4 lbs beef, round roast
2 teaspoons salt
1 teaspoon allspice
1/2 teaspoon pepper
3 tablespoons butter
3 tablespoons brandy
1 cup beef broth
2 large onions, Sliced
2 medium bay leaves
2 tablespoons white vinegar
2 tablespoons molasses
parsley, chopped

Steps:

  • Rub meat with salt, allspice and pepper.
  • Saute in butter until brown on all sides.
  • Pour in brandy and ignite.
  • Add beef broth, onions, bay leaves, vinegar and molasses.
  • Stir well, cover, and simmer for 2 hours.
  • Slice beef, sprinkle with parsley, and serve.

4 lbs beef, such as chuck
1 tsp salt
1 tsp allspice
1/2 tsp black pepper
1/4 cup brandy
1 cup beef stock or bouillon
1/2 bottle heavy red wine
2 medium onions, chopped
2 bay leaves
2 Tbsp vinegar
2 Tbsp molasses
1/2 cup heavy cream
Chopped parsley
Olive oil

Steps:

  • Dissect the meat, removing all fat, etc. Cut the meat into cubes or pieces. Place the meat pieces, salt, pepper, and allspice into a plastic grocery bag, and shake or stir to coat the meat with the seasonings. Heat some olive oil in a large pot to be used for the braising. Brown the meat on all sides. Discard any left over oil. Remove the meat, and add the chopped onions. Saute the onions until translucent. Return the meat, and add all other ingredients except the parsley and cream. Simmer, covered, over very low heat, for 3 hours. When the meat is very tender, remove it. Puree the braising liquid, place in a freezer for 30 minutes, then remove the fat. Return the braising liquid to the pot. Thicken it with some flour mixed with butter. Finally, whip the cream (or not), and fold it into the braising liquid. Pour the sauce over the meat in a serving bowl, and sprinkle with some chopped parsley.

1 teaspoon salt
1/4 teaspoon ground pepper
2 tablespoons olive oil
1 1/4 cups beef bouillon
2 medium onions, chopped
4 anchovy fillets, chopped
1 bay leaf
5 peppercorns
8 allspice berries
2 tablespoons vinegar
1 tablespoon molasses
2 tablespoons all-purpose flour
1/2 cup heavy cream

Steps:

  • Rub beef roast with salt and pepper.
  • In a large, heavy saucepan, heat olive oil; brown roast on all sides.
  • Add bouillon, onion, anchovies, bay leaf, peppercorns, allspice, vinegar, and molasses.
  • Cover and cook over low heat for 2 hours or until meat is tender.
  • Remove meat; strain pot liquid, discarding solids and returning the liquid to the saucepan.
  • Stir flour and cream into the liquid; cook, stirring constantly, until thickened.
  • Serve gravy with sliced pot roast.

1 (4 pound) beef rump or chuck roast
1 ½ tablespoons KC Masterpiece® Steak Seasoning with Garlic
1 tablespoon vegetable oil
¾ cup KC Masterpiece® Original Barbecue Sauce
¼ cup pasta or tomato sauce
8 ounces small whole mushrooms
1 cup sliced onion
1 cup baby carrots
¾ cup chopped celery
10 each red potatoes, quartered
1 tablespoon Fresh parsley, chopped

Steps:

  • Rub roast with KC Masterpiece® Steak Seasoning with Garlic on all sides, coating well. Heat oil in a large skillet over medium-high heat; brown roast on all sides, about 10 minutes.
  • Place roast in a 6-quart slow cooker. Pour KC Masterpiece® Original Barbecue Sauce and pasta sauce over meat. Place mushrooms, onion, carrots, celery and potatoes around meat. Cover and cook on high setting 5 hours or on low setting 8 hours, or until meat is tender and vegetables are cooked.
  • Remove meat and vegetables from slow cooker. To serve, slice meat and serve with gravy and vegetables. Sprinkle with fresh parsley, to taste.
