SPICED PECANS

1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon dried ground orange peel
1 pound pecan halves
4 tablespoons unsalted butter
1/4 cup packed light brown sugar
2 tablespoons packed dark brown sugar
2 tablespoons water

Steps:

  • Line a half sheet pan with parchment paper and set aside.
  • Mix the salt, cumin, cayenne, cinnamon and orange peel together in a small bowl and set aside.
  • Place the nuts in a 10-inch cast iron skillet and set over medium heat. Cook, stirring frequently, for 4 to 5 minutes until they just start to brown and smell toasted. Add the butter and stir until it melts. Add the spice mixture and stir to combine. Once combined, add both sugars and water, stirring until the mixture thickens and coats the nuts, approximately 2 to 3 minutes.
  • Transfer the nuts to the prepared sheetpan and separate them with a fork or spatula. Allow the nuts to cool completely before transferring to an airtight container for storage. Can be stored up to 3 weeks.

16 ounces pecan halves ( (about 4 cups))
4 tablespoons unsalted butter
⅓ cup packed light brown sugar
2 tablespoons water

Steps:

  • Line a half sheet pan with parchment paper; set aside.
  • Mix the salt, cumin, cayenne, cinnamon and cardamom in a small bowl; set aside.
  • Place the nuts in a medium skillet over medium heat. Cook, stirring nearly constantly, for 4 to 5 minutes until they start to brown and smell like they are toasting.
  • Add the butter and stir until melted. Add the spices and stir until combined. Add sugar and water, stirring until the mixture thickens and coats the nuts, approximately 2 to 3 minutes.
  • Transfer the nuts to the prepared pan and separate them with a fork. Cool completely before transferring to an airtight container for storage.

5 Minute Spiced Pecans image

5 minute spiced pecans are cooked on the stove top. They are sweet, crunchy, and slightly spicy. They make a great snack or appetizer to a meal. They are good in salads, yogurt, oatmeal etc. They would also make a great edible gift.

Number Of Ingredients 8

1/4 cup coconut sugar
1/4 teaspoon fine sea salt
1/2 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
Optional: Pinch to 1/8 of a teaspoon of cayenne pepper, depending on how spicy you like it.
1 cup raw pecans*
1 tablespoon coconut oil (or can sub butter)
Optional: course sea salt

Steps:

  • In a small bowl mix together the sugar and the spices.
  • Heat a large nonstick skillet on medium high heat. Lay a silpat mat or a large sheet of parchment paper onto the counter right next to the pan you will be cooking the nuts in.
  • Once the pan has heated up add all of the ingredients to the pan. Use a spatula to stir the nuts constantly for about 4 to 5 minutes, or until the sugar has melted. The sugar will still be in a sort of gloppy form, that's okay, but there shouldn't be any more granules of sugar.
  • Working quickly pour the pecans onto the parchment paper/silpat mat and quickly use your spatula to spread out the nuts as much as possibly. It's okay if some clumps remain but you don't want them to be in a huge pile. Quickly sprinkle on the course sea salt so that it sticks onto the melted sugar. This step is completely optional.
  • Once cooled completely use your fingers to break up the bigger clumps as needed. Transfer to an air tight container or a jar and store at room temperature for up to a month. Enjoy them as a snack or in salads, oatmeal, yogurt etc. They also make a great edible gift.

Number Of Ingredients 8

1 large egg white
1/4 cup sugar
1 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon ground allspice
1/2 teaspoon ground cumin
1 3/4 teaspoons cayenne pepper
2 1/2 cups pecan halves, or assorted nuts, such as cashews, walnuts, or almonds

Steps:

  • Preheat oven to 300 degrees. Beat egg white until soft and foamy. Combine all remaining ingredients except pecans; whisk into egg white. Stir in pecans until well coated; spread mixture in single layer onto an ungreased baking pan.
  • Bake pecans for 15 minutes, then remove from oven. Using a metal spatula, toss, stir, and separate nuts. Reduce oven to 250 degrees and return nuts to bake until medium brown, about 10 minutes. Remove from oven; toss, and stir again. Place baking pan on wire rack to cool (they will crisp as they cool). Break up any that stick together.

1 egg white, lightly beaten
1 tablespoon water
3 cups pecan halves
½ cup white sugar
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • In a small bowl beat the egg white with the water. Stir in the pecans, mixing until well moistened.
  • In a small bowl, mix together sugar, salt, cinnamon, cloves and nutmeg. Sprinkle over the moistened nuts. Spread nuts on prepared pan.
  • Bake in preheated oven for 30 minutes, stirring once or twice. Be careful not to overcook and burn the nuts.

Nonstick cooking spray or vegetable oil
2 tablespoons egg white (1 extra-large egg)
1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon chile powder
1/4 teaspoon ground cloves
Kosher salt and freshly ground black pepper
2 cups whole pecan halves (8 ounces)
1/2 teaspoon fleur de sel

Steps:

  • Preheat the oven to 300 degrees F. Spray a sheet pan with the cooking spray or brush it lightly with oil.
  • Place the egg white in a large bowl and whisk vigorously for 15 seconds, until light and frothy. Whisk in the brown sugar, vanilla, cinnamon, ginger, chile powder, cloves, 1 teaspoon kosher salt, and 1/2 teaspoon pepper. Add the pecans and mix well, until thoroughly coated. Pour the mixture, including any liquid, onto the prepared pan and spread in a single layer. Bake for 30 minutes, tossing twice with a metal spatula. Each time you toss the pecans, spread them out again in one layer. When they're done, sprinkle with fleur de sel and allow to cool completely; they will crisp as they cool. Serve at room temperature.

2 tablespoons cayenne pepper
1 1/2 teaspoons paprika
1/2 cup sugar
2 large egg whites
5 cups (20 ounces) pecans

Steps:

  • Preheat oven to 300 degrees. Line 2 rimmed baking sheets with parchment paper. In a bowl, combine salt, cayenne pepper, paprika, and sugar.
  • In a medium bowl, whisk egg whites until foamy. Whisk in spice mixture. Stir in pecans. Spread coated pecans in a single layer onto the baking sheets. Bake for about 15 minutes, then reduce oven temperature to 250 degrees. Rotate the sheets in oven, and cook for 10 minutes more.

Steps:

  • Use a large skillet. The pecans should be more or less in one layer. Nonstick works well.
  • Melt the butter in the skillet and add the hot pepper.
  • If you are using liquid artificial sweetener, add it now.
  • Add pecans to skillet and cook over medium heat.
  • Stir every 30 seconds.
  • After 2 or 3 minutes, stir them pretty much constantly until they just begin to brown.
  • Pecans burn quickly, so you do have to keep your eyes on them.
  • If the butter starts smoking before this point, kill the heat and call them done.
  • Stir in cinnamon, salt, and powdered sweetener if you're using it.
  • Remove from pan to bowl (pecans can still burn sitting in the hot pan).
  • When they are cool enough to taste, adjust seasonings if you want more salt or sweetener.
