once more, layering 1/3 of zucchini strips, remaining half of the ricotta mixture, 1 more cup of mozzarella cheese, and 1/3 of the meat sauce. Make a third layer of remaining zucchini strips, remaining meat sauce, and 2 tablespoons Parmesan cheese sprinkled on top.
  • Bake in the preheated oven until lasagna is bubbling and top is browned, about 1 hour. If top is browning too quickly, cover dish with aluminum foil during last 15 minutes of baking time. Spread 1 cup mozzarella cheese on top of the casserole and bake until mozzarella cheese topping is melted, 5 to 10 more minutes. Let casserole stand 10 minutes before serving.

After listening to Stanley Tucci lose his mind about this pasta and calling it life-changing and one of the best things he's ever eaten, I decided I'd give it a try. The results were amazing and the key to getting the toasted sweet taste of the zucchini was deep-frying it!

1 quart sunflower oil, or as needed
6 medium green zucchini
4 ounces spaghetti
2 tablespoons olive oil
1 pinch salt
2 basil leaves, torn into small pieces
2 tablespoons unsalted butter
5 tablespoons grated Pecorino Romano cheese
3 tablespoons grated Parmigiano-Reggiano cheese

Steps:

  • Place sunflower oil in a deep fryer and heat to 350 degrees F (175 degrees C). Slice zucchini into 1/8-inch rounds.
  • Add some zucchini to the hot oil and deep-fry until lightly browned, 4 to 5 minutes. Transfer to a single layer on paper towels to drain and repeat to cook remaining zucchini. Let zucchini cool to room temperature.
  • Transfer cooled zucchini to a bowl. Cover and refrigerate, 8 hours to overnight.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until it's 2 minutes away from being tender yet firm to the bite, 9 to 10 minutes.
  • As you are cooking the spaghetti, heat olive oil in a skillet over medium heat. Add zucchini and salt and cook, stirring occasionally, until it starts to release juices, soften, and break down, 3 to 5 minutes. Add a couple splashes of the pasta water to the zucchini, but don't overdo it. Break zucchini into small pieces with the edge of a spoon or spatula. Reduce heat to low and toss in basil and butter; stir until butter melts.
  • Grab spaghetti with tongs and transfer it right into the sauce; stir until coated. Mix in Pecorino Romano and Parmigiano-Reggiano cheeses. Add a final splash of pasta water and adjust salt if needed.
  • Serve with more grated cheese and fresh basil.

1/4 cup chopped onion
1/2 teaspoon dried oregano
1/2 teaspoon dried basil

1 cup 2% cottage cheese
4 medium zucchini (about 1-3/4 pounds)

Steps:

  • Preheat oven to 375°. In large skillet, cook and crumble beef with onion over medium-high heat until no longer pink, 5-7 minutes. Stir in seasonings and tomato sauce. 4 medium zucchini, sliced lengthwise and cut into 1/2-inch slices
1 tablespoon salt, or more to taste

1 large red bell pepper, diced
1 (26 ounce) jar marinara sauce
1 (8 ounce) package mozzarella cheese, grated

Steps:

  • Salt zucchini slices on a plate and let sit for 10 to 15 minutes while you dice the rest of the ingredients.
  • Heat a large skillet or wide pot over high heat. Add oil, onion, and garlic, and sauté until the onion gets a little brown and becomes translucent, about 5 minutes.
