SAVORY CHEDDAR APPLE HAND PIES
The classic American combo of apples and Cheddar cheese comes together in a flaky crusted hand pie that's great as a Thanksgiving side or even breakfast that morning. We went a little crazy and stuffed the inside with an extra dollop of cheese spread to ensure plenty of gooey filling. These really are as delicious as they are pretty.

- Melt 1 tablespoon of the butter in a medium saute pan over medium-low heat. Add the onion, a pinch of salt and a few grinds of pepper. Cook, stirring frequently, until the onion is softened and caramelized, 8 to 10 minutes. Add 2 tablespoons water and scrape up any browned bits from the bottom and sides of the pan.
- Increase the heat to medium high. Add the apples and cook, stirring, until just starting to soften, 3 to 5 minutes. Add the remaining 1 tablespoon butter, then sprinkle with the sugar, ginger, 2 teaspoons of the thyme and another pinch of salt. Cook, stirring, until the apples are very tender and light golden, about 6 minutes more. Stir in 1/4 cup of the Cheddar cheese spread and cook until melted and smooth, then remove from the heat. Transfer to a medium bowl and refrigerate until completely cool, about 30 minutes.
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment.
- Unroll a pie dough sheet on a cutting board or clean work surface. Cut out 8 circles with a 4-inch round cutter; gather and reroll the dough if necessary. Beat the egg in a small bowl with 1 teaspoon water. Place about 1 tablespoon of the apple filling into the center of a dough round, then top with 1/4 teaspoon of the remaining Cheddar cheese spread. Brush the edges with some egg wash and fold the dough over to make a half-moon shape. Press out the air and seal the edges with a fork. Transfer to one of the prepared baking sheets. Repeat with the remaining dough and filling.
- Brush the hand pies with more egg wash and sprinkle with the sesame seeds, poppy seeds and remaining 1 tablespoon thyme. Bake until golden brown and puffed, 20 to 25 minutes.

- Preheat oven to 400 degrees F.
- On floured work surface, rool out pastry dough into a 16" round.
- Fold dough in half and transfer to a lightly greased baking sheet. Set aside.
- (note: I use prepurchased pie dough already in two rounds, so I simply lay one on the sheet and top with the second. You end up with a round tart this way).
- In a large bowl, combine apples, sugar, flour, lemon, raisins, cinnamon,nutmeg and salt. Gently stir to blend.
- Mound apple mixture in the middle of the dough, leaving two to four inches all around the edge.
- Scatter cheddar cheese over mixture.
- Fold edge over filling all the way around, pleating pastry as needed.
- Lightly baste with water, then sprinkle sugar/cinnamon mix on top.
- Bake tart in preheated oven until pastry is golden and apples are tender, about 30 to 35 minutes.

Steps:
- Place oven rack in lower position in oven. Preheat oven to 375 degrees Fahrenheit.
- Lightly sprinkle counter with flour.
- Place puff pastry dough on top.
- Dust rolling pin with flour.
- Roll pasty into a rectangle about 16 x 10 inches. Pastry will be very thin and the edges will be uneven.
- Place on a large ungreased baking sheet.
- Sprinkle half of the cheese and half of the rosemary along the edges of dough, forming a narrow border. Fold edges over to completely cover and press down to seal.
- Slice apples into thin wedges and place in a large bowl.
- Sprinkle apples with remaining cheese and rosemary, sugar, 1 tablespoon flour and cinnamon. Toss to evenly coat.
- Tumble apples over centre of pastry inside border then evenly spread out and gently press down.
- Bake on bottom rack of oven and bake until pastry is deep golden and apples are tender, 30 to 35 minutes.
- Place on rack.
- To glaze apples, discard any chunky pieces of fruit from jam.
- Place jam in a small bowl and microwave on medium high until melted, about 30 seconds.
- Brush glaze over warm apples, let stand 10 minutes before cutting.
- Cut into squares and serve warm.
- Great with vanilla ice cream or whipped cream.

Press overhang of bottom and top dough pieces together to seal. Trim overhang to 1/2 inch. Fold overhang under; crimp decoratively, forming high-standing rim. Cut several small slits in top crust to allow steam to escape.
- Bake pie until golden brown, about 30 minutes. Cover crust edge with foil. Reduce oven temperature to 375°F. Bake pie until filling bubbles thickly in center, about 30 minutes. Cool pie on rack 1 hour. Serve warm or at room temperature.

- In a 10-in. cast-iron or other ovenproof skillet, heat 3/4 cup sugar, stirring constantly until it is liquefied and golden brown. - Make pastry dough:
- Stir together flour, salt, and cheese in a large bowl (or pulse in a food processor). Add butter and shortening and blend with your fingertips or a pastry blender (or pulse) just until mixture resembles coarse meal with some roughly pea-size butter lumps. Drizzle 6 tablespoon ice water evenly over mixture and gently stir with a fork (or pulse) until incorporated.
- Squeeze a small handful: If dough doesn't hold together, add more ice water, 1 tablespoon at a time, stirring (or pulsing) until incorporated. Do not overwork dough or pastry will be tough.
- Turn out dough onto a work surface and divide in half, then form each half into a 5-inch disk. Chill, wrapped in plastic wrap, until firm, at least 1 hour.
- Make filling and bake pie:
- Put a foil-lined large baking sheet in middle of oven and preheat oven to 450°F.
- Peel and core apples, then slice 1/4 inch thick. Toss apples with sugar, flour, lemon juice, and salt until evenly coated.
- Roll out 1 piece of dough (keep remaining disk chilled) on a lightly floured surface with a lightly floured rolling pin into a 13-inch round. Fit into a 9-inch pie plate. Roll out remaining piece of dough into an 11-inch round.
- Transfer filling to shell. Dot with butter, then cover with pastry round. Trim edges, leaving a 1/2-inch overhang. Press edges together to seal, then fold under. Lightly brush top crust with milk, then cut 5 (1-inch-long) vents.
- Bake on hot baking sheet 20 minutes. Reduce oven to 375°F and bake until crust is golden-brown and filling is bubbling, about 40 minutes more. Cool to warm or room temperature, 2 to 3 hours.
