1 (3-3.5 pound) pork loin roast (blade loin, center loin, or sirloin)
1 tart apple, peeled, cored and sliced thin
7-8 pitted prunes halved
1 teaspoon sugar
1 teaspoon salt
1/8 teaspoon pepper
1 recipe pan gravy
1/4 cup currant jelly

Steps:

  • Preheat oven to 325 with a sharp knife, cut down between ribs to backbone to form 8-9 chops. Force chops apart slightly and tuck a few apple slices and 2 prunes halves between each. Using strings, tie loin tightly together to seal in stuffing. Mix sugar, salt, and pepper and rub over roast. Place fat side up on a rack in a shallow roasting pan )loin roasts don't usually require racks, but it's a good idea to use on here because of the juiciness of the stuffing) Roast, uncovered, about 40 minutes per pound until well done (it is difficult to usae a meat thermometer because of the way roast is cut, but, to be sure meat is done, insert thermometer in center of 1 chop, not touching bone; it should read 170 degrees) Transer to a heated plattter, remove strings and keep warm. MAKE PAN GRAVY, blend in currant jelly, and serve.

Using dried cranberries instead of raisins adds great colour to the dish. I use the ingredient amounts and cooking times as estimates and vary them to suit the size of the pork tenderloin. I sometimes also add some fruity wine vinegar to the apple mixture for some added flavour.

2 tablespoons cornstarch
1 teaspoon ground cinnamon
2 tablespoons brown sugar

Steps:

  • Preheat oven to 400 degrees.
  • Place the tenderloin in a roasting pan or casserole dish (I use cooking spray first to make clean up easier).
  • Combine the remaining ingredients together and stir.
  • Spoon the apple mixture around the tenderloin, cover and bake for 30 minutes.
  • Remove the lid and spoon the apple mix over top of the tenderloin.
  • Place back in the oven and bake 15 to 20 minutes or until tenderloin registers at least 155 to 160 degrees on a meat thermometer.

9 cups chopped apples
9 slices bread, diced
1 cup chicken stock
2 tablespoons poultry seasoning
2 tablespoons seasoned salt
2 eggs, beaten
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place a wire rack on top of a baking sheet.
  • Place pork on a work surface and cut into 1/2-inch thickness, starting 1/2 inch from the cutting board and rolling pork open while cutting until entire loin is unrolled onto the work surface. Cover loin with plastic wrap and pound loin into 1/4-inch thickness with a meat mallet.

1 3/4 teaspoons salt
1 1/2 teaspoons black pepper
1 tablespoon olive oil
2 Granny Smith apples (3/4 lb total)
1 large onion, chopped
1/2 cup packed dried pitted prunes (sometimes called dried plums; 4 1/2 ounces), quartered
1 1/2 cups low-sodium chicken broth (12 ounces)
3/4 cup water
1/2 cup heavy cream
2 tablespoons coarse-grain mustard
1/2 cup dry white wine

Steps:

  • Put oven rack in lower third of oven and preheat oven to 375°F.
  • Halve pork loin crosswise, then pat dry and sprinkle with 1 teaspoon salt and 3/4 teaspoon pepper (total). Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown pork, 1 piece at a time, turning occasionally, 6 to 8 minutes per piece. Transfer to a small flameproof roasting pan as browned (do not clean skillet) and roast pork until thermometer inserted diagonally at least 2 inches into meat registers 150°F, 40 to 50 minutes.
  • While pork roasts, peel, quarter, and core apples, then cut into 1/4-inch-thick wedges.   • Transfer pork to a cutting board and let stand 10 minutes. Add wine to roasting pan and boil over high heat, stirring and scraping up brown bits, until reduced to about 1/4 cup, 2 to 3 minutes. Stir pan juices into cream sauce along with remaining 3/4 teaspoon salt and remaining 3/4 teaspoon pepper and heat sauce over moderate heat, stirring, until hot.
  • Discard string from pork and cut each half crosswise into 4 slices. Serve pork with sauce.

