I always seem to have plenty of recipes filed away for blue cheese.....don't ask me why my family doesn't even eat it! But I quite often make recipes to take when going out. This recipe was loved by all served when served with a cheese platter.

Number Of Ingredients 5

1 cup plain flour
100 g cold butter, chopped
75 g blue cheese, mild and soft full-fat, chopped
1 1/2 tablespoons poppy seeds
sea salt

Steps:

  • Process the flour, butter and cheese until mixture forms a soft ball.
  • Shape mix into a log (4cm in diameter) place log in plastic wrap and refrigerate until firm.
  • Remove log from plastic, roll in poppyseeds, cut into 5mm slices (rounds) & place the rounds about 3cm apart on ungreased oven trays. Sprinkle rounds with a little sea salt.
  • Bake rounds in a moderately hot oven for approx 15 minutes or until lightly browned, cool on trays before removing.
  • Store in airtight container for 3-4 days.

2 cups flour
2 tablespoons poppy seeds
2 1/4 teaspoons baking powder
2 teaspoons sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable shortening
4 tablespoons cold unsalted butter
2/3 cup buttermilk

Steps:

  • Preheat oven to 450 degrees. Combine flour, poppy seeds, baking powder, sugar, baking soda, and salt. Cut in vegetable shortening and butter. Stir in buttermilk.
  • Knead dough four or five times. Pat out dough 1/2 inch thick.
  • Using a long sharp knife, cut dough into squares or rectangles.
  • Bake on ungreased baking sheet until golden, about 12 minutes.

Steps:

  • In a blender, combine the milk, honey and cottage cheese. Cover and process until smooth. In a large bowl, combine biscuit mix and poppy seeds. Stir in cottage cheese mixture just until blended. , Turn onto a floured surface; pat to 1/2-in. thickness. Cut with a 2-1/2-in. biscuit cutter. , Place on an ungreased baking sheet. Bake at 425° for 8-10 minutes or until golden brown. Cool for 1 minute before removing to wire rack. Serve warm.

2 cups all-purpose flour
1/2 cup cold unsalted butter, cubed
1 tablespoon baking powder
2 tablespoons white sugar
1/2 teaspoon salt
2/3 to 3/4 cups cream or buttermilk

Steps:

  • The key to success in this recipe is to keep the ingredients cold and get the biscuits in the oven right away.
  • Store the butter and cream or buttermilk in the fridge until they're ready - they should not be room temperature. If the dough sits out for any period of time, chill them for a few minutes in the fridge.
  • Heat your oven to 425 degrees.
  • Add the flour, sugar, salt, and baking powder to a large bowl.
  • Mix the dry ingredients thoroughly or sieve them to ensure they're fully blended.
  • Cut the butter into the flour mixture using a knife or pastry blender, blending until the butter is pea-size.
  • Create a well in the center of the bowl and add 2/3 cup liquid and mix gently.
  • Add more liquid, one tablespoon at a time, if needed
  • The dough will barely hold together, and have chunks of butter. Place it on a lightly floured work surface and add the berries gently. If the dough is very soft and warm, chill for 20 minutes.
  • To shape the biscuits, you can roll the dough into a rectangle and cut into 12 pieces. Or, you can use a biscuit cutter. Or, you can scoop large spoonfuls of dough. There's no wrong way to shape the biscuits, just ensure they are uniform in shape and size. If you want, you can brush the tops with milk, or sprinkle with turbinado sugar, or do both.
  • Bake the biscuits at 425 degrees for 12-15 minutes. They will begin to become golden brown on top, and begin to crisp up. They should not be wet or shiny, but look light, fluffy, and delicious.

I'm very excited to show you this new, and possibly slightly improved, popover recipe. While we may have tweaked the ingredient amounts a little bit, we are still going to be using our foolproof, cold-oven method for making these. The reason this technique is so fun to use, is that it's literally the opposite of everything every popover expert says you should do.

5 large eggs, at room temperature
1 teaspoon kosher salt
1 pinch cayenne pepper, or to taste
2 cups whole milk, at room temperature
¼ cup vegetable oil
2 cups all-purpose flour
1 tablespoon unsalted butter, softened
nonstick vegetable oil cooking spray
½ cup crumbled blue cheese, or to taste

Steps:

  • Whisk eggs, salt, cayenne, milk, oil, and flour together in a large measuring cup or mixing bowl just until blended.
  • Cover the bowl with plastic wrap and allow to rest for 1 hour on the counter, or in the refrigerator for 2 to 3 hours, up to overnight.
  • Grease 14 nonstick muffin cups with butter, and then mist with cooking spray.
  • Whisk the batter for a few seconds and fill each prepared muffin cup 4/5 full. Sprinkle each evenly with blue cheese.
  • Place the muffin pans into a cold oven with a drip pan set underneath. Set the heat to 450 degrees F (230 degrees C). Bake in the oven until popovers are well browned and fully puffed, about 30 to 35 minutes. Poke each popover with a knife to allow steam to escape. Serve hot.
