APPLE STREUSEL BREAD
Note: To ensure the best results, be sure to follow the steps below in order and prepare the batter last.

Steps:
- Preheat oven to 350 degrees F.
- Butter and flour 9×5-inch loaf pan. Set aside.
- In a small bowl mix ½ cup brown sugar, cinnamon and nutmeg. Set aside.
- In a medium bowl, toss apples with 1 tablespoon brown sugar, 1 tablespoon granulated sugar, apple pie spice and walnuts. Set aside.
- In the bowl of a stand mixer with the paddle attachment, cream butter then add 2/3 cup granulated sugar. Beat until light and fluffy, about one minute.
- With mixer running, add one egg at a time and mix. Scrape bowl and mix for one minute on medium until slightly pale in color.
- Add vanilla and mix to combine.
- In a small bowl, mix flour with baking powder and baking soda.
- With mixer running, alternate adding flour mixture and sour cream. Mix just to combine but do not over mix.
- Pour half of the batter into the prepared pan and spread to the sides. Add half the apple mixture but pat and poke the apples down into the batter. Sprinkle with half the sugar mixture.
- Repeat with the rest of the batter, apples and sugar mixture, patting the apples into the batter before topping with the last of the sugar mixture.
- Bake on center rack of oven for 50 to 60 minutes or until a toothpick inserted into the center of the bread comes out clean. (When checking for doneness insert toothpick into center of bread, making sure your tooth pick is going into batter and not an apple to get a true test for doneness. Ours took exactly 60 minutes.)
- While cake is baking, prepare glaze by combining brown sugar, butter and cream in a small sauce pan. Heat to a boil and simmer on medium low for two minutes without stirring.
- Remove from heat and sift in the powdered sugar while you whip. If it lumps, just pass through a small sieve. Let it sit at least ten minutes.
- Once cake is out of the oven, cool in the pan on a rack for 15 minutes.
- Loosen sides and flip out of pan and onto the cooling rack, then place the rack over a sheet pan.
- Drizzle the glaze over the top and let it melt into the warm cake.
- Serve warm or cool completely.

- Sift all-purpose flour into a large bowl. Mix in egg, water, white sugar, lard and salt. Knead until soft and smooth. Lightly brush with approximately 1 tablespoon butter. Cover with a towel and set aside 1 hour.
- Mix bread crumbs and 3/4 cup butter in a medium bowl. Mix in ground walnuts, apples, raisins, cinnamon and sugar.
- Preheat oven to 375 degrees F (190 degrees C). Lightly butter a medium baking dish.
- Spread a clean tablecloth or cotton sheet on a large work surface and dust with flour. Gently stretch the dough into a large, very thin rectangle as thin as tissue paper. Cut away thick edges. Sprinkle with approximately 1/2 cup melted butter. Spread bread crumb mixture across the dough, leaving a two inch border on all sides. Fold one end of the dough over the filling, then roll dough to form strudel. Cut so that it will fit the baking dish.
- Place strudel in baking dish and brush with remaining butter. Bake in the preheated oven until golden brown and apples are tender, about 1 hour.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
- Combine flour, baking soda, cinnamon, and salt in a bowl. Add sugar, oil, eggs, and vanilla extract. Add grated apples and chopped nuts. Mix until combined. Set aside.
- Mix sugar, cinnamon, and flour for the streusel. Cut in butter until little pea-sized balls come together. Place 1/2 of the streusel on the bottom of the pan. Pour in batter; top with remaining streusel.

- Place 1 layer of phyllo dough on a flat surface. Brush with the clarified margarine and sprinkle with about 2 tablespoons of bread crumbs. Top with another sheet of phyllo dough and repeat the process with the remaining sheets of phyllo dough.
- In a mixing bowl combine the raisins, sugar, cinnamon, almonds, apples, and apple pie filling. Place the mixture in a log at 1 edge of the phyllo dough layers. Roll the phyllo dough around the mixture tightly and place on baking tray. Bake the strudel in the oven for 10 to 15 minutes or until golden brown in color. Remove from oven and allow to cool slightly. Then slice and serve.

- For strudel dough: Combine water and flour. Mix thoroughly to form slightly damp dough. Knead on a floured surface, cover with a bowl, and let rest for 1 hour.
- Heat butter in pan and stir in bread crumbs to coat. Cook until slightly colored. Stir in cinnamon and remove from heat. Toss apples with sugar.
- Preheat oven to 375 degrees F. Cover table with 4-foot cloth and lightly flour. Place chilled dough on cloth; do not knead. Starting from center, gently pull out dough until it is paper thin, about 2 feet square. Trim edges to a clean square. Scatter crumbs over pastry, sprinkle with raisins and then apples.

- Have ready a 24-by-24-inch sheet of clear plastic or two pieces of parchment. Generously butter a large baking pan. Sprinkle with flour, and tap out the excess; set aside. Place flour, 8 tablespoons butter, 3 eggs, salt, 1 teaspoon sugar, and 1 tablespoon water in the bowl of a food processor, and pulse until dough comes together. Divide dough in half equally, flatten into two disks, and wrap each in plastic wrap. Refrigerate 2 to 3 hours or overnight.
- Preheat the oven to 375 degrees. Place bread in the clean bowl of a food processor; pulse until crumbly; set aside. Melt 10 tablespoons butter in a large skillet set over medium-low heat. Add pine nuts and breadcrumbs, and cook, stirring frequently, until fragrant and golden brown, 8 to 10 minutes; set aside.
- Melt 2 tablespoons butter in a large Dutch oven over medium-high heat. Add sliced apples and remaining sugar; cook, stirring frequently, until apples have softened, 10 to 12 minutes. Remove from heat; transfer apples to a large bowl. Stir in the pine-nut mixture, lemon zest, and raisins, and set aside to cool, about 15 minutes.
- Place egg yolk in a small bowl, and stir to break it open; set aside. In a small skillet on low heat, melt the remaining 2 tablespoons butter; set aside. Spread the plastic sheet on a clean surface, and dust with flour. Remove dough from refrigerator, and place it in the center of the plastic sheet or on parchment. Roll out into a 20-inch diameter paper-thin circle. Brush the dough with melted butter. Spread half of the reserved apple mixture on the dough. Lift the front edge of the plastic up, and fold the dough over the apple mixture and away onto itself. Repeat folding procedure, ending with the raw edge on top. Gently lift edge, and brush with egg yolk and gently press to seal. Brush ends of dough with egg; fold up; seal. Repeat process with second piece of dough. Transfer to prepared baking pan. Brush surfaces with egg yolk. Using a wooden skewer, pierce the strudels all over.
- Transfer to oven; bake, rotating pan once halfway through, until golden brown, 30 to 35 minutes. Remove from oven; transfer pan to wire rack to cool, about 45 minutes. Sprinkle with confectioners' sugar; serve.
