Grilled Apple Salad with Vanilla Yogurt image

With crisp greens, grilled apples and creamy vanilla yogurt, this salad is sure to be a hit.

2 tablespoons butter, melted
1/2 teaspoon ground cinnamon
3 large apples, cored and cut into 1/2-inch slices
4 cups baby spring field greens
2 containers (5.3 oz each) Greek vanilla yogurt
2 tablespoons chopped walnuts, toasted
Additional ground cinnamon, if desired

Steps:

  • Heat gas or charcoal grill.
  • In large bowl, mix melted butter and 1/2 teaspoon cinnamon. Add apple slices; stir until apples are well coated.
  • Place apples on grill over medium heat. Cover grill; cook apples 5 minutes. Turn apples; grill 3 to 5 minutes longer or until apples are desired tenderness.
  • Divide greens evenly among 4 serving plates. Divide apples evenly over greens. Top each with half a container (about 1/4 cup) yogurt. Sprinkle with walnuts and additional cinnamon.

1 bunch watercress, trimmed and chopped
2 tablespoons chopped walnuts

Steps:

  • In a large bowl, combine the apples and lemon juice. Add the grapes, celery, and green onions; toss.

1/3 cup chopped macadamia nuts
1 orange, juice of
8 ounces vanilla yogurt
1/8 teaspoon ground cinnamon

Steps:
