FAMILY CORN PUDDING

Steps:

• Preheat the oven to 350 degrees F and grease a 9 by 9-inch baking dish.
• In a large bowl beat together all the ingredients. Pour into the prepared baking dish and bake in the oven until the pudding is completely set, about 20 to 30 minutes.

BROWNIE PUDDING

Steps:

• Preheat the oven to 325 degrees F. Lightly butter a 2-quart (9 by 12 by 2-inch) oval baking dish. Melt the 1/2 pound of butter and set aside to cool.
• In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs and sugar on medium-high speed for 5 to 10 minutes, until very thick and light yellow. Meanwhile, sift the cocoa powder and flour together and set aside.
• When the egg and sugar mixture is ready, reduce the speed to low and add the vanilla seeds, framboise, if using, and the cocoa powder and flour mixture. Mix only until combined. With mixer still on low, slowly pour in the cooled butter and mix again just until combined.
• Pour the brownie mixture into the prepared dish and place it in a larger baking pan. Add enough of the hottest tap water to the pan to come halfway up the side of the dish and bake for exactly 1 hour. A cake tester inserted 2 inches from the side will come out 3/4 clean. The center will appear very under-baked; this dessert is between a brownie and a pudding.
• Allow to cool and serve with vanilla ice cream.

CORN PUDDING

Steps:

• Put into a sauce pan creamed corn, milk, sugar, butter, and salt. Bring to a boil stirring constantly until thick so it will not scorch. Remove from heat and pour into a serving dish or individual dishes.

PUMPKIN-CORN PUDDING

Steps:

• Preheat oven to 400°. Coat a 2-quart baking dish with nonstick cooking spray.
• Layer the crushed tortilla chips in the bottom of the baking dish.
• In a bowl, beat the eggs until foamy; fold in the pumpkin, chiles, and corn.
• Stir in the chili powder, cumin, salt, pepper, and hot pepper sauce.
• Spoon mixture into the baking dish; smooth it over the chips.
• Bake for 20 minutes; remove from oven and garnish with toppings as desired; serve while hot.

GRANDMA'S CORN PUDDING

Steps:

• Preheat the oven to 400 degrees F (200 degrees C). Grease a 2-quart casserole dish.
• Whisk eggs lightly in a large bowl. Add milk, melted butter, sugar, and cornstarch; whisk until well combined. Stir in drained corn and cream-style corn until fully blended. Pour mixture into the prepared casserole dish.
• Bake in the preheated oven until golden brown, about 1 hour.

CORN PUDDING

Steps:

• Preheat oven to 350 degrees F.
• Mix all ingredients.
• Pour into a 10x10x2 pan
• Bake, uncovered for 30- 35 minutes.

ANNA PUMP CORN PUDDING

Steps:

• Preheat oven to 375. Butter a two-quart casserole. In bowl of food processor, purée the jalapeno and Anaheim peppers. Add the corn and pulse five times. Scrape the mixture into a bowl, add eggs, and beat well to blend. Add cottage cheese, heavy cream, and butter. Stir well. Add the flour, baking powder, sugar, and salt. Mix until the dry and wet ingredients are well combined. Spoon the mixture into the casserole and bake for 45 minutes, or until pudding is set
