1 cup sugar
4 ounces (1 stick) unsalted butter
4 ounces margarine
2 large eggs
1 tablespoon vanilla extract
1 1/2 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
3 Granny Smith apples, peeled, cored and sliced
2 cups whipping cream
3/4 cup sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
4 large eggs

Steps:

  • For the cake: Preheat the oven to 350 degrees F. In a stand mixer fitted with the paddle attachment, cream the sugar, butter and margarine together until light and fluffy. Then add the eggs and vanilla. Add in the flour, cinnamon and baking soda. Fold in the apples and transfer to a baking dish. Bake for 30 minutes, then cool completely.
  • Break the cake into bite-size pieces and divide evenly among four to six 3-inch ramekins.
  • For the cream: In a large bowl, whisk together the cream, sugar, vanilla, salt and eggs. Pour the creme anglaise over the cake in the ramekins and return to the oven for 20 minutes. Cool slightly and serve hot.

3/4 cup butter, cubed
4 cups chopped peeled tart apples (about 4 medium)
2 cups sugar
1/2 cup raisins
1/2 cup chopped walnuts
3 teaspoons ground cinnamon
2 teaspoons vanilla extract
BREAD PUDDING:
6 large eggs
2-1/2 cups 2% milk
1-1/2 cups plus 2 tablespoons sugar, divided
1 cup heavy whipping cream
1-1/2 teaspoons vanilla extract
Dash ground nutmeg
1 loaf (1 pound) French bread, cut into 1-inch cubes
CARAMEL SAUCE:
1 cup sugar
1/4 cup water
1 cup heavy whipping cream
2 tablespoons butter

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium heat. Add apples, sugar, raisins, walnuts and cinnamon; bring just to a boil, stirring constantly. Reduce heat; simmer, uncovered, until apples are tender, stirring occasionally. Remove from heat; stir in vanilla., For bread pudding, in a large bowl, whisk eggs, milk, 1-1/2 cups sugar, cream, vanilla and nutmeg until blended. Stir in bread cubes and apple mixture. Transfer to a greased 13x9-in. baking dish. Sprinkle with remaining sugar. Bake, uncovered, 40-45 minutes or until a knife inserted in the center comes out clean., For caramel sauce, in a small heavy saucepan, combine sugar and water; stir gently to moisten all the sugar. Cook over medium-low heat, gently swirling pan occasionally, until sugar is dissolved. Cover; bring to a boil over medium-high heat. Cook 1 minute., Uncover pan; continue to boil until syrup turns a medium amber color. Immediately remove from heat and carefully stir in cream and butter. Serve with warm bread pudding.

8 slices brioche bread
2 apples - peeled, cored, and shredded

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a glass, deep-dish pie dish.
  • Stir together sugar and cinnamon in a small bowl. Whisk milk and eggs together in a separate bowl.
  • Butter one side of each slice of bread, and cut into cubes. Spread 1/2 of the bread cubes into the prepared pie dish, sprinkle with 1/2 of the cinnamon-sugar mixture, and 1/2 of the shredded apples. 6 tablespoons butter
3 cups apples, peeled, cored and sliced
3 tablespoons plus 1/2 cup sugar
1/2 cup finely diced crystalized ginger
3 1/2 cups firm-textured white bread in 1/2-inch cubes
3 eggs
2 cups milk
1 teaspoon vanilla extract
1/4 teaspoon ground ginger

Steps:

  • Butter a six- to eight-cup mold, casserole or baking dish.
  • Melt two tablespoons of the butter in a large, heavy skillet over medium-high heat. When the foam subsides, add the apples, increase heat to high and saute the apples, turning them frequently for about five minutes until they begin to color. Do not allow them to become soft or lose their shape.
  • Add three tablespoons sugar and saute another minute or two, until the sugar begins to caramelize. Stir in the crystalized ginger, remove from heat and transfer the apples and ginger to a bowl.
  • Reduce heat to low, add the remaining four tablespoons of butter to the skillet. When the butter has melted, scrape the pan to loosen any bits of caramelized sugar clinging to it. Add the bread cubes and toss them in the butter until they are evenly coated.
  • Scatter half the apples and ginger into the baking dish. Cover with half the bread cubes. Repeat the layers.
  • Preheat oven to 375 degrees.
  • Lightly beat the eggs and one-half cup of sugar. Scald the milk. Slowly pour the scalded milk in a thin stream into the egg mixture, stirring constantly. Stir in the vanilla and ground ginger. Pour over the apples and bread in the baking dish.
  • Set the dish in a pan and add boiling water to come halfway up the sides of the baking dish. Place in the middle of the oven and bake 45 minutes, until the top is crusty and golden. Serve while still warm.

1/2 loaf gingerbread, diced into small cubes (see my gingerbread Gingerbread)
1 mcintosh apple, peeled and diced
1/2 cup currants
2 cups milk
1/2 cup cream
1/2 vanilla bean, cut lengthwise and bean scraped
3 whole eggs
2 egg yolks
1/2 cup sugar
1/2 teaspoon cinnamon
1 dash salt

Steps:

  • Cut the gingerbread into cubes. Place in a generously buttered 8 x 8 x 2" pan. Top with the apple and currants. Set aside.
  • Scald the milk, cream, and vanilla bean. Meanwhile, in a bowl, combine the eggs, yolks, sugar, cinnamon, and salt. Hand whip until mixed.
  • Temper the egg mixture with the milk mixture (pour the hot milk mixture a little at a time into the egg mixture while whipping so as not to scramble the egg mixture). Strain through a sieve into your prepared pan.
  • Press the gingerbread down to ensure complete coverage with the liquid. Let sit for 30 minutes or overnight.
  • Preheat oven to 350°F
  • Cover the pan with foil. Bake in a water bath for approximately 1 1/2 hours or until done. Remove the foil during the last 20 minutes of baking to brown the top. Baking times may vary with your oven. Cut into squares and serve hot.
  • Serves 6 to 9.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11 inch baking dish.
  • In a large bowl, combine bread, raisins, and apples. In a small saucepan over medium heat, combine 1 cup brown sugar, 1 3/4 cups milk, and 1/4 cup margarine. Cook and stir until margarine is melted. Pour over bread mixture in bowl.

Steps:

  • Preheat oven to 350 degrees.
