- Preheat grill pan or outdoor grill to high. Mix meat and next 4 ingredients. Divide meat into half and score each half into 5 pieces. Roll the meat into balls then squish it into small, thin patties, 3 inches across. You will yield 10 patties. To make a double batch or more, meat can be made into patties ahead and placed on cookie sheets to store 24 hours. These patties can also be baked on cookie sheets in preheated 400 degree F oven for 10 to 12 minutes. But, on a hot indoor or outdoor grill, these small burgers will take just 2 or 3 minutes on each side for medium doneness. Serve on dinner rolls with chopped lettuce, chopped onion and Special Sauce.
- To make sauce, combine ranch dressing with ketchup and black pepper.
ALL-AMERICAN HAMBURGERS
Steps:
- Combine first 5 ingredients, mixing lightly but thoroughly. Shape into 4 patties. Grill burgers, covered, on an oiled rack over medium direct heat until a thermometer reads 160° and juices run clear, about 6 minutes on each side., During the last minute of cooking, top each patty with 2 triangles American cheese and 1 triangle Swiss cheese. Serve on buns. As desired, top with lettuce, tomato, onion, bacon, ketchup and mustard.

COPYCAT BURGER AND FRIES

- Cut potatoes in 1/2-inch wide strips. Place in a large bowl filled with warm water and soak for 20 minutes.
- Pour oil in a Dutch oven and heat over medium-high heat until it reaches 350 degrees F (175 degrees C). Line a rimmed baking sheet with paper towels and set a wire rack on top.
- Drain potatoes well and dry thoroughly with paper towels. Add 1/2 of the dried potatoes to the hot oil and cook, stirring often, until they soften slightly, about 3 minutes. Remove potatoes to the wire rack to drain. Repeat with remaining potatoes. Maintain oil temperature at 350 degrees F (175 degrees C) for finishing fries just before serving.
- Divide ground chuck into 4 portions and flatten to form 1/4-inch thick patties.
- Heat a large skillet over medium-high heat. Add burger patties to the hot skillet and cook undisturbed, until a brown crust has formed around the edges, 2 to 3 minutes. Flip, press down with a spatula to flatten, and cook for 2 more minutes. Flip again, press down once more, then top each patty with a slice of cheese; cook for 1 minute.
- While the burgers cook, spread mustard and ketchup on bottom halves of the buns. Drizzle hot sauce on the top halves of the buns, then spread mayonnaise over top. Layer with lettuce, tomato slices, pickles, and onions.
- Invert 1 patty onto a second patty so the cheese sides are touching. Repeat with remaining 2 patties. Place a stacked patty onto each top bun, and cover with a bottom bun, condiment-side down. Wrap burgers in foil.
- Return fries to the hot oil and cook until golden brown, 3 to 4 minutes. Drain on paper towels and sprinkle with salt. Serve immediately with burgers.

- In a large bowl, combine beef, soup mix and Worcestershire sauce.
- Mix just until blended dont overwork the meat.
- Shape into eight patties.
- Grill over medium coals to desired doneness or until no longer pink in the center and a minimum temperature of 160 degrees, brushing frequently with barbecue sauce.
- Top with cheese; continue grilling until cheese is melted.

Steps:
- Heat a gas or charcoal grill to high heat. Brush the grill grates with oil.
- For the fry sauce: Combine the mayonnaise, roasted red pepper puree and adobo sauce in a small bowl and stir together until smooth. Season with salt and pepper to taste. Use right away or cover and refrigerate for at least 1 hour to allow flavors to meld.
- For the burgers: Divide the meat into 4 equal portions (about 6 ounces each). Shape each portion with your hands into a round patty, about 3/4 inches thick. Use your thumb to make a divot in the center of each burger. Sprinkle both sides of each burger with salt and pepper.
- Grill, covered, until golden brown and slightly charred on the first side, about 3 minutes. Flip the burgers and cook until golden brown and slightly charred on the second side, about 4 minutes for medium.
- While the burgers cook, toast the buns on the grill until lightly charred, 10 to 15 seconds. Set aside.
- Add 2 slices of cheese to the tops of each burger. Cover the burgers with the grill lid, large domed lid or large metal bowl and count to 10 until the cheese is melted.
- Spread some yellow mustard on the bottom buns and spread some of the fry sauce on the top buns. Place the burgers on the bottom buns. Top with the shredded lettuce and the top buns and serve immediately.

- Preheat your oven to 450° degrees with a large foil lined baking sheet on the lowest oven rack. Let the baking sheet get nice and hot for about 20 minutes.
- Meanwhile, season your ground NY Strip Steak with the worcestershire sauce, olive oil, and form into patties. Don’t overhandle or overmix the ground beef because it will become tough. Liberally sprinkle salt and pepper on both sides of each patty and set aside.
- In a large skillet over medium to medium-high heat, fry your bacon until crisp and reserve the bacon fat in a separate glass bowl or container and set aside. Alternatively, you could cook your bacon in the oven either on the same baking dish as your fries or on a separate one.
- Remove baking sheet from oven and CAREFULLY place frozen fries in a single layer on the baking sheet, don’t clump them together and make sure they each have space to crisp up and aren’t touching. Be careful because the baking sheet will be extremely hot. Place fries into the oven for about 5 minutes to defrost, then remove the fries from the oven and sprinkle them with the lemon-pepper, granulated garlic and 1 to 2 tablespoons of the reserved bacon fat. Toss them around to make sure they’re evenly seasoned and coated. Place them back in the oven and allow them to cook an additional 7 to 10 minutes, or until golden brown.