2 tablespoons raisins
1/2 cup chopped apple
1 celery rib, chopped

2 tablespoons sliced almonds, toasted
1/8 teaspoon pepper
1 pork tenderloin (1 pound)

Steps:

  • In a small saucepan, bring 4 tablespoons broth to a boil. Remove from the heat; add raisins. Let stand for 5 minutes. , In a nonstick skillet coated with cooking spray; saute the apple, celery and onion for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. 1 cup chicken flavored dry stuffing mix
½ cup water
1 (3 pound) boneless pork loin roast
1 cup chopped apple
⅓ cup dried cranberries
⅓ cup chopped toasted pecans
¼ cup finely chopped onion
salt and black pepper to taste

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Combine the stuffing mix and water in a mixing bowl; set aside. Grease a roasting pan with cooking spray.
  • Trim the fat and connective tissue from the pork loin. Cut from one side through the middle horizontally to within 1/2-inch of the other side. Open the two sides and spread them out like an open book. Place the pork loin between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the pork with the smooth side of a meat mallet to a thickness of 1/2-inch.

1 1/2 cups pitted prunes
1 cup Armagnac
1 4 1/2 pound loin of pork, boned
Salt and freshly ground black pepper
4 tablespoons duck fat or vegetable oil
1 carrot, finely diced
1 medium-size onion, finely diced
3 garlic cloves, crushed
1/2 cup dry white wine
2 medium-size ripe tomatoes, diced
1 sprig thyme
1 bay leaf
2 cups veal stock

Steps:

  • Two days in advance, place prunes in a bowl, add Armagnac, cover and refrigerate.
  • Make a deep cut lengthwise down the middle of the pork. Spread meat out flat, like a book. Season with salt and pepper. Drain prunes well, reserving Armagnac for another use. Place prunes in double layer down the center of the pork. Close meat over them and tie at 1 1/2-inch intervals with butcher's cord. Dust with salt and pepper.
  • Heat oven to 400 degrees. In a large heavy skillet or casserole, preferably enameled cast iron, add duck fat or oil. Sear meat over medium-high heat until lightly browned on all sides. Remove meat. Reduce heat to low, add carrot, onion and garlic and cook until softened but not brown. Add wine and reduce by half. Stir in tomatoes, thyme and bay leaf. Return meat to pan, add veal stock, bring to a simmer and place pan in oven.
  • Cook 30 minutes, basting every 10 minutes. Reduce heat to 325 degrees, turn meat and continue cooking about one hour longer, basting every 10 to 15 minutes. Add water as needed to keep one inch of liquid in pan.
  • Remove from oven. Place meat on cutting board, and tent with foil to keep warm. Gently simmer liquid in pan 5 minutes or so, then force through a sieve into a saucepan. Season to taste with salt and pepper.
  • Slice pork and arrange on platter. Reheat sauce, spoon a little over the meat and pass the rest alongside.

1/2 cup brandy
1 cup (6 ounces) mixed dried, pitted fruit (for example, apples, prunes, apricots, pears)
2 teaspoons chopped sage leaves
1 1/2 teaspoons chopped thyme leaves
Salt and freshly ground black pepper to taste
1 boneless 3 1/2-pound pork loin, trimmed
8 slices (about 1/4 pound) bacon
2 shallots, peeled and finely chopped
2/3 cup red wine
2/3 cup heavy cream
1 teaspoon Dijon mustard

Steps:

  • In a small saucepan, warm, but do not boil, the brandy. Place the fruit in a small bowl, cover with the brandy and soak for 20 minutes. Drain, reserving the brandy, and coarsely chop the fruit. Return the fruit to the bowl and toss with 1 teaspoon of the sage and 1/2 teaspoon of the thyme and season it lightly with salt and pepper.
  • Preheat the oven to 450 degrees. Place the pork on a work surface. Using a long, round metal or wooden skewer about 3/4-inch thick, pierce a channel through the center of the loin. Stuff the fruit into the channel, using the skewer to pack it in. Season the loin lightly with salt and pepper and drape the bacon slices over it.
  • Use butcher's twine to tie the roast. Place the roast in a roasting pan fitted with a rack and roast for 15 minutes. Lower the heat to 350 degrees and continue to roast until the pork is cooked but, when poked with a knife, the juices at the center still run slightly pink, about 1 hour more. Transfer the roast to a serving platter and allow to rest, covered, for 15 minutes.
  • Meanwhile, remove the rack and place the roasting pan on top of the stove over medium heat. Add the shallots to the pan juices and cook, stirring, until they are softened, about 3 minutes. Add the reserved brandy and the wine and simmer until reduced by half. Whisk in the cream and mustard and continue to simmer until slightly thickened.
  • To serve, remove the twine from the roast, slice and serve with the cream sauce.
