Tasty chicken enchiladas made with zucchini wrappers instead of tortillas!

Number Of Ingredients 7

2 cups cooked chicken, shredded or sliced/diced
1 cup black beans, drained and rinsed
1 cup corn (fresh or frozen)
2 cups enchilada sauce
2 pounds zucchini (~2-4 medium-large), sliced thinly lengthwise*
1 cup cheddar cheese, shredded
2 tablespoons cilantro, chopped (optional)

Steps:

  • Mix the chicken, beans, corn and 1 cup of the enchilada sauce.
  • Spread 1/2 cup enchilada sauce over the bottom of a large baking pan/dish.
  • Place 2-3 slices of zucchini down on a working surface (enough slices to form a 3-4 inch wide roll), overlapped a little, and place 2-3 tablespoons of the chicken filling on, before rolling up and placing in the baking pan. Repeat until all of the filling and zucchini has been used, about 24 rolls.
  • Drizzle the remaining 1/2 cup enchilada sauce of the top of the rolls, followed by the cheese.
  • Bake in a preheated 375F/190C oven until the cheese has melted and the sides are bubbling, about 20-25 minutes.
  • Enjoy, garnished with cilantro!

2 cups shredded chicken, cooked
1 teaspoon salt
1 onion, diced
1 red bell pepper, diced
1 jalapeño, diced
2 cups shredded monterey jack cheese, divided
1 teaspoon garlic powder
1 tablespoon paprika
1 teaspoon chili powder
1 teaspoon salt
½ teaspoon pepper
1 lime, juiced
1 cup red enchilada sauce
4 zucchinis
fresh cilantro, chopped, for ganish

Steps:

  • In a bowl mix together chicken, onion, red bell pepper, jalapeno, 1 cup of Monterey Jack (100 g), enchilada sauce, lime juice, garlic powder, chili powder, salt, pepper. Mix thoroughly and set aside until ready to use.
  • With a peeler, peel slices of zucchini vertically. Once you can no longer peel a whole slice of zucchini peel the rest into smaller strips and save for zoodles!
  • Preheat the oven to 400˚F (200˚C).
  • Spread chicken mixture on to a slice of zucchini and roll into a tight spiral.
  • Place in a greased springform pan and bake for 15 minutes. Sprinkle with the rest of the cheese and bake for 10 more minutes until cheese has melted.
  • Transfer to a plate and sprinkle with cilantro.
  • Serve immediately.

Low-Carb Zucchini

Here's what you need: medium zucchinis, olive oil, garlic, fresh spinach, ricotta cheese, fresh basil, salt, pepper, marinara sauce, shredded mozzarella cheese

Number Of Ingredients 10

2 medium zucchinis
olive oil, to taste
2 cloves garlic, minced
2 cups fresh spinach, chopped
1 cup ricotta cheese
2 tablespoons fresh basil, finely sliced
salt, to taste
pepper, to taste
1 cup marinara sauce
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 425°F (220°C).
  • Cut off the end of each zucchini then using a vegetable peeler, peel each zucchini into wide strips.
  • Transfer the zucchini strips to a plate then layer two strips vertically and two strips horizontally to make a cross. Repeat process with remaining strips.
  • Heat a pan over medium-high heat.
  • Add olive oil then garlic and sauté for 30 seconds to 1 minute.
  • Add spinach, salt, and pepper. Sauté for 1-2 minutes, until wilted down.
  • Remove from heat and allow to cool for 10 minutes.
  • In a large bowl, add the spinach and garlic. Add the ricotta, basil, salt, and pepper. Mix until well combined.
  • Using a spoon or cookie scoop, scoop approximately 1 tablespoon of the mixture and place in the middle of each zucchini noodle cross.
  • Fold each side to seal the ricotta mixture then flip over the ravioli so the seam side is on the bottom.
  • In a baking dish pour the marinara sauce then smooth with a spatula.
  • Evenly place the zucchini raviolis then top with mozzarella cheese.
  • Bake for 15-20 minutes.
  • Serve with fresh basil.
  • Enjoy!

1 boneless, skinless chicken breast, sliced into ½-inch (1 cm) pieces
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon chili powder
2 teaspoons olive oil
½ cup salsa, mild
1 zucchini, cut in half lengthwise, centers hollowed out
2 tablespoons shredded cheddar cheese
1 roma tomato, diced
¼ avocado, dinced
2 tablespoons chopped cilantro
1 lime, cut into wedges
½ cup nonfat greek yogurt, plain
1 tablespoon lime juice
¼ teaspoon salt

Steps:

  • Preheat oven to 375˚F (190˚C).
  • Cut zucchini in half and hollow out the centers
  • Add the Greek yogurt, lime juice, and salt together in a small bowl and stir to combine.
  • On a cutting board, season the chicken breast with salt, pepper, and chili powder.
  • Heat olive oil in a large pan over medium heat. Once the oil begins to shimmer, add the chicken and cook until browned, about 3 minutes.
  • Remove the chicken from the pan and let cool. Once cooled, shred the chicken with a fork.
  • Add the chicken to a bowl with the salsa and stir to combine.
  • Stuff chicken mixture in hollowed out zucchini boats, and top with cheddar cheese.
  • Bake until cheese is melted and browned, and zucchini is tender, about 20 minutes.

½ yellow onion, diced

1 can black beans, drained and rinsed

1 ½ cups enchilada sauce, divided
½ lime, juiced

1 teaspoon cumin
½ teaspoon chili powder
4 zucchinis
½ cup shredded cheddar cheese
sour cream, for serving
fresh cilantro, for serving

Steps:

  • Preheat oven to 375°F (190°C).
  • In a pan over medium heat, add the oil and the onions and cook until the onions are translucent.
  • Add the garlic and stir to combine.
  • Add the black beans, corn, 1 cup (290 g) of enchilada sauce, lime juice, salt, cumin, and chili powder, and stir until combined. Cook until just simmering. Set aside.
  • Cut off the end of each zucchini then using a vegetable peeler, peel each zucchini into wide strips.
  • Place 4-5 zucchini strips on a plate and spoon a large spoonful of filling at the bottom of the strips.
  • Fold the ends of the zucchini over the filling and continue to roll, tightly.
  • Transfer the zucchini rolls to a baking dish.
  • Spoon over the remaining enchilada sauce and top with cheese.
  • Bake for 15-20 minutes or until cheese is melted.
  • Serve with sour cream and cilantro.
  • Enjoy!
