A very moist spice cookie that people will rave about. Makes a great after-school snack, or a tasty cookie on your Christmas cookie tray.

- Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
- In a medium bowl, cream together the brown sugar and shortening until smooth. Stir in the egg, and then the applesauce until well blended. Combine the flour, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the applesauce mixture. Mix in walnuts and raisins. Drop by teaspoonfuls onto the prepared cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for a few minutes before removing to wire racks to cool completely.

- Preheat oven to 400 degrees F (200 degrees C).
- In large bowl, cream together the butter and sugar. Beat in the egg, amaretto, and almonds. Gradually mix in the flour until well blended. Drop by teaspoonfuls 2 inches apart on ungreased cookie sheets.
- Bake 5 to 8 minutes in the preheated oven, or until cookies are lightly colored.

- Preheat oven to 350F (175C). Line a cookie sheet with parchment paper.
- If leaving skin on, scrub apple well. Otherwise, peel the apple.
- Core and cut apple into chunks; process in a food processor, stopping to scrape down sides, until pureed (mixture will look like raw apple sauce). Measure 1/2 cup (125 mL) of the puree.
- Place the almond flour in a medium bowl. Add the 1/2 cup (125 mL) apple puree, cinnamon and (optional) salt. Stir until completely blended.
- Using a small cookie scoop or a tablespoon, drop dough in 12 mounds, spacing 2 inches apart, on prepared cookie sheet.
- Bake in the preheated oven for 15 to 18 minutes until golden brown and centers of cookies feel firm to the touch. Transfer cookies to a cooling rack and cool completely.

Steps:
- In a bowl mix together almond flour, cinnamon, nutmeg, baking soda and salt, set aside.
- Peel and finely grate the apple. Wrap the pulp in a paper towel and squeeze out the juice. Put the pulp in the bowl with the flour mix and DISCARD the juice.
- Add the egg, butter and honey to the flour, mix well.
- Butter the cookie sheets and drop the dough in small mounds, 8 per cookie sheet.
- Place in oven preheated at 350 degrees F. for 10 minute or until edges are browned and center is still light in color.
- After baking place cookie tray in freezer for 5 minutes BEFORE removing the cookies. Cookies must be removed very carefully and placed single layered between sheets of wax paper. Cookies will be very flat and fragile. Once cooled keep in air tight container. Makes 18.
