AIR FRYER CHICKEN THIGH SCHNITZEL
I find chicken thighs to be more flavorful than chicken breasts, and this schnitzel is a perfect example. Not only is it delicious, it is also cooked in the air fryer, making it lower in calories, oil free, and grease free.

Steps:
- Place chicken thighs, 1 at a time, between 2 sheets of parchment paper and flatten with a mallet.
- Combine bread crumbs, salt, and black pepper in a shallow bowl. Place flour in a separate shallow bowl and beaten egg in a third shallow bowl. Dip chicken thighs first in flour, then in beaten egg, and finally coat with bread crumb mixture.
- Preheat an air fryer to 375 degrees F (190 degrees C).
- Place breaded thighs in the air fryer basket, making sure they are not touching; work in batches if necessary. Mist with avocado oil and cook for 6 minutes. Flip each thigh, mist with oil, and cook an additional 3 to 4 minutes.

Steps:
- Pound out each piece of chicken breast, so they are an even thickness.
- In a bowl, combine the flour, onion powder, garlic powder, salt, and pepper.
- Crack the egg into a separate bowl and beat slightly.
- Lastly, add the breadcrumbs into yet another bowl.
- One by one, coat the chicken in the following order. First, in the seasoning mixture. Next, coat in the egg. Lastly, coat in the breadcrumbs. Repeat until you have coated all the chicken.
- Preheat the air fryer to 200°C (390°F). It should take roughly 5 minutes.
- Cook the chicken in batches so there is only a single layer. Lightly spray the schnitzels with cooking oil. Cook for 10 minutes, flipping halfway through.
- Check the chicken is cooked by using a meat thermometer. The internal temperature should be at least 75°C (170°F).
- Serve & Enjoy.

- Preheat an air fryer to 400 degrees F (200 degrees C).
- Pat chicken thighs dry with a paper towel and brush the skin-side of each piece with olive oil. Place chicken thighs, skin-side down, in a single layer on a plate.
- Combine smoked paprika, garlic powder, salt, and pepper in a bowl and sprinkle half the seasoning mixture evenly over the 4 chicken thighs. Turn thighs over and evenly sprinkle remaining seasoning mixture on top. Place chicken thighs in the air fryer basket in a single layer, skin-side up.
- Fry in the preheated air fryer until chicken is brown and juices run clear, about 18 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Preheat air fryer to 375°. In a shallow bowl, mix flour, seasoned salt and pepper. In a second shallow bowl, whisk egg and milk until blended. In a third bowl, mix bread crumbs and paprika., Pound pork cutlets with a meat mallet to 1/4-in. thickness. Dip cutlets in flour mixture to coat both sides; shake off excess. Dip in egg mixture, then in crumb mixture, patting to help coating adhere., Place pork in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown, 4-5 minutes. Turn; spritz with cooking spray. Cook until golden brown, 4-5 minutes longer. Remove to a serving plate; keep warm., Meanwhile, in a small saucepan, whisk flour and broth until smooth. Bring to a boil, stirring constantly; cook and stir 2 minutes or until thickened. Reduce heat to low. Stir in sour cream and dill; heat through (do not boil). Serve with pork.
